2 pints fresh strawberries, sliced
1 cup sugar, divided
2 packages (8 ounces each) cream cheese, softened
3 tablespoons orange juice
3 cups heavy whipping cream, whipped
1 loaf (10-3/4 ounces) frozen pound cake, thawed and cut into 1/2-inch cubes
3 ounces semisweet chocolate, grated
Optional: Chocolate curls and additional strawberries

Steps:

  • In a bowl, toss strawberries with 1/2 cup sugar; set aside. , In a bowl, beat cream cheese, orange juice and remaining sugar until smooth. Fold in the whipped cream; set aside. , Drain strawberries, reserving juice; set the berries aside. Gently toss cake cubes with reserved juice. Place half of the cake in a 4-qt. trifle dish or serving bowl. Top with a third of the cream cheese mixture, half of the strawberries and half of the grated chocolate. Repeat layers. Top with remaining cream cheese mixture. Garnish with chocolate curls and strawberries if desired. Cover and refrigerate for at least 4 hours.

2 cups powdered sugar
1 (8 ounce) container sour cream
1/2 teaspoon vanilla
1/4 teaspoon almond extract
1 cup Cool Whip, thawed
4 tablespoons sugar
1 angel food cake, torn into bite-size pieces
2 quarts fresh strawberries, thinly sliced

Steps:

  • In a large bowl, beat cream cheese and powdered sugar until fluffy; add sour cream, 1/2 teaspoon vanilla and the almond extract; set aside.
  • Fold the cool whip into the cream cheese mixture.
  • Gently stir in cake pieces; set aside.
  • Combine strawberries and sugar, stirring until sugar is dissolved.

1 baked tube pan angel food cake, cut into cubes
3 (8 ounce) packages cream cheese, softened
1 (8 ounce) container vanilla yogurt
1 (3 ounce) package French vanilla instant pudding
1/2 cup milk
1 (16 ounce) container frozen whipped topping, thawed
2 (20 ounce) cans cherry pie filling (I use Lite)

Steps:

  • Beat cream cheese till light and fluffy, blend in vanilla yogurt.
  • In a smaller bowl mix pudding mix and milk till thickened, blend into cream cheese mixture- fold in all the whipped topping except about 1 Cup.
  • In a 4 quart bowl (or trifle bowl) evenly spread half the cream cheese mixture in bottom of bowl, top with half the angel food cake cubes, press these down lightly with the back of a spoon.
  • Spread 1 can of cherry pie filling over cake, covering completely.
  • Repeat layers.
  • Spread the reserved 1 cup whipped topping over last layer of cherry filling.
  • Cover and chill overnight before serving.
  • This will keep in the fridge for 2 weeks-- IF it lasts that long!

The other night the kids and I made a Berry Cheesecake Trifle, spur of the moment because we had some angel food cake and we knew it wasn't going to go very far with all of us! We were going to try and stretch it, to feed everyone! It was too hot to turn the oven on, we had berries and some pudding so we whipped this yummy dessert up. I had my oldest wash, hull and slice the strawberries. The littlest one tore up the angel food can into bite size pieces and my middle daughter made 2 packages of cheesecake pudding. We started with the angel food cake covering the bottom of a glass dish. Then we layered strawberries and blueberries to cover. Next was a layer of pudding and on top of that a layer of cool whip. We kept layering until we were out of space!

1 egg

150ml Marsala, madeira or medium-sweet Sherry
2 x 300g packs cream cheese
600ml double cream
50g icing sugar , sifted
2 x 250g packs gingernut biscuits
2 x 200g punnets of raspberries

Steps:

  • Put 50ml of the alcohol in a bowl with the cream cheese and beat with an electric whisk until smooth. Add the cream and sugar and beat again until well mixed and softly whipped.
  • Using a pastry brush, quickly brush a gingernut biscuit with a little of the remaining alcohol. Stack, brushed-side down, on a cake plate or stand, then repeat to make a large round base of biscuits. Spread over a layer of cream, squish in some raspberries, then repeat with another layer of biscuits, pressing down slightly to stick. Repeat layers, finishing with a fourth layer of cream and raspberries. Cover with an upturned mixing bowl, or very loosely with cling film, then chill until ready to serve. It's good after 2 hrs, but could be made the day before, too. Serve with a sprinkling of crushed gingernut biscuit.

  • Drain raspberries, save juice, set aside.

  • Add orange juice or liqueur, fold in whipping cream.
  • To assemble: Drizzle cake slices with 1/4 cup of the reserved raspberry juice.

1 cup graham cracker, finely crushed
8 ounces mascarpone cheese
1/2 tablespoon vanilla extract
1/4 cup powdered sugar
2 tablespoons strawberry jam (no sugar added)
1 lb strawberry, thinly sliced
1/4 cup sugar
1 (3 ounce) package strawberry Jell-O gelatin dessert
2 cups water
2 cups whipped cream (sweetened)

Steps:

  • Spread graham cracker crumbs on the bottom of an 8" round trifle.
  • dish or glass bowl.
  • In another bowl, mix mascarpone cheese, vanilla extract, powdered sugar, and jam.
  • Gently spread cheese mixture on top of graham cracker layer (it will be a thin layer).
  • Mix strawberries with 1/4 cup of sugar.
  • Spread strawberries on top of cheese layer.
  • Pour jello mix and water in a small saucepan, heat to a full boil (stirring as needed).
  • Remove from heat and let cool for a few minutes.
  • Pour jello over the strawberry layer (I put a metal spoon in the bowl just to make sure it wasn't too hot for the glass).
  • Refrigerate overnight or until firm.
  • Top with whipped cream.

2 pkg cream cheese
2 c powdered sugar
1 c sour cream
1/2 pt heavy whipping cream
1 tsp vanilla extract
1 Tbsp sugar
1 angel food cake--torn or cut into pieces
2 qt fresh strawberries thinly sliced
3 Tbsp sugar
1 1/2 tsp almond extract

Steps:

  • 1. Strawberry Cheesecake Trifle In a large bowl, cream together cream cheese and sugar; add sour cream, vanilla and almond extract. Set aside. In a small, deep bowl, whip the cream, vanilla and sugar. Fold whipped cream into cream cheese mixture. Add 1/2 of the cake pieces; set aside. Combine strawberries, sugar and almond extract. Layer together in large glass bowl, starting with strawberries, then adding cake mixture. Continue layering; finish with strawberries. Cover with plastic wrap; chill well.

1 loaf of sugar free pound cake
1 0.60 oz box of sugar free black cherry jello
16 oz frozen pitted sweet cherries
1 1.0 oz box of sugar free instant cheesecake pudding
1 small container of cool whip

Steps:

  • 1. Slice pound cake and cut into six cubes per slice. Place 1 slice worth of cubes in the bottom of each parfait glasses (I used 6 glasses).
  • 2. Prepare jello using the speed set method found on the jello box and pour in the frozen cherries. Place in freezer for about 10 minutes, stir and place in fridge for another 5 minutes. The spoon about 1/3 cup of jello and cherries into each glass. Return to fridge to finish setting up.
  • 3. Once jello is set firm, prepare cheesecake pudding as instructed and quickly pour 1/3 cup of pudding (or more) into each glass.
  • 4. Lastly, top each parfait with Cool Whip to fill up the glasses and cover and chill. You can serve it immediately or it will hold well for 24-48 hours in the fridge.
