1 package (19 ounces) frozen cheese tortellini
1 pound sliced fresh mushrooms
1 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon pepper
1/2 cup butter, divided
1 can (12 ounces) evaporated milk
1/2 pound brick or Muenster cheese, cubed
3 packages (10 ounces each) frozen chopped spinach, thawed and squeezed dry
2 cups shredded part-skim mozzarella cheese

Steps:

  • Preheat oven to 350°. Cook tortellini according to package directions. , Meanwhile, in a large skillet, saute mushrooms, garlic powder, onion powder and pepper in 1/4 cup butter until mushrooms are tender. Remove and keep warm. , In same skillet, combine milk and remaining butter. Bring to a gentle boil; stir in brick cheese until smooth. Drain tortellini; place in a large bowl. Stir in mushroom mixture and spinach. Add cheese sauce and toss to coat. , Transfer to a greased 13x9-in. baking dish; sprinkle with mozzarella cheese. Cover and bake 15 minutes. Uncover; bake 5-10 minutes longer or until heated through and cheese is melted.

1 pound skinless, boneless chicken breast halves
2 cloves garlic, peeled and crushed
2 cups chicken broth
2 (12 ounce) packages cheese tortellini
cooking spray
½ cup butter
6 green onions, sliced
2 cups grated Monterey Jack cheese, divided
1 cup sour cream
1 (10.75 ounce) can condensed cream of mushroom soup
1 (10.75 ounce) can condensed cream of chicken soup
2 (4 ounce) cans button mushrooms, drained and sliced

Steps:

  • Place chicken and garlic in a soup pot. Add chicken broth and bring to boil; reduce heat to low and simmer, covered, until chicken is no longer pink in the center and juices run clear, about 30 minutes. Remove from pot; let cool 10 minutes. Dice into bite-sized pieces. Set aside.
  • Bring a large pot of lightly salted water to a boil. Cook tortellini in the boiling water, stirring occasionally, until tender yet firm to the bite, 10 to 12 minutes. Drain and set aside.
  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch oven-proof glass container (such as Pyrex®) with cooking spray.
  • Melt butter in a saucepan over medium heat. Add green onions, 1 cup Monterey Jack cheese, sour cream, cream of mushroom soup, and cream of chicken soup; cook until heated through, 5 to 7 minutes.

1/2 teaspoon dried parsley

1 (10 ounce) bag frozen mixed vegetables (I used green beans, carrots, peas, and corn)
1/2 cup shredded Parmesan cheese

Steps:

  • Preheat oven to 350 degrees.
  • Start by making the Alfredo sauce by placing milk, low fat cream cheese, flour and salt in a blender and blend it until it is completely smooth.
  • Meanwhile, in a skillet over medium heat, melt one tablespoon of butter and garlic for a minute. Whisk in the blended milk mixture, stirring constantly for 3-5 minutes.
  • Continue stirring the sauce over heat until it reaches your desired thickness, then mix in Parmesan cheese.
  • Once your sauce is ready (or if you don't make homemade Alfredo sauce, feel free to use jarred sauce), it's time to assemble the casserole.
  • Spray a 9 x 13 inch baking dish with non-stick cooking spray.
  • In the baking dish, mix together Alfredo sauce, frozen tortellini (don't cook it first), chicken broth, seasonings, chicken and frozen vegetables.

For this baked tortellini casserole, I used one large skillet and one casserole pan. I made a quick basic meat sauce with onions, garlic, ground beef and canned tomatoes. But instead of simmering and reducing the sauce, I combined the cheese and fresh uncooked tortellini, and let the entire mixture bake in the oven. Just be sure to keep it tightly covered with foil so it stays moist. The foil keeps the moisture in and cooks the tortellini as it bakes.

2 (10 3/4 ounce) cans cream of mushroom soup
1 (1 1/4 ounce) envelope onion soup mix
1 teaspoon garlic powder
1 teaspoon italian seasoning
1/3 cup breadcrumbs
1/8 cup melted margarine

Steps:

  • Preheat oven to 350°F.
  • Cook pasta according to package directions.
  • In large skillet add ground beef.

2 (6 ounce) cans canned tuna, drained (solid white albacore is best)
1 (9 ounce) bag barilla tortellini (there are several varieties. For this recipe, I used the portabello mushroom, but I've tried them al)
1 (10 3/4 ounce) can cream of mushroom soup (use 2 cans if using solid white albacore tuna)
1 cup frozen green pea
1 1/2 cups shredded cheddar cheese, separated
1/2 cup crushed potato chips, any variety (you can substitute bread crumbs, chow mein noodles or cracker crumbs)
1 (4 ounce) can mushrooms, drained

Steps:

  • Cook the tortellini in boiling water for about 11 minutes, or according to package directions.
  • Turn out into colander and let drain.
  • While the tortellini is draining, combine the tuna, soup, mushrooms and 1 cup of the cheese in the tortellini pot.
  • Add the drained tortellini and the frozen peas; mix lightly to coat.
  • Spoon mixture into an 8X8 square baking dish. Sprinkle with remaining cheese.

