BOW TIE PASTA SALAD WITH CHICKEN AND ROASTED PEPPERS



Bow Tie Pasta Salad with Chicken and Roasted Peppers image

Kosher salt
6 ounces bowtie pasta
2 large ripe tomatoes, seeded and diced
2 tablespoons red wine vinegar
3 tablespoons extra-virgin olive oil
1 tablespoon Dijon mustard
Freshly ground pepper
2 bell peppers (red and yellow), halved lengthwise and seeded
1 small rotisserie chicken, shredded into large pieces
2 tablespoons chopped fresh parsley leaves

Steps:

  • 1. Position a rack about 6-inches from broiler and heat to high. Bring a medium-large pot of salted water to a boil. Add the pasta and cook, stirring often, until al dente, about 10 minutes. Drain well and rinse under cold running water. Spread out on paper towel to absorb excess moisture.
  • 2. Meanwhile, put the tomatoes in a small bowl and stir in 1 tablespoon vinegar, 1 tablespoon olive oil, and 1/4 teaspoon salt. Set aside to macerate for 15 to 20 minutes.
  • 3. Arrange the peppers on a broiling pan, cut side down and broil, until blistered and black in spots, 5 to 7 minutes. Transfer peppers to a bowl, cover with a lid or plate and set aside to steam for 10 to 15 minutes. Rinse or scrape off the skin; cut peppers into a dice.
  • 4. Mix the remaining 1 tablespoon vinegar, mustard in a large bowl, season with 1/2 teaspoon salt and some pepper. Whisk in the remaining 2 tablespoons olive oil until smooth. Add the tomatoes with accumulated juices, the roasted peppers, and parsley and toss lightly. Just before serving, add the chicken and pasta and toss gently until combined. Season with salt and pepper. Serve.

This Italian Chicken Pasta Salad is easy, ready in 20 minutes, and showcases some of my favorite summer ingredients. It's perfect for summer potlucks and BBQs, or as a no-fuss family dinner!

12 ounces rotini pasta, cooked according to package directions (I used tri-color rotini)
2 tablespoons olive oil for sauce + 1 tablespoon for cooking chicken
2 tablespoons lemon juice
2 tablespoons apple cider vinegar
2 tablespoons honey
1 tablespoon Italian seasoning
2 teaspoons lemon zest
1/2 teaspoon salt, or to taste
1/2 teaspoon pepper, or to taste
1/4 teaspoon cayenne pepper, optional and to taste
1 1/4 pounds boneless skinless chicken breasts, diced into bite-sized pieces and seasoned with salt and pepper
1 cup Roma tomatoes, diced*
1 cup fresh basil leaves (laid loosely in measuring cup), sliced thinly
1 cup cucumber, peeled and diced
1/2 cup grated parmesan cheese, or more if desired

Steps:

  • Cook pasta according to package directions, drain, place in a large bowl, and set aside.
  • To a medium bowl or large measuring cup, add 2 tablespoons olive oil, lemon juice (zest the lemon before juicing it), apple cider vinegar, honey, Italian seasoning, lemon lest, salt, pepper, and whisk to combine; set sauce aside.
  • To a large skillet, add 1 tablespoon olive oil, add chicken and season with salt and pepper to taste, and cook over medium-high heat for about 5 minutes, flipping intermittently so all sides cook evenly. Cooking time will vary based on thickness of chicken breasts and sizes of pieces. Chicken should be about 90% cooked through.
  • Add the sauce and allow it to bubble at a medium-fast boil for about 3 to 4 minutes, or until sauce has reduced some and chicken is cooked through. Stir sauce and flip chicken intermittently throughout. Add chicken and any cooking liquid to the pasta bowl.
  • Add the tomatoes, basil, cucumber, cheese, and toss gently to combine. Taste and check for seasoning balance, making any necessary adjustments (more Italian seasoning, salt, pepper, pinch of cayenne, splash of lemon juice, etc.) before serving.

⅔ cup olive oil
3 tablespoons white wine vinegar
¼ cup fresh basil leaves
2 tablespoons grated Parmesan cheese

1 yellow bell pepper, julienned
1 orange bell pepper, julienned

1 lb chicken meat, cooked cubed
1 green bell pepper
1 yellow bell pepper
1 red bell pepper
2 tablespoons parsley, chopped
2 teaspoons garlic, minced
1/2 cup olive oil
1/2 cup white balsamic vinegar
2 teaspoons lemon zest
3 teaspoons capers (optional)
6 lettuce leaves
salt
pepper

Steps:

  • Cook rotini according to directions on the package; drain.
  • Cut all peppers in smaller pieces.
  • Combine with the drained and cooled down rotini, cooked chicken breast cubes and parsley.
  • In a separate bowl, make the vinaigrette with oil, vinegar, zest (and optional chopped capers).

3 tablespoons extra-virgin olive oil, plus 1/4 cup
2 cups fresh arugula (about 3 ounces)
3/4 cup crumbled ricotta salata cheese (or feta cheese)
1/2 cup dried cherries
12 fresh basil leaves, torn
1/4 cup toasted pine nuts
3 tablespoons lemon juice
1 1/2 teaspoon salt
1 teaspoon freshly ground black pepper

Steps:

  • Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes. Drain pasta and put the pasta on a large cookie sheet. Drizzle the pasta with 3 tablespoons olive oil, toss, spread out, and set aside to cool.
