Yield about 2 dozen (1-1/2 cups dip).

4 garlic cloves, peeled
2 tablespoons olive oil, divided
1 package (9 ounces) refrigerated spinach tortellini
1 cup mayonnaise
1/4 cup grated Parmesan cheese
1/4 cup milk
1/4 cup prepared pesto
1/8 teaspoon pepper
1 pint grape tomatoes
26 frilled toothpicks

Steps:

  • Place garlic cloves on a double thickness of heavy-duty foil; drizzle with 1 tablespoon oil. Wrap foil around garlic. Bake at 425° for 20-25 minutes or until tender. Cool for 10-15 minutes. , Meanwhile, cook tortellini according to package directions; drain and rinse in cold water. Toss with remaining oil; set aside. , In a small bowl, combine the mayonnaise, cheese, milk, pesto and pepper. Mash garlic into pesto mixture; stir until combined., Alternately thread tortellini and tomatoes onto toothpicks. Serve with pesto dip. Refrigerate leftovers.

Pesto Tortellini Skewers image

An easy appetizer to make that's fun to serve at a party.

8 to 10 ounce package of fresh tortellini
8 ounces bocconcini (small fresh mozzarella balls)
2 TBS pesto sauce
24 small slices pepperoni
24 grape tomatoes

Steps:

  • Cook tortellini according to package directions. Drain when cooked and rinse with cold water.
  • In a medium size bowl, mix together the tortellini and mozzarella balls with pesto sauce. Stir gently so they don't break apart.
  • On small skewers, alternate tortellini, mozzarella balls wrapped in pepperoni and tomatoes. You will use 24 pieces of tortellini and mozzarella balls. There might be a few extra leftover.
  • Makes 24 skewers.

4 tablespoons olive oil
2 tablespoons jarred pesto
2 teaspoons red wine vinegar
2 packages spinach tortellini, cooked and cooled
2 pints cherry tomatoes
12 ounces fresh mozzarella, cubed
1/4 cup minced fresh parsley

Steps:

  • Mix together the olive oil, pesto and vinegar in a bowl.
  • On small skewers, thread 1 tortellini, 1 cherry tomato and 1 mozzarella cube per skewer. Lay the skewers on a platter and lightly drizzle the dressing over them with a spoon.
  • Serve immediately or refrigerate. Sprinkle on the minced parsley just before serving.

12 ounces ravioli (any flavor you like, fresh, frozen or dried- amount will differ. Use comparable amount) or 12 ounces tortellini (any flavor you like, fresh, frozen or dried- amount will differ. Use comparable amount)
2 garlic cloves, minced
4 cups Baby Spinach, fresh (cleaned and chopped) or 5 ounces frozen spinach (cleaned and chopped)
10 ounces basil pesto
4 ounces chicken broth (use more if you desire a thinner sauce) or 4 ounces vegetable broth (use more if you desire a thinner sauce)
2 ounces parmesan cheese, shredded (fresh is best and use as much as you like)
red pepper flakes, to taste (optional)
pine nuts (optional)

Steps:

  • Cook pasta according to package directions.
  • Spray a skillet with cooking spray and saute minced garlic until fragrant. Add chopped fresh spinach. If using frozen defrost and add to pan. Cook until wilted.
  • Add pesto and broth to pan and cook until heated through.
  • Plate pasta and top with sauce. Top with fresh grated parmesan. Add red pepper flakes if desired.

4 ounces chopped walnuts
2 family size (18-ounce) packages, cheese or mushroom and cheese filled fresh tortellini (sold on dairy aisle of market)
1 cup chicken stock or broth
10 ounces (1 package) baby spinach, reserve a few leaves for garnish
2 cloves garlic
2/3 cup (a couple of handfuls) grated Parmigiano or Romano
1/4 teaspoon ground nutmeg or freshly grated
1/4 cup extra-virgin olive oil
Salt and pepper
Edible flowers, optional plate garnish, nice for parties

Steps:

  • Toast walnut pieces in a small pan or toaster oven until lightly browned. Remove from heat and cool.
  • Place a large pot of water on to boil. When it comes to rolling boil, salt the water and cook tortellini to package directions.
  • Heat 1 cup chicken stock or broth to a boil and remove from heat.
  • Using a food processor, working in batches, grind spinach leaves with nuts, chicken stock, and garlic. Transfer ground spinach nut paste to a large bowl. Stir in the cheese, nutmeg, and olive oil, and season with salt and pepper, to taste.
  • Coat hot, cooked tortellini with sauce, tossing in the bowl you prepared sauce in. Turn pasta out on to a serving platter and garnish with a few baby spinach leaves and edible flowers.

This savory appetizer is great to eat as a bite on its own or spread onto crackers. You can add fresh rosemary sprigs and cherry tomatoes to make the wreath even more festive.

2 (8 ounce) packages refrigerated crescent rolls
1 (8 ounce) package cream cheese, softened
1 cup shredded mozzarella cheese
½ cup basil pesto, divided
12 sprigs fresh rosemary, or to taste
1 pint cherry tomatoes, or to taste

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line a large baking sheet with parchment paper. Draw a 5-inch circle on the center of the parchment paper.
  • Open both cans of dough and separate crescents into 16 triangles. Arrange the triangles on the prepared baking sheet the flat edges lined up and overlapping along the 5-inch circle and the points facing outward; it will resemble a sunburst.
  • Combine cream cheese, mozzarella cheese, and 6 tablespoons pesto in a bowl. Mix until well combined, then spread around the center of the ring of crescent dough.
  • Wrap each dough triangle up over filling and tucking it under the bottom to secure. Repeat around the entire ring. Brush remaining 2 tablespoons pesto on top.
  • Bake in the preheated oven until the dough is golden brown and cooked, 18 to 20 minutes. Remove from oven and allow to cool for 5 minutes.
  • Slice into individually portioned rings, but keep all the rings in place in the shape of a wreath. Garnish with rosemary sprigs and cherry tomatoes.
