Trader Joe's Baby Zucchini and Squash With Fresh Mint image

From the back package of Trader's Joe's Mixed Baby Squash. The squash in the original recipe is sauteed, but I chose to roast the vegetables instead. DO NOT substitute dried mint in this recipe, please.

16 ounces baby squash, cut in half (those small round, fluted-edge squash-both yellow and green)
2 tablespoons olive oil
1 large garlic clove, finely minced
1 cup grape tomatoes or 1 cup cherry tomatoes
2 tablespoons of fresh mint, cut into thin strips (NOT dried mint!)
kosher salt, to taste
cracked black pepper, to taste

Steps:

  • Note: I used an ovenproof grill pan to prepare this side dish.
  • Place the baby squash in the grill pan.
  • Add all the ingredients except for the fresh mint. Toss gently to coat the vegetables with the olive oil.
  • Roast at 425 degrees for 15 minutes. Stir the vegetables at the halfway mark.
  • Remove from oven and garnish with the fresh mint.
  • Serve hot.
  • Servings are estimated.

1 (8 ounce) package trader joe's baby zucchini
5 tablespoons olive oil
1 tablespoon balsamic vinegar
8 ea. sun-dried tomatoes
1/2 teaspoon garlic, chopped
1 teaspoon shallot, chopped
1 pinch salt & pepper

Steps:

  • Heat grill on medium-high heat.
  • Split zucchini lengthwise and toss with one tablespoon of oil, salt & pepper.
  • Grill the zucchini cut side down until cooked (about four minutes).
  • Remove zucchini from grill and place in a bowl with tomatoes, garlic, shallot, balsalmic vinegar, and remaining olive oil. Toss and season with salt and pepper if needed.
