FLOUR TORTILLAS

Flour Tortillas image

My favorite homemade flour tortillas are perfectly soft, chewy, thick, and flavorful -- and easy to make with just 5 ingredients!

Provided by Ali

Time 35m

Number Of Ingredients 5

3 cups all-purpose flour
1 1/2 teaspoons fine sea salt
1 teaspoon baking powder
1 cup hot water
1/3 cup coconut oil (room temperature, not melted)

Steps:

  • Briefly stir together the flour, sea salt and baking powder together in a large mixing bowl until combined. Add the hot water and coconut oil and stir until a shaggy dough begins to form.
  • Turn the dough onto a floured surface, and use your hands to knead the dough for 1-2 minutes until it is fairly smooth.
  • Form the dough into a round ball and pat it down slightly so that it forms an evenly-thick disk. Cover with a clean kitchen towel and let the dough rest for 10 minutes.
  • Use a knife to cut the dough into 12 equal wedges. Use your hands to roll a wedge into a roughly-shaped ball. Then use a rolling pin or a tortilla press to roll the dough ball out into a 6-inch tortilla.
  • Heat a cast-iron skillet or heavy-bottomed sauté pan over medium-high heat. Add the tortilla and cook for 30-60 seconds, until tiny little bubbles begin to appear on the surface and/or golden spots appear on the bottom of the tortilla. Flip and cook on the second side for about 30 seconds, or until the bottom is also slightly golden. Then transfer to a clean plate or bowl, cover with a clean dishtowel, and set aside. Repeat with the remaining dough balls. (I like to roll out the next tortilla while the current one is cooking, to save time.) Also, if the skillet seems to be getting too hot and cooking the tortillas too quickly, just reduce the heat.
  • Serve warm and enjoy! I recommend keeping the tortillas covered with a dishtowel or stored in a tortilla warmer until they are served, so that they can stay warm and not dry out.

SAUSAGE-FILLED STARS

Sausage-Filled Stars image

This is a fabulous appetizer; it does take a little time to prepare, but the taste is well worth it. If you want to freeze them for later use, they turn out just as good; just pop them in the freezer after filling the cups and then bake a bit longer then in the original recipe.

Time 1h15m

Yield 12

Number Of Ingredients 7

1 (16 ounce) package square wonton wrappers
1 pound sage-flavored bulk sausage
2 cups shredded Colby cheese
1 bunch green onions, chopped fine
½ red bell pepper, chopped fine
½ green bell pepper, chopped fine
½ cup ranch salad dressing

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Line each cup a mini-muffin pan with a wonton wrapper, carefully pressing each into the shape of a cup. Take care to not tear the wrapper as they will tear easily.
  • Bake in preheated oven until golden brown, 8 to 10 minutes. Transfer 'cups' to a baking sheet; repeat until remaining wontons are all baked.
  • Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned completely, 5 to 7 minutes; drain and discard grease. Set sausage aside to cool.
  • Stir cooled sausage, Colby cheese, green onions, red bell pepper, green bell pepper, and ranch salad dressing together in a bowl; spoon into the wonton cups.
  • Bake in oven until cheese has melted and is beginning to bubble, 15 to 20 minutes.

HIDDEN VALLEY RANCH SAUSAGE STARS

Hidden Valley Ranch Sausage Stars image

These are easy to make you can do the wonton wraps the day or so ahead and have the sausage mixture made in advance then just 5 minutes before serving you fill the wraps and pop them in the oven. For a lighter exterior I prefer to use Spring Roll wraps. Use your regular pork breakfast sausage. if you wish use Italian sausage or bratwurst
