1 pound French bread, cut into 1-inch cubes
1 quart heavy cream
2 cups white sugar
3 eggs, lightly beaten
2 tablespoons vanilla extract
1 (12 ounce) package white chocolate chips
1 (12 ounce) package white chocolate chips
1 cup heavy cream

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan.
  • Place French bread in a large bowl. Pour heavy cream over bread and let soak. Add sugar, eggs, and vanilla extract; mix all together with your hands. Add white chocolate chips and mix thoroughly.
  • Bake in the preheated oven until bubbly, 40 to 45 minutes.
  • While bread pudding is baking, prepare the sauce. Combine white chocolate chips and heavy cream in a small saucepan over low heat. Cook, stirring constantly, until melted. Drizzle a small amount of sauce over each serving.

Growing up, my best friend's grandmother always had leftover challah and would make some sort of bread pudding. This is my modernized version on a very sentimental dessert.

3 cups heavy cream
4 ounces bittersweet chocolate, chopped
4 ounces milk chocolate, chopped
1 cup sugar
12 egg yolks
2 tablespoons vanilla extract
Pinch of salt
8 ounces white chocolate, chopped
1/2 loaf challah bread, large diced
1 cup cream
1 cup chopped bittersweet chocolate
4 tablespoons orange liqueur, such as Cointreau
Toasted Caramel Praline Sauce, recipe follows
2 cups walnuts
2 cups sugar
1 cup heavy cream
3 tablespoons unsalted butter

Steps:

  • For the bread pudding base: Preheat the oven to 325 degrees F.
  • Bring the cream to a boil in a saucepan over medium-high heat. Put the milk chocolate and bittersweet chocolate in a bowl and pour the cream over it. Allow to sit for a couple minutes and stir until smooth.
  • Whisk together the sugar and egg yolks in a large mixing bowl. Slowly whisk the hot chocolate mixture by the ladleful into the egg yolk mixture until fully incorporated.
  • Add the vanilla and pinch of salt. Then strain through a fine-mesh strainer.
  • Place the chopped white chocolate in the bottom of the ramekins. Place the cubed bread on top. Pour the bread pudding base over the chopped white chocolate and bread and allow the bread to soak until absorbed, 30 to 45 minutes.
  • Bake in a water bath at 325 degrees F until the pudding is firm when lightly pressed in the center with a finger, about 1 hour 15 minutes (depending on your oven).
  • For the ganache: Bring the cream to a boil in a small saucepan. Add the chocolate and stir until completely melted. Stir in the orange liqueur.
  • Carefully remove the ramekins from the water bath using a large spatula and tongs. Cover each pudding with 3 tablespoons ganache and drizzle with the Toasted Caramel Praline Sauce.
  • Preheat the oven to 350 degrees F. Spread the walnuts on a rimmed baking sheet and toast until fragrant, 6 to 8 minutes. Let cool and then chop.
  • Combine 1 cup sugar and 3 tablespoons water in a saucepan over medium-high heat. Let cook without stirring until amber in color. Remove from the heat and add the toasted chopped walnuts.
  • Spread out on a parchment-lined baking sheet and let cool to set, 10 to 15 minutes. Break into small pieces for caramel sauce.
  • Combine the remaining 1 cup sugar and 4 tablespoons water in a saucepan over medium-high heat. Let cook without stirring until amber in color. Remove from the heat, add the cream and stir to combine. Add the butter and then the pieces of toasted walnut praline and stir until dissolved.

Although I realize that with the holidays over, calories aren't the most favorite topic, but I made this delicious, decadent bread pudding recently, and want so much to share it with you.It's is from the Feb. '06 issue of Cuisine magazine.

2 cups semi-sweet chocolate chips (12 oz.)
1 cup brown sugar, firmly packed
1/2 cup unsalted butter, cubed
2 cups whole milk or 2 cups 2% low-fat milk
3 eggs
2 tablespoons vanilla extract
2 teaspoons instant espresso powder
1/2 teaspoon table salt
13 slices Texas toast thick bread, which has first been (thick egg bread)
4 ounces white chocolate, chopped (only use white chocolate that has cocoa butter in it. That's what gives the chocolate it's flavor)
2/3 cup heavy cream (I used whipping cream)
2 tablespoons powdered sugar
1 pinch salt
2 tablespoons Amaretto
2 teaspoons cornstarch
fresh raspberry

Steps:

