Wilted Lettuce Salad (AKA Hot Lettuce) image

Hot lettuce is amazing! This simple wilted lettuce salad and its homemade dressing makes for a delicious addition to your favorite meal.

Number Of Ingredients 5

About 4-6 cups of lettuce (tender, fresh garden lettuce is the best!)
2 tablespoon extra virgin olive oil (or bacon drippings)
1 tablespoon balsamic vinegar
1 teaspoon sugar
1/4 teaspoon salt, or more to taste

Steps:

  • Rinse and dry the salad in a salad spinner. (Or rinse in a colander and let dry on a towel on the counter.) Tear into bite-sized pieces into a large serving bowl.
  • Combine oil, vinegar, sugar, and salt in a microwave-safe glass jar or bowl.
  • Microwave for about 30 seconds, or until boiling.
  • Immediately pour hot dressing over the large bowl of salad. Toss and taste. Season with more salt and pepper, if desired.
  • Serving suggestion ideas: Add freshly grated Parmesan, feta or Gorgonzola crumbles, thinly sliced or diced apples, and toasted pecans.

Number Of Ingredients 12

1/2 cup olive oil
1/2 cup vegetable oil
1/2 cup red wine vinegar
2 tablespoons water
1 1/2 tablespoons Dijon mustard
1 tablespoon paprika
2 teaspoons salt
1 small garlic clove
1 teaspoon pepper
1 head romaine lettuce, torn into bite-size pieces
2 cups shredded red cabbage
1 cup (about 4 ounces) crumbled feta cheese

Steps:

  • Combine first 9 ingredients in blender. Blend until smooth. (Can be prepared 1 week ahead. Refrigerate.)
  • Combine romaine, cabbage and feta in large bowl. Add enough dressing to season to taste. Toss well.

2 hearts romaine lettuce
2 small plum tomatoes, diced
1 Kirby cucumber or 1/4 European seedless cucumber, diced
1 small yellow onion or 1/2 red onion, chopped
1 carrot, peeled and shredded
1/4 cup (a couple of glugs) extra-virgin olive oil
2 to 3 tablespoons (a couple of splashes) red wine vinegar
1 teaspoon sugar
Coarse salt and black pepper

Steps:

  • Place salad greens in a salad bowl and top with tomatoes, cucumbers, onion, and carrot. Place oil, vinegar and sugar in a small plastic container. Put the lid on the container and shake dressing until sugar dissolves, about 1 minute. Pour dressing over salad. Season salad with salt and pepper, to taste, and toss to combine.

1/2 cup white vinegar (i like rice wine)
1/2 cup water
1 & 1/2 Tbsp sugar
salt, pepper, hungarian paprika
1 head lettuce, torn in pieces
1 large cucumber (i like the english cucumbers unpeeled and cut in quarters)

Steps:

  • 1. Mix the vinegar, water and sugar in bowl.
  • 2. In large bowl, add lettuce, cucumbers, and sprinkle with salt, lots of ground black pepper. Pour dressing over and let sit at room temp for about 30 minutes.
  • 3. Drain liquid and serve with paprika sprinkled on top. I like fresh parsley in this, too. Enjoy!
