This is my mother's recipe for creamy hummus. She cooked every day the food she learned how to cook when she was growing up. She gave us a history lesson of our culture and our family every night at the dinner table.

Number Of Ingredients 7

3 cloves garlic, peeled
2 (15 ounce) cans garbanzo beans, drained
1 cup olive oil
1 cup tahini
3 lemons, juiced
salt to taste
¼ cup olive oil

Steps:

  • Place garlic in a food processor and chop thoroughly. Add garbanzo beans and blend into a paste. Pour in 1 cup olive oil, tahini, lemon juice, and salt. Blend until smooth and creamy.
  • Place hummus in a bowl and top with 1/4 cup olive oil.

This traditional Middle Eastern dish that makes use of chickpeas can be served as a dip with vegetables and crackers or used as a spread on sandwiches.

3 1/2 cups Cooked Dried Chickpeas, or two 15.5 oz cans chickpeas, drained and rinsed
1 clove garlic, smashed
1/4 cup lemon juice
2 tablespoons tahini paste
1 teaspoon coarse salt
1/2 cup water
1/2 cup olive oil

Steps:

  • In bowl of food processor combine chickpeas, garlic, lemon juice, tahini, and salt. Pulse to a thick paste. With motor running, slowly add water, then oil, in a slow stream. Taste and add more salt if needed.

Hummus is a traditional Middle Eastern dish made of chickpeas. I love hummus because it is vegan, very healthy and can be used as a dip for appetizers but can also eaten as part of a lunch or dinner recipe. For this recipe I used homemade tahini. Making tahini is very simple, all you need are roasted sesame seeds, olive oil and salt. I used 6 tbs. for 1/2 cup sesame seeds. You just put all the ingredients in your blender and mix. 200 gr./ 7 oz. chickpeas from a can, drained and washed.
1 tbs. olive oil
1 garlic clove
1 tbs. tahini
1 tsp. lemon juice
Any spices you like
Water to make the consistency more liquid

Steps:

  • Put all the ingredients in a blender and mix well.
  • Add as much water as needed to make your hummus the consistency you like.
  • Put in a container and keep in the fridge for up to a week.

TRADITIONAL GARLIC HUMMUS

Throw away store bought Hummus and make the good stuff!! This is a lemon and garlic flavored Hummus and it tastes wonderful! Try adding additional ingredients to add different flare such as hot pepper flakes or basil. The sky's the limit! Enjoy!

1 (12 ounce) can chickpeas, rinsed and drained
1/3 cup tahini paste
1/4 cup lemon juice (or to taste)
1/4 cup olive oil
3 -4 minced garlic cloves, minced (or to taste)
salt and pepper

Steps:

  • Place all ingredients in food processor and blend until smooth, adding more lemon if necessary to obtain desired consistency. The blending can take as long as 3-4 minutes Be patient it comes out better!
  • I have made this a lot lately and I have come to learn that I must follow the directions EXACTLY especially with the Tahini paste.
  • Refrigerate for several hours. May be made a week ahead of time.
  • Serve with Pita Bread or Pita Chips or your fingers. They all taste great with it!
