OATMEAL MACAROONS COOKIES

This is an old version of a cookie that has become very popular with young people. I've even seen some with edible gold on them. This recipe does not include the gold..ha, ha.

Number Of Ingredients 10

1 c shortening
1/2 tsp salt
1 c sugar
1 c light brown sugar
1 Tbsp vanilla
2 eggs, beaten
1 2/3 c all purpose flour
1 tsp baking soda
3 c quick cooking oats
1 c pecans, in pieces

Steps:

  • 1. Mix the shortening, sugars, vanilla, and eggs thoroughly.
  • 2. Sift together the flour, soda, and salt, then add to first mixture.
  • 3. Fold in oats and nuts. They should be thoroughly moistened.*The mixture will be very stiff.
  • 4. Form balls using a teaspoon and put on a greased cookie sheet.
  • 5. Bake 10-15 minutes at 350.
  • 6. *You can substitute coconut for the pecans if you wish. *You can also brush the tops with edible gold if you're having a party and want to impress your guests. LOL!

¼ cup unsweetened cocoa powder
2 cups white sugar
½ cup butter
½ cup milk

Steps:

  • Mix oats, coconut, and cocoa powder together in a bowl.
  • Bring sugar, butter, and milk to a boil in saucepan, stirring occasionally; remove immediately from heat and stir into oat mixture.
  • Drop 15 spoonfuls of batter onto a sheet of waxed paper. Cool to room temperature before serving.

2 cups packed brown sugar
1 cup vegetable oil
2 large eggs, beaten
1 teaspoon salt
1 teaspoon almond extract

Steps:

  • Combine oatmeal, brown sugar, and oil.
  • Cover and let sit out overnight.
  • In the morning, stir in eggs, salt and almond extract.
  • Drop by teaspoonful onto a greased baking sheet.
  • Bake at 325 degrees for 15 minutes.

1 teaspoon baking soda

Steps:

  • Cream together the sugars and shortening.
  • Add eggs.
  • Sift and add the flour, soda and salt.
  • Stir in coconut, nuts and oatmeal.
  • Bake at 350 degrees. The length of time depends on how large the cookie is. Check them after 8 minutes or so.
