AUNT TRISH'S SALAD DRESSING



Aunt Trish's Salad Dressing image

3/4 cup olive oil or vegetable oil
4 tablespoons grated Parmesan, more to taste
1/4 teaspoon salt (or more to taste)
Freshly ground black pepper
1/4 teaspoon sugar
Dash or 2 of paprika
Juice of 2 lemons
1 garlic clove, peeled and left whole
Green lettuce leaves
1/2 small red onion, thinly sliced
1 cup red grape tomatoes, halved

Steps:

  • Place the olive oil, Parmesan, salt, pepper to taste, sugar, paprika, lemon juice and garlic into a jar. Shake it up and store in the fridge at least 24 hours before serving.
  • Serve the dressing with green lettuce leaves, sliced red onions and halved grape tomatoes. Also works well on pasta salad.

PICNIC PASTA SALAD

Kosher salt and freshly cracked black pepper
1 pound orecchiette pasta
2 lemons
2 tablespoons honey
1/4 cup extra-virgin olive oil
1 cup walnuts, toasted
3/4 cup dried apricots, thinly sliced
1/4 cup fresh lemon thyme leaves
3 tablespoons fresh mint, torn
1 small head radicchio, thinly sliced

Steps:

  • Bring a pot of water to boil and add a generous amount of salt. Add the pasta and cook until al dente according to the package directions.
  • Meanwhile, prepare the vinaigrette. Zest 1 lemon into a large mixing bowl. Add the juice of both lemons, honey and some salt and pepper. Whisk to combine. While continuing to whisk, slowly pour in the olive oil to emulsify the mixture into a light dressing.
  • When the pasta is cooked, drain and immediately pour into the large mixing bowl with the lemon-honey vinaigrette. Toss the pasta with the walnuts, apricots, lemon thyme, mint and radicchio. Gently toss to combine and pour into a serving dish. Serve at room temperature or store, refrigerated, in an airtight container for up to 3 days.

SNOWBALL SALAD - STEPH

Great salad for a potluck or family gathering. Also very good frozen and served on a lettuce leaf.

2 oz 9 oz. containers cool whip
1 c sour cream
1 1/2 c sugar
2 Tbsp lemon juice
3 bananas, mashed
1 lb can crushed pineapple, drained
1 c pecans, chopped
1/2 c maraschino cherries

Steps:

  • 1. Mix Cool Whip, sour cream, sugar, and lemon juice together. Add the bananas, pineapple, pecans, and cherries.
  • 2. To serve as a chilled salad, chill overnight. To serve as a frozen salad, place salad in freezer until firm. Use a 9 x 13" pan. Delish!

CRUNCHY SLAW

3/4 head green cabbage, finely chopped
8 green onions, finely chopped
1/2 cup sliced almonds
1/2 cup sesame seeds
1/4 cup (1/2 stick) butter
2 3-ounce packages ramen noodles, flavor packets discarded
2 tablespoons sugar
1/2 cup vegetable oil
3 tablespoons red wine vinegar
1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Mix the cabbage and green onions in a large bowl. In a small saucepan over medium heat, brown the almonds and sesame seeds in the butter.
  • Combine the dressing ingredients in a small bowl and stir well. Just before serving, add the sesame seeds, almonds, and crushed raw ramen noodles to the cabbage and green onions. Pour the dressing, a little at a time, over the salad mix, then toss.

TRISH'S SNOWBALL SALAD

This is an easy, pretty, yummy dessert.

8 oz sour cream
2 Tbsp lemon juice
16 oz cool whip
20 oz crushed pineapple, drained
1 1/2 c maraschino cherries, chopped
1 c pecans, in pieces
3 very ripe bananas, mashed
1 1/2 c coconut, flaked

Steps:

  • 1. Mix in the order listed. Pour into a dish and freeze overnight.
  • 2. Thaw about 20 minutes before serving.

WINTER SPINACH SALAD



Winter Spinach Salad image

Currants or dried apricots can be substituted for the dried sour cherries, if you like.

1 bunch spinach, preferably flat-leaf, roughly chopped (about 6 cups)
1/3 cup dried sour cherries
3 scallions, thinly sliced
1 green apple, cored and thinly sliced
1/2 cup seedless red grapes, cut in half
1/4 cup walnuts, coarsely chopped
2 teaspoons apple-cider vinegar
2 tablespoons olive oil
Salt and freshly ground pepper
1/3 cup (about 2 ounces) crumbled goat cheese

Steps:

  • Combine spinach, cherries, scallions, apple slices, grapes, and walnuts. Whisk together vinegar and olive oil; season to taste with salt and pepper. Pour vinaigrette over salad; toss in cheese and arrange on salad plates.
