This recipe came from a Paula Deen magazine. I have misplaced it several times now, much to my husband's disappointment. I am finally putting it on Zaar so I will be able to find it in the future. I typically double the recipe and freeze at least one. I have included OAMC directions for the recipe, although they were not in the original recipe.

3 tablespoons olive oil
1 green bell pepper, diced
1 onion, diced
4 garlic cloves, finely chopped
3 shallots, finely chopped
2 eggs, lightly beaten
1/4 cup fresh parsley, chopped
1 tablespoon thyme, chopped
1 lb ground sirloin
1/2 lb ground turkey
1/2 lb ground pork
1 cup panko breadcrumbs
1 1/2 cups ketchup, divided
4 tablespoons red wine vinegar, divided
1/2 cup tomato sauce
2 tablespoons honey
2 tablespoons prepared mustard
1 teaspoon hot sauce
1 teaspoon salt
1 teaspoon black pepper

Steps:

  • If baking now, preheat oven to 425. Line a rimmed baking sheet with parchment paper; set aside.
  • Heat oil in a large skillet over medium-high heat. Add bell pepper and onion, and cook for 5 minutes.
  • Stir in garlic and shallots, and cook for 2 minutes. Set aside to cool.
  • In a large bowl, whisk together eggs, parsley, and thyme.
  • Add sirloin, turkey, pork, panko, 1/2 c ketchup, 2 tablespoons vinegar, and cooled vegetables; mix just until combined.
  • Pack meat mixture into a 9 x 5 inch loaf pan. Invert loaf pan onto prepared pan.
  • In a medium bowl, whisk together remaining 1 cup ketchup, remaining 2 tablespoons viegar, tomato sauce, honey, mustard, hot sauce, sale and pepper.
  • Reserve one-quarter sauce for serving. Brush remaining sauce evently over meat loaf.
  • Bke for 1 hour and 15 minutes.
  • Remove from oven, and let stand for 10 minutes before slicing.
  • If freezing, place meat mixture in sealed ziptop bag; place sauce in separate bag. Freeze both bags flat inside a larger bag.
  • To serve, thaw and bake as directed above.

1 1/2 pounds ground meatloaf mix (equal parts ground beef, pork and veal or turkey)
1 cup dried breadcrumbs
2 tablespoons chopped fresh flat-leaf parsley
2 large eggs, lightly beaten
1 medium onion, grated
1 clove garlic, minced
1/2 cup ketchup
1 tablespoon plus 1 teaspoon Worcestershire sauce
Kosher salt and freshly ground black pepper
2 teaspoons light brown sugar

Steps:

  • Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment.
  • Combine the meatloaf mix, breadcrumbs, parsley, eggs, onion, garlic, 1/4 cup of the ketchup, 1 tablespoon of the Worcestershire, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large mixing bowl. Using your hands, mix together until well combined.
  • Transfer the mixture to the prepared baking sheet and form it into a compact oval-shaped loaf about 9 inches by 5 inches. Bake the meatloaf for 30 minutes.
  • Stir the brown sugar together with the remaining 1/4 cup ketchup and 1 teaspoon Worcestershire in a small bowl for the glaze. Brush the top and sides of the meatloaf all over with the glaze. Return to the oven and bake until the glaze starts to caramelize and a thermometer inserted in the center of the meatloaf registers 160 degrees F, about 25 minutes more. Let rest for 10 minutes before slicing and serving.

3 celery stalks, chopped
3 large cloves garlic, minced
1 jumbo carrot, chopped
1 large yellow onion, diced
1 each, red, orange and yellow pepper, chopped
1 teaspoon kosher salt
1/2 teaspoon ground black pepper
1/2 teaspoon ground white pepper
1 teaspoon cayenne pepper
1 teaspoon ground cumin
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon thyme
1 teaspoon sugar
3 large eggs
5 ounces half-and-half
5 ounces ketchup
1 1/2 pounds extra-lean ground beef
1 1/2 pounds bulk sweet Italian sausage
2 cups panko breadcrumbs
6 sprigs fresh cilantro, chopped
Nonstick cooking spray, for the pan

Steps:

  • Preheat oven to 350 degrees F.
  • Heat oil in heavy skillet. Add green onions, celery, garlic, carrot, onion and peppers and saute until sweated, about 5 minutes. Do not overcook. Set aside to cool. Combine salt, black and white peppers, cayenne, cumin, garlic powder, paprika, thyme, sugar and eggs in a large bowl and beat well. Add half-and-half and ketchup and blend thoroughly. Add meats, breadcrumbs, cilantro and cooled vegetables to egg mixture and blend thoroughly with hands for about 5 minutes. With damp hands, form the mixture into an oval resembling a long loaf of bread. Place on a cookie sheet that has been lined with foil and sprayed with cooking spray. Cover with foil. Bake 45 minutes, then uncover and bake 15 minutes more. Let rest for 20 minutes before slicing and serving.

