4 tablespoons olive oil
2 tablespoons jarred pesto
2 teaspoons red wine vinegar
2 packages spinach tortellini, cooked and cooled
2 pints cherry tomatoes
12 ounces fresh mozzarella, cubed
1/4 cup minced fresh parsley

Steps:

  • Mix together the olive oil, pesto and vinegar in a bowl.
  • On small skewers, thread 1 tortellini, 1 cherry tomato and 1 mozzarella cube per skewer. Lay the skewers on a platter and lightly drizzle the dressing over them with a spoon.
  • Serve immediately or refrigerate. Sprinkle on the minced parsley just before serving.

Our Italian Tortellini Skewers make a great quick and easy appetizer for summer BBQs or Potlucks. Perfect for picking up and eating on the go, each skewer is loaded with fresh veggies, cheese, and pasta drizzled with Italian Dressing.

1/2 (9 ounce) package tortellini
40 slices pepperoni
1/2 cucumber (sliced)
20 black olives
4 ounces fresh mozzarella (cubed or 20 mini fresh mozzarella balls)
20 grape tomatoes
20 pepperoncinis
1/4 cup Italian dressing
10 large skewers

Steps:

  • Cook tortellini according to package directions. Drain, set aside, and let cool.
  • Thread each skewer with pepperoni (I used two pepperoni each time), cucumber, olive, tortellini, mozzarella, tomato, and pepperoncini. Repeat until all the skewers are full.
  • Drizzle skewers with Italian dressing and keep refrigerated until ready to serve.

I sampled a similar appetizer at a party that inspired this simple idea. It would be easy to add additional foods to the skewers, based on your preferences. Use your favorite store bought or homemade pesto sauce!

30 cheese tortellini, prepared according to package directions
1/4 cup pesto sauce
5 sun-dried tomatoes, oil-packed
10 medium-length wooden skewers

Steps:

  • Combine tortellini with pesto sauce and mix well.
  • Cut each tomato into 4 strips.
  • Place one tortellini onto a skewer, followed by a piece of sundried tomato. (I found it most effective to hook each piece of sundried tomato to the skewer twice).
  • Add another tortellini and tomato piece, ending with a third tortellini.
  • Chill until ready to serve.

36 fresh cheese tortellini
1 tablespoon olive oil
1 tablespoon minced garlic
24 large cooked shrimp
12 skewers
12 cherry tomatoes
1 (16 ounce) container sour cream
1 (1 ounce) package dry ranch dressing mix (such as Hidden Valley Ranch®)

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook tortellini in the boiling water until tender yet firm to the bite, 2 to 3 minutes; drain.
  • Heat olive oil in a skillet over medium heat; cook and stir garlic until fragrant and tender, 1 to 2 minutes. Add shrimp and cook until heated through, 2 to 3 minutes. Mix tortellini into shrimp mixture, remove skillet from heat, and cool until easily handled.
  • Thread tortellini, shrimp, tortellini, shrimp, and tortellini onto a skewer, ending with a tomato. Repeat with remaining ingredients.
  • Mix sour cream and ranch dressing mix together in a bowl; serve with skewers.

60 medium shrimp, peeled,deveined and cooked
90 tri-color cheese tortellini
30 cherry tomatoes
1 clove garlic, minced finely
2 tablespoons olive oil
30 6 inch wooden skewers
4 cloves garlic, unpeeled
1 cup mayonnaise
1/4 cup parmesan cheese
1/4 cup milk
1/2 teaspoon black pepper

Steps:

  • Cook tortellini according to package instructions.
  • Heat the olive oil in a nonstick frying pan, saute the minced garlic for several minutes until tender.
  • Add the shrimp and heat through.
  • Drain the tortellini and add to the shrimp.
  • Mix throughly and remove from heat.
  • When cool enough to handle, thread the skewers with a tortellini, a shrimp, a tortellini, a shrimp, a tortellini, a cherry tomato.
  • Arrange on serving platter and serve with dip.
  • Dip: Heat skillet over medium heat, add the unpeeled garlic and cook (turning) until skin is browned on all sides and garlic is softened, about 7 minutes.
  • Cool the garlic then peel and mash.
  • Mix the mashed garlic, mayonnaise, parmesan, pesto, milk and pepper throughly and put in serving dish.

1/4 cup olive oil (or little less)
1 tablespoon hot pepper flakes
1/2 cup fresh parmesan cheese, grated
salt
fresh ground pepper
medium-length wooden skewer

Steps:

  • Cook tortellini according to package directions, keep a little firm, drain well.
  • Mix olive oil, pepper flakes and parmesan cheese.
  • While pasta is medium hot, toss in dressing, season with salt and pepper (if you do this while to hot the parmesan melts to much).
  • On pre-soaked wooden skewers add 3-4 tortellini's per skewer (depends on size of skewers).
  • I use medium length wooden skewers.

1 (9-oz.) package refrigerated cheese tortellini
1 (8-oz.) package frozen sugar snap peas
68 (4-inch) wooden skewers
1 pt. grape tomatoes, cut in half
1/2 cup white wine vinegar
2 tablespoons chopped fresh dill
3 tablespoons Dijon mustard
2 pressed garlic cloves
2 teaspoons sugar
1 1/4 cups olive oil Kosher
salt and pepper to taste

Steps:

  • 1. Cook tortellini according to package directions. Rinse under cold running water. 2. Place sugar snap peas in a small bowl; cover with plastic wrap. Microwave at HIGH 2 minutes. Let stand, covered, 2 minutes. Rinse under cold running water. 3. Thread each skewer with 1 sugar snap pea, 1 tortellini, and 1 tomato half. Place skewers in a 13- x 9-inch baking dish. 1 tsp corn starch
1 tsp dried basil
1 tsp oregano
1/2 tsp sugar
1/2 tsp dry mustard
1/4 tsp onion powder
1/4 tsp garlic powder

2/3 cup water
1/2 cup cider vinegar
48 spinach tortellini and 24 cheese tortellini (1 20 oz. package refrigerator mixed tortellini)
black olives - 2 cans
grape tomatoes - 2 packages
button mushrooms
artichoke hearts - 2 jars

Steps:

  • Mix all dry ingredients in a saucepan. Add liquids. Heat to a boil and cook for 30 seconds. Remove from the heat and let cool. Cook torellini to directions on package. Place all ingredients in a ziploc bag. Add the marinade. Let sit 4 hours or overnight. Load short bamboo skewers with ingredients.

3 tablespoons basil, fresh, minced
1/2 cup extra virgin olive oil
1/2 cup parmesan cheese -- grated
1/3 cup lemon juice -- fresh
3 cloves garlic -- minced or pressed
1/4 cup sundried tomatoes - hydrated and finely minced
1/8 teaspoon - cayenne pepper
salt and pepper -- to taste

Steps:

  • Prepare the tortellini as directed. Add a little fresh water to the cooked tortellini to keep them from sticking together. Thread 24 4-inch skewers with 3 tortellini each. Arrange the skewers on a platter and sprinkle with 2 tablespoons of the parsley and 1 tablespoon of the basil. In a small mixing bowl, mix together the remaining parsley, basil, oil, Parmesan, lemon juice, garlic, sundried tomatoes, cayenne pepper, salt and pepper. If desired, puree the sauce in a blender for 1 minute. With a pastry brush, brush the sauce on the tortellini. Reserve the remaining sauce to dip the skewers into when serving.