3 garlic cloves, minced
1 small onion, minced
2 tablespoons flour
1 cup chicken broth
1 cup cream
1/8 teaspoon nutmeg
1 (10 ounce) box frozen spinach, defrosted and squeezed of all liquid
1 (14 ounce) can artichoke hearts, drained and chopped
1/2 cup parmesan cheese
salt and pepper
1 lb cheese tortellini
1/2 cup breadcrumbs

Steps:

  • Preheat oven to 350.
  • Cook tortellini in boiling salted water for 3 minutes.
  • In large oven proof skillet, saute garlic and onion in oil until soft, 5 minutes.
  • Sprinkle with flour and cook 1 minute. Add broth, cream, and nutmeg, simmer 5 minutes.
  • Add spinach, artichokes, parmesan, salt and pepper.
  • Stir in par-cooked tortellini.
  • Top with bread crumbs, and bake for 30 minutes.

1 bag fresh ravioli (or tortellini) stuffed with four cheeses (or flavor of your choice)
1 large can marinara sauce (or make your own, about 2 to 3 cups)
Mozzarella cheese (shredded) or cheese of your choice
1 bag fresh spinach (baby spinach isn't necessary) about 2 pounds.
Olive oil
2 large garlic cloves

Steps:

  • Cook the pasta, according to package directions, in heavily salted boiling water (this is your only chance to season the pasta properly). For the spinach(optional): Heat just enough olive oil to coat the bottom of a skillet, about 1 Tablespoon. Add two cloves of peeled fresh garlic and cook at low heat-- for 5-10 minutes. The idea is to infuse the flavor of the garlic into the oil. Add one bag (about 2 pounds) of fresh spinach into the pan of oil and turn the heat to medium. The spinach will look like a LOT, but it will wilt down and shrink as it cooks-- about 5-10 minutes. Remove the garlic cloves and set aside. In an oven-proof pan, pour a layer of marinara sauce to coat the bottom. Add the drained pasta, and the cooked spinach. Add a layer of cheese. Repeat, if there is enough to do so. Bake at 350°F for about 20 minutes, or until the sauce is bubbly and the cheese is melted. Garnish with freshly grated Parmesan cheese.

You can use either fresh or frozen tortellini. The cooking time remains the same for either one. This is one terrific recipe I found in a milk calender here a few years back.

1/4 cup butter
2 cloves garlic, minced
1 small onion, finely chopped
1/4 cup flour
2 cups milk
1 cup pureed canned tomatoes or 1 cup tomato sauce
1 tablespoon tomato paste
1/2 teaspoon dried thyme
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1 teaspoon salt
1/2 teaspoon pepper
1 lb tortellini (meat or cheese)
1 bunch broccoli, trimmed and cut into chunks
2 cups grated cheddar cheese
1/2 cup grated parmesan cheese

Steps:

  • Melt butter in a large saucepan.
  • Add garlic and onion.
  • Cook gently 3- 4 minutes until fragrant and tender.
  • Sprinkle with flour.
  • Cook 3- 4 minutes longer but do not brown.
  • Whisk in milk.
  • Bring to a boil.
  • Add tomatoes, paste, herbs, salt and pepper.
  • Cook 5 minutes.
  • Meanwhile, cook tortellini in boiling, salted water for 3 min.
  • Add broccoli and continue to cook 5 minutes longer.
  • Drain well.
  • Combine drained tortellini mixture with sauce.
  • Add cheese.
  • Transfer to a 3 qt baking dish.
  • Sprinkle with grated Parmesan.
  • Bake in a preheated 350 oven for 30 minutes or until hot and lightly browned.

TUNA TORTELLINI CASSEROLE

I stole this idea from one of those dinner assembly place menus. The addition of tortellini as the "noodles" in tuna noodle casserole almost makes it decadent. It is still just a basic tuna noodle casserole recipe - not really meant to be real spicy or or exciting :-) Just comfort food . . .

2 (6 ounce) cans tuna, flaked
1 (10 1/2 ounce) can cream of mushroom soup, 98% fat free
1 cup 2% cheddar cheese or 1 cup swiss cheese, shredded
2 (4 cup) bags frozen cheese tortellini
1 cup skim milk
1 stalk celery, chopped
1 onion, chopped

Steps:

  • Fill a large pot with 4 quarts water and put on high heat to boil.
  • Chop onion and celery and saute in a little oil or spray. (Note: Feel free to add mushrooms or peppers, I can barely get away with celery with my family's tastes).
  • Preheat oven to 350 degrees.
  • Add tortellini to water and cook per package directions - you can undercook a little.
  • In a 2 quart casserole, mix tuna, soup, and milk.
  • Add celery and onion mixture to casserole.
  • Drain tortellini and add to casserole. Add cheese and fold in with tuna mixture.
  • Sprinkle with crushed potato chips, bread crumbs, etc., if you desire.
  • Bake for 25-30 minutes.

1 jar (15 oz) Alfredo pasta sauce
1/3 cup water
1 package (19 oz) frozen cheese-filled tortellini
1/2 cup plus 2 tablespoons chopped cooked bacon
1 bag (5 oz) baby spinach, coarsely chopped
2 cups shredded mozzarella cheese (8 oz)

Steps:

  • Heat oven to 350°F. Spray bottom and sides of 13x9-inch (3-quart) glass baking dish generously with cooking spray.
  • In medium bowl, mix Alfredo sauce and water. Arrange half of the frozen tortellini in single layer in baking dish; top with 1/4 cup of the bacon, half of the spinach, half of the Alfredo sauce mixture and 1 cup of the mozzarella cheese. Repeat layers. Top with remaining 2 tablespoons bacon.
  • Spray one side foil with cooking spray and cover baking dish, sprayed side down. Bake 40 minutes. Remove foil; bake 10 to 15 minutes longer or until bubbly around edges and hot in center.