Two 8-ounce cans tomato sauce
1/2 cup water

Steps:

  • Mix together beef, crumbs, egg, onion, salt, pepper and 1/2 of tomato sauce. Form into loaf and put into shallow pan. Combine rest of the tomato sauce and all the other ingredients. Pour over loaf. Bake in a preheated 350 degree oven for 1 hour and 15 minutes. Baste occasionally.

1/2 medium yellow onion, peeled and diced
1/4 yellow bell pepper, seeded and diced
1/4 green bell pepper, seeded and diced

2 large eggs
1/4 cup (60 ml) heavy cream
1 tablespoon (15 ml) Worcestershire sauce
1 teaspoon (5 ml) sea salt
1/2 teaspoon (2.5 ml) ground black pepper
1/2 teaspoon (2.5 ml) paprika
1/4 teaspoon (1.25 ml) garlic powder
dash cayenne pepper (optional)
1/2 pound ( 225 g) ground sirloin
1/2 pound (225 g) ground pork
1/2 pound (225 g) ground lamb

Steps:

  • 1. Fill and preheat the SousVide Supreme™ to 140F/60C. 2. Heat the olive oil in a skillet over medium heat; add the onion and sauté until translucent. Add the peppers and continue to cook, stirring occasionally, until they begin to soften, about 3 minutes. Set aside to cool. 3. In a large mixing bowl, beat the eggs well. Add the cream, onions and peppers, and all seasonings and stir to combine. 4. Add the ground meats and knead to mix well. 5. Divide the mixture evenly between two small (quart/liter) cooking pouches, pushing it into the bottom and forming a loaf about 2 inches (5 cm) thick across the width of the pouches. Roll the pouch around the formed loaf to compress it tightly. 6. Vacuum seal and submerge the pouches in the water oven and cook for at least 2 hours, but up to 6 hours will not affect the texture significantly. 7. Remove the meatloaves from the pouches, put them on a broiling pan, pat the surfaces dry, and sear the loaves under a hot broiler or with a kitchen torch. 8. Slice and serve.

When I moved out on my own I started experimenting with different recipes and creating my own version. I finally came up with the best meatloaf I have ever made, and I wanted to share it.

1 tablespoon butter
¼ cup minced onion
2 cloves garlic, minced
1 ½ teaspoons salt
1 ½ teaspoons freshly ground black pepper
2 pounds extra-lean ground beef
3 slices bread, toasted and crumbled
7 buttery round crackers, crushed
1 egg, lightly beaten
3 ½ tablespoons sour cream
1 ½ tablespoons Worcestershire sauce
1 (15 ounce) can tomato sauce, divided
¼ cup milk
3 tablespoons ketchup

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt the butter in a skillet over medium heat, and cook the onion and garlic 5 minutes, until onion is tender. Remove from heat, and season with salt and pepper.
  • In a large bowl, mix the onion and garlic, beef, crumbled bread, crushed crackers, egg, sour cream, Worcestershire sauce, and 1/2 can tomato sauce. Gradually stir in the milk 1 teaspoon at a time until mixture is moist, but not soggy. Transfer the mixture to a 5x9 inch loaf pan.
  • Bake uncovered in the preheated oven 40 minutes. Increase oven temperature to 400 degrees F (200 degrees C), and continue baking 15 minutes, to an internal temperature of 160 degrees F (70 degrees C).
  • In a small bowl, mix the remaining tomato sauce and ketchup. Pour over the top of the meatloaf, and continue baking 10 minutes.

2 carrots, chopped
1 cup beef broth
2 eggs
½ cup bread crumbs
2 tablespoons minced fresh basil
½ teaspoon salt
½ teaspoon ground black pepper
1 pound ground turkey
¾ pound ground beef
½ pound ground pork sausage
½ cup condensed tomato soup
1 tablespoon balsamic vinegar
½ teaspoon Dijon mustard

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Oil a 9x5-inch loaf pan.
  • Place the onion and carrots into a saucepan, and pour in the beef broth. Bring to a boil over medium heat, and reduce heat to a simmer; cook, stirring often, until the vegetables are tender, about 8 minutes. Set the veggies and broth aside.
  • In a large bowl, beat the eggs, and stir in bread crumbs, basil, salt, and black pepper. Allow the mixture to stand for 5 minutes to moisten the crumbs, and lightly mix in the turkey, beef, and pork sausage. Mix in the cooked onions, carrots, and beef broth. Place the mixture into the prepared loaf pan. In a bowl, mix the tomato soup, balsamic vinegar, and Dijon mustard together, and spread the mixture over the meat loaf.
  • Bake until the loaf is no longer pink in the center and an instant-read meat thermometer reads at least 160 degrees F (70 degrees C), about 1 1/2 hours.
