1/2 cup yellow mustard
2 tablespoons honey
1/3 cup apple cider vinegar
1 1/2 teaspoons chili powder
1 1/2 teaspoons smoked paprika
1 teaspoon onion powder
1/2 teaspoon fresh ground black pepper
pinch of cayenne pepper
1/2 teaspoon coconut aminos
1 tablespoon coconut oil
1 teaspoon liquid smoke

Steps:

  • In a small saucepan, combine mustard, honey, apple cider vinegar, chili powder smoked paprika, onion powder, black pepper and cayenne pepper. Cook over medium low heat for 25 minutes.
  • Add coconut aminos, coconut oil and liquid smoke. Cook for another 15 minutes.
  • Remove from stove. Chill until ready to serve.

My big brother Charly brought these to a football game for all of us to enjoy, and they were fantastic! Great to serve during the game!

4 fresh bratwursts (1 lb.)
1 (12 ounce) bottle beer
1/4 lb sauerkraut
4 large flour tortillas (10 inch)
1/4 cup honey dijon mustard
4 slices smoked swiss cheese

Steps:

  • Place bratwurst and beer in medium saucepan and bring to a boil.
  • Reduce heat to low; cover and simmer 10 minutes.
  • Remove from heat and let bratwurst cool in beer.
  • Place bratwurst in center of grill and grill 5- 6 minutes or until browned.
  • Split each in half lengthwise.
  • Place sauerkraut down the center of each tortilla.
  • Place 2 bratwurst halves on top of filling.
  • Spread 1 tbsp mustard on bratwurst and top with a slice of cheese.
  • Fold two sides of tortilla over cheese and remaining bottom and top halves of tortilla to close.
  • Place tortilla wraps flap side down on grill.
  • Grill 3- 4 minutes or until browned and heated through, turning once halfway through grilling time.

1/3 cup half-and-half cream
2 tablespoons stone-ground mustard
1/2 teaspoon dried minced onion
1/4 teaspoon pepper

4 fully cooked bratwurst links (about 12 ounces)
1 can (14 ounces) sauerkraut, rinsed and drained, warmed

Steps:

  • For sauce, mix first five ingredients. Cut each bratwurst into thirds; thread onto four metal or soaked wooden skewers., Grill brats, covered, over medium heat until golden brown and heated through, 7-10 minutes, turning occasionally. Serve with sauerkraut and sauce.

TORTILLA WRAPPED BRATWURSTS WITH BEER MUSTARD



Tortilla Wrapped Bratwursts with Beer Mustard image

A unique and trendy appetizer that's the perfect finger food for all the meat lovers at your next party!

1/2 cup onion (minced)
2 tablespoon salted butter
3/4 cup beer
1/3 cup honey mustard
5 Tortillaland Tortillas ((uncooked))
5 bratwurst
20 slices American cheese

Steps:

  • In a small saucepan, add minced onion and butter. Let cook for 6-8 minutes, stirring frequently. Onions are ready when they first begin to brown.
  • Add beer and cook until mixture is reduced by half, about 6-8 minutes.
  • Stir in honey and cook for another 1-2 minutes until desired consistency is reached. Pour beer mustard in a dipping bowl and cover until tortilla bratwursts are ready.
  • Prepare tortillas per package instructions: warm a large skillet or pan to 400 F. Add tortilla and brown for 30 seconds (or to desired doneness). Flip tortilla and brown for another 30 seconds. Cook each tortilla, then set tortillas aside to cool.
  • Before cooking brats, set up the tortillas: lay the tortilla flat and place cheese on top so that most of the edges are covered (see above photo).
  • Cook bratwurst in your preferred way, such boiled, fried, or grilled. I pan fried mine for convenience.
  • Immediately upon taking the bratwurst off the eat, dab it try (if needed) and place it on the cheese lined Tortillaland tortilla. Wrap the bratwurst tightly, then place the rolled bratwurst on a plate with the seam side down.
  • Once all bratwursts have been wrapped, warm another skillet over high heat. Place wrapped bratwursts on the skillet, seam side down, for 30 seconds. Check seam - it should be sealed flat. While the wrapped brats are on the skillet, you can brown the outside of the tortillas a little more, if desired.
  • Please wrapped & sealed bratwursts on a plate and let cool for about 10 minutes.
  • Check the cheese within the wrapped bratwursts. If it's still very runny, let the bratwursts cool for a bit longer. If the cheese seems firm, use a sharp knife to cut the bratwurst into 1-inch pieces.
  • Serve tortilla wrapped bratwursts with toothpicks and beer mustard dipping sauce.

4 cups grape seed oil
1 pound pork sausage meat
2 tablespoons fresh chopped parsley leaves
2 tablespoons chopped fresh tarragon leaves
1 egg, plus 1 beaten egg
6 hard boiled eggs
1 cup all-purpose flour
Salt and freshly ground black pepper
1/4 cup milk
2 cups panko bread crumbs
1/2 cup low-fat mayonnaise
3 tablespoons stone ground mustard
1 lemon, juiced

Steps:

  • Preheat oven to 350 degrees F. In a heavy-bottomed saucepan over medium-high heat, heat the oil to 325 degrees F (or until hot enough to sizzle when a breadcrumb is dropped in). DO NOT ALLOW OIL TO SMOKE!
  • In a stand mixer fitted with a paddle, mix together the sausage meat, fresh herbs, and 1 whole egg. Mix together until softened and pliable. Take hard-boiled eggs and wrap sausage mixture around completely covering the egg.
  • In preparation for breading, prepare the following: Season flour by adding salt and pepper in a shallow dish. Take remaining beaten egg and mix with milk in another shallow dish. Put panko breadcrumbs in a third shallow dish.
  • First roll the sausage-covered egg into the seasoned flour. Shake off excess flour and move to the beaten egg mixture and cover completely with egg. Remove any excess, then roll in breadcrumbs. Drop immediately into hot oil and cook until golden brown. Remove, place on sheet pan, and place in oven for approximately 10 to12 minutes or until sausage meat is cooked.
  • For sauce, mix mayonnaise, mustard and lemon juice together and serve with scotch eggs.

PRIME MEATS BRATWURST

White pepper
Celery seed
Mace
Minced sage
4 pounds pork butt and 1 pound pork jowl fat, cured overnight with kosher salt
1 cup ice water
Natural sausage casings, soaked in ice water

Steps:

  • First make the brat seasoning by combining equal parts of the sea salt, white pepper, celery seed, mace and 1 tablespoon of the sage. Set aside.
  • Using a meat grinder or food mixer with a sausage grinding attachment, grind the pork butt and jowl fat twice until combined and a smooth consistency.
  • Add 2 ounces of the prepared brat seasoning to the ice water and mix until it forms an emulsion then add to the pork mix.
  • Knot one end of the casing and attach the casing to the mixer sausage making attachment, fill the casings until approximately 3 inches in length, twist and repeat to the desired sausage amount and then tie a knot to secure the last sausage.
  • Poach the sausages in 165 to 170 degree water until the internal temperature reaches 155 degrees (roughly 5 minutes). Put sausages on a grill/under a broiler to finish.
  • (Alternatively, the brat can be cooked in a pre-heated 375 degree oven for twenty minutes or until they are golden brown.)

4 packages chicken flavor ramen soup

Steps:

  • Heat grapeseed oil over medium-high heat in a skillet. Cook bratwurst for a few minutes and drain on paper towels.
  • Bring 8 cups water to a boil. Stir in ramen noodles and let cook for 2 minutes. Stir in chicken flavor pack and cook for 2 more minutes. Add bratwurst and let sit covered for 1 minute.