  • Preheat oven to 350*, coat a 9" springform pan with 1 tablespoons softened unsalted butter.
  • Melt chocolate chips with the sugar and butter in a saucepan over low heat. Stir frequently until chips are smooth, about 8 minutes.
  • Whisk milk, eggs,vanilla, espresso, and salt together and pour over *staled bread cubes. Toss well so the bread absorbs most of the liquid and begins to lose it's shape.
  • Fold the melted chocolate into the bread mixture, then transfer to the prepared pan. Bake for 1 hour, or until the center springs back when gently pressed. Cool on a rack for 15 min., remove the sides of the pan and slice.
  • Serve with topping:.
  • Melt the chocolate with the cream and sugar in a saucepan over low heat until smooth, stirring constantly, about 8 minute.
  • Combine amaretto and cornstarch to make a slurry, then stir it into the chocolate mixture. Increase heat to medium and bring to a boil for 1 minute, or until thickened slightly. Transfer to a bowl; cool to room temperature.
  • To serve, spoon sauce over wedges of warm bread pudding and garnish with raspberries.
  • *To stale your bread, lay the slices out on cookie sheets, turning every half hour until they begin to feel dry. Then cut them into 1" cubes,.
  • It is a very rich recipe, and I don't know how many servings you will get out of yours.

WHITE CHOCOLATE SAUCE:
1 quart whipping cream
1 1/2 cup milk
3/4 cup sugar
3/4 pounds white chocolate, broken into pieces
3 whole eggs
9 egg yolks
1 3/4 pounds brioche bread, stale
1 quart heavy cream
1 1/2 pounds white chocolate(broken pieces)
3/4 cups corn syrup
RASPBERRY SAUCE:
2 1/2 pounds frozen raspberries
1 quart water
2 cups sugar

Steps:

  • Slice the stale brioche bread no greater than 1/2 thick. In a heavy bottom pan heat the whipping cream, milk, and sugar over medium heat. When hot remove from stove, add the white chocolate pieces and stir until melted. Combine whole eggs with egg yolks In a mixing bowl. In a steady stream slowly pour the cream mixture into the egg yolk mixture whisking constantly Break up the bread and add to the custard mixture. Allow setting for 15 •minutes. Put mixture in a lined baking pan. compress and cover with foil. Put onto sheet tray, pour water onto sheet tray. Creating a water bath. Bake for 40 minutes at 350° F Remove foil and bake for 30 more minutes or until browned. Cool, flip the bread pudding out of the pan, and cut Into portions. WHITE CHOCOLATE SAUCE: Bring cream and com syrup to a boil in a small saucepan. Remove from heat and stir in the broken white chocolate until smooth and completely melted. Cool well and transfer to clean container. Store In the refrigerator. RASPBERRY SAUCE: Bring sugar, water and raspberries to a boil and cook to reduce volume by one-third. Purée the sauce when finished reducing and pour through a fine strainer to remove the seeds from the berries. Store in the refrigerator.

This delicious bread pudding is served at Nordstrom's Cafe bistro and is also featured on their website. I get compliments on it each time and requests for the recipe so I thought I'd post it up here. Enjoy!

4 cups heavy whipping cream
2 cups milk (I prefer whole!)
1 cup sugar
3 1/2 cups white chocolate chips
6 large eggs, plus
12 large egg yolks
1 teaspoon vanilla extract
1 loaf day old French baguette, 24-inch cut into 1/2-inch inch slices (artisan bread works well too!)
1/2 cup water
1/2 cup sugar
2 teaspoons orange zest
2 cups fresh raspberries (thawed) or 2 cups frozen raspberries (thawed)
1/2 cup heavy whipping cream
1 cup white chocolate chips
5 tablespoons unsalted butter (I prefer sweet cream butter!)

Steps:

  • Bread pudding:.
  • Preheat oven to 325 degrees F. Butter a 9"X12"X2" baking pan including the sides. Line bottom of pan with parchment paper.
  • Combine cream, sugar, milk in saucepan over medium heat. Stir until hot. Add chocolate morsels and stir until chocolate is melted. Set aside so it can cool slightly.
  • Whisk eggs, egg yolks, and vanilla. Gradually pour the cream mixture into the egg mixture and whisk until smooth. Be careful that the cream mixture isn't too hot or the eggs will curdle. Tempering the eggs is very useful in this step.
  • Lay about half of the bread slices in the baking pan and pour about half of the cream mixture, allowing it to soak up the liquid. Next, layer the remaining bread slices on top and pour more mixture over it. You might need to press down the bread on top to let it soak up some of that liquid. Be careful that you don't layer too much, since it does rise quite a bit in the oven. I usually stop layering once it hits right at the top of the pan.
  • Cover the pan with foil and bake for 1 hour. While it's baking, this is a good time to get started on those sauces!
  • After that 1st hour, remove the foil and bake uncovered until it's no longer liquid in the center and the top should be golden brown.
  • Raspberry Sauce:.
  • Combine water, sugar, and orange zest in a sauce pan over medium heat. Stir until syrupy.
  • Add raspberries and cook on low heat stirring occasionally until the fruit falls apart. Strain out the seeds.
  • White Chocolate Sauce:.
  • Heat heavy cream in saucepan over medium heat until hot.
  • Stir in white chocolate morsels until melted. Set aside to cool slightly.
  • Prepping the Bread Pudding:.
  • By individual slices, place a slice(s) on a cookie sheet and brush each piece with the melted sweet cream butter, including the sides (don't worry about the bottom of the slice).
  • Bake in oven for about 12-15 minutes. This will create a crisp "seared" outside which is very delicious.
  • Once the bread pudding is ready, by individual slices, place on a serving plate and drizzle with the white chocolate sauce and droplets of raspberry sauce. Enjoy!

I had a bunch of chocolate cake doughnuts that were going stale and I needed a good use for them. I decided to try a bread pudding type of recipe, and when I was unable to find a recipe for what I wanted, I whipped this up. It is dense and pudding-like with little sweet pockets of melted milk chocolate. I might have to let some more doughnuts go stale so I can make it again. You might want to add a little salt (1/4 teaspoon), but I liked it without.

1 3/4 cups nonfat chocolate milk
1 1/2 teaspoons almond flavoring

6 ounces stale French bread
8 tablespoons melted butter
1 cup coarsley chopped walnuts
8 ounces semisweet chocolate, chopped into 1/2 inch chunks
4 eggs
1 cup sugar
1/2 cup usweetened cocoa, sifted
1 pinch salt
2 cups chocolate milk
1/2 teaspoon vanilla extract

Steps:

  • Tear the bread into chunks approximately 1 inch square.
  • Toss them in a bowl with the melted butter, walnuts, and chocolate chunks.
  • Spread the mixture in a buttered 9 x 13 x 2 baking dish.
  • Beat the eggs slightly.
  • Beat in the sugar, cocoa, salt, chocolate milk, and vanilla.
  • Pour this mixture over the bread.
  • Let it stand for at least 1/2 hour.
  • With a broad spatula, occasionally push the bread down into the liquid as it soaks.

3 loaves French bread, 10 inch each
4 whole eggs
6 egg yolks
4 cups heavy whipping cream
1 cup milk
1 cup sugar

Steps:

  • Preheat oven to 300.
  • Slice french bread into half inch round croutons and set aside.
  • In a large mixing bowl, combine eggs and egg yolks.
  • Whipe until well blended.
  • In a large saucepan, combine whipping cream, milk, and sugar.
  • Bring mixture to a low simmer, then add white chocolate.
  • Whisk until chocolate is completely melted.
  • Remove from heat and stir in whipped eggs.
  • Blend thoroughly to keep eggs from scrambling.
  • In a buttered 9 x 13 baking dish, place bread slices in 2-3 layers.
  • Pour half the the cream mixture over the bread and allow it to soak up most of the mixture before adding the rest.
  • Press the bread gently, allowing the cream mix to be evenly absorbed.
  • Cover the dish and let it soak at last 5 hours prior to baking.
  • Bake covered for 1 hour and then remove cover and bake another 45 minutes until top has browned.
  • Note: This is best if chilled overnight, then cut into squares and reheated in individual portions in the microwave.

1 cup milk (do not use low-fat or nonfat)

7 large egg yolks

Steps:

  • Preheat oven to 275°F. Arrange bread cubes on baking sheet. Bake until light golden and dry, about 10 minutes. Transfer baking sheet to rack; cool completely. Increase oven temperature to 350°F.
  • Combine 3 cups whipping cream, 1 cup milk and 1/2 cup sugar in heavy large saucepan. Bring to simmer over medium heat, stirring until sugar dissolves. Remove from heat.   • Bring remaining 1/2 cup cream to simmer in heavy medium saucepan. Remove saucepan from heat. Add remaining 8 ounces white chocolate and stir until melted and smooth.
  • Serve pudding warm with warm white chocolate sauce.
