This is my Mother in law's recipe for mock oh Henry Bars. It was a recipe that she submitted for our church's fundraising cookbook.

Number Of Ingredients 6

2 cups milk chocolate chips
2 tablespoons shortening
30 vanilla caramels, unwrapped
3 tablespoons butter
2 tablespoons water
1 cup chopped peanuts

Steps:

  • In a double boiler, melt chocolate and shortening.
  • Stir until smooth.
  • Remove from heat.
  • Pour 1/2 into a foil lined 8 inch square pan.
  • Refrigerate until firm.
  • Combine caramels, water and butter.
  • Place mixture on low heat until smooth.
  • Stir in nuts.
  • Pour into chocolate lined pan.
  • Spread evenly and top with remaining melted chocolate.
  • Refrigerate until firm, about 1 hour.
  • Cut into bite sized pieces.

Crispy, chewy and chocolaty--kind of like the candy bar it is named after. Quick and easy--one kids like to make.

1/2 cup white Karo
1/3 cup granulated sugar
1 (9 ounce) jar peanut butter
3 -4 cups crispy rice cereal (Rice Krispies)
1 cup butterscotch chips
1/2 cup chocolate chips

Steps:

  • Butter 9 x 13-inch pan.
  • In large saucepan, melt syrup and sugar together until it bubbles.
  • Add peanut butter and heat again until mixture bubbles.
  • Remove from heat and stir in rice cereal (Alternately, use large glass bowl in microwave).
  • Spread in buttered pan.
  • In small bowl, melt chips together (the microwave works great, but watch closely and stir often).
  • Spread over top of cereal mixture.
  • Chill completely and cut into bars.

1 cup brown sugar
4 cups quick-cooking oatmeal
1/2 cup corn syrup
3 teaspoons vanilla
6 ounces chocolate chips
2/3 cup crunchy peanut butter

Steps:

  • In a large mixing bowl, cream butter& sugar.
  • Add oatmeal, corn syrup and vanilla.
  • Pat dough into a 13x9x3/4" cookie sheet.
  • Bake at 350 for 15 minutes.
  • While bars are baking, melt chocolate chips and peanut butter together.
  • Spread chocolate/peanut butter mixture on slightly cooled dough.
  • Cut into bars when cool.

1/4 cup light corn syrup
1/3 cup chocolate chips

Steps:

  • Combine oats and butter in 2-quart glass Mix-N-Pour bowl.
  • Microwave on High, uncovered, 3 to 4 minutes, or until heated through.
  • Stir in brown sugar and corn syrup.
  • Microwave on High, uncovered, 1 1/2 to 2 1/2 minutes or until heated and sugar is dissolved.
  • Turn into greased 10 x 6-inch baking dish.
  • Press evenly in dish.
  • Place chocolate pieces in 1 cup glass measure.
  • Microwave, on High, for 1 1/2 to 2 1/2 minutes or until chocolate is glossy, stirring once.
  • Stir until smooth.
  • Blend in peanut butter, spread over bars.
  • Refrigerate until chocolate is set.
  • Cut into squares.
  • Makes 24 bars.

I've never actually had an "Oh Henry!" bar, so I can't say whether or not this recipe tastes like one. It sounds delicious anyway!

4 cups quick-cooking oats
1/2 cup sugar
1 cup brown sugar (packed)
1 cup butter
6 ounces chocolate chips
1 cup crunchy peanut butter

Steps:

  • Preheat the oven to 350 degrees.
  • Mix the oats, sugar, and brown sugar in a large bowl.
  • Melt the butter, pour into the bowl, and mix the ingredients well.
  • Press the mixture into a greased 13x9 pan. Bake for 20 minutes; then let cool for 20 minutes.
  • Melt the chocolate chips and peanut butter in a saucepan over medium heat, stirring to blend. Spread over cooked base.
  • Refrigerate for 1 hour. Cut into rectangular bars.

Very fast (top-of-the-stove) and scrumptious! You can freeze this (if you manage to not eat it all!) without the icing. I have been making this for years with great reviews!!

20 whole graham crackers (or enough to make bottom layer and top layer)
3/4 cup butter or 3/4 cup margarine
2/3 cup packed brown sugar
1/2 cup low-fat milk
1/3 cup semi-sweet chocolate chips
1 1/4 cups graham cracker crumbs
1 cup chopped walnuts
1 1/4 cups icing sugar
3 tablespoons butter or 3 tablespoons margarine
1/4 cup cocoa
5 teaspoons hot coffee

Steps:

  • Line a 9x9 inch pan with whole crackers, trimming to fit. Set aside.
  • Put butter, sugar and milk in saucepan. Bring to boil. Remove from heat and stir in chocolate chips. When chips have melted, add the crumbs and nuts. Stir to mix. Pour over crackers in pan.
  • Cover with whole graham crackers trimming to fit. Cool before frosting.
  • Icing: beat ingredients together in small bowl, adjusting liquid as needed. Spread over squares. Cover and allow to stand a few hours before cutting so the crackers will soften. Cut into 36 squares.
