STEAMED POTATOES
My DH has to have this whenever I make his German Hamburger Patties. It is a recipe that his Mother and Oma always made. It is on the bland side but he likes to eat it with some ketchup.

Steps:
- Peel and dice potatoes.
- Chop onion.
- Heat shortening in skillet.
- Add potatoes and onion.
- Fry until almost crisp.
- Add water.
- Cover skillet.
- Stir frequently.
- Steam until most of liquid is gone.

BASIC POTATO SALAD
Combining the potatoes with the vinegar mixture while they're still hot allows them to absorb it all for a more flavorful salad.

Steps:
- Set a steamer basket in a Dutch oven (or large pot with a lid), and add enough salted water to come just below basket; bring to a boil.
- Place potatoes in basket, cover pot, and reduce heat to a gentle simmer. Steam potatoes, gently tossing occasionally, until tender, 15 to 25 minutes.
- Meanwhile, in a large bowl, combine vinegar, scallion whites, 1 teaspoon coarse salt, and 1/4 teaspoon pepper.
- Add hot potatoes to vinegar mixture; toss to combine. Cool to room temperature, tossing occasionally, about 1 hour.
- Add mayonnaise and scallion greens to cooled potatoes; mix gently to combine. Serve, or cover and refrigerate up to 2 days.

ROASTED TOURNEED POTATOES RECIPE

Steps:
- Tournee the potatoes (peel them from top to bottom carving them into a football shape with eight sides) and place in cold water. In a skillet, add the butter and heat. Drain the potatoes and pat dry. Add the potatoes to the skillet of hot butter and season with salt and pepper and saute until golden brown. This could take as long as 25 minutes. Check the seasonings and top with parsley just before serving.
