3 cups vegetable stock
1 cup dry white wine, such as Sauvignon Blanc
2 sprigs fresh thyme
2 cloves garlic, smashed
1 shallot, sliced
1 lemon, zested
Two 6-ounce pieces skin-on salmon
Kosher salt and freshly ground black pepper
Arugula salad, for serving
Lemon slices, for serving
Olive oil, for drizzling

Steps:

  • Combine the stock, wine, thyme, garlic, shallot and lemon zest in a wide, deep pan and bring to a simmer. Add the salmon, a pinch of salt and a grind of pepper. Partially cover and simmer until the salmon is fully cooked, 8 to 10 minutes.
  • Serve with an arugula salad, lemon slices and olive oil drizzled on top.

2 cups dry white wine
2 cups water
2 bay leaves
2 sprigs flat-leaf parsley
2 lemons, unpeeled, sliced
1 (2 pound) salmon fillet with skin
1 scallion, top only, thinly sliced
1 cup Lemon Mint Tzatziki, recipe follows
1 cup non-fat yogurt
1 English cucumber
1 teaspoon olive oil
2 teaspoons lemon juice
1/2 teaspoon minced garlic
1/4 teaspoon lemon zest
1 tablespoon finely chopped mint leaves
Salt and pepper

Steps:

  • Put the wine, water, bay leaves, parsley and of the sliced lemons into a large deep skillet and bring to a simmer.
  • Add the salmon, skin side down. Add more water, if necessary, to cover the salmon. Cover the skillet and simmer over a low heat until the fish is just cooked through, about 8 minutes.
  • Transfer the fish to a plate, cover it and chill it completely in the refrigerator, about 3 hours.
  • To serve, peel the skin from the fillet and scrape away any brown flesh. Put the fish on a serving plate, garnish with scallion and the remaining lemon slices. Serve with Lemon Mint Tzatziki.
  • Line a strainer with paper towel and put the strainer over a bowl. Put the yogurt in the strainer and place it in the refrigerator to drain and thicken for 3 hours.
  • Seed and coarsely grate the cucumber. Drain it well. In a medium bowl, stir together the thickened yogurt and olive oil. Stir in the cucumber, lemon juice, garlic, zest and mint. Season with salt and pepper, to taste, and serve.

Several sprigs of fresh dill or sprinkle of dried dill
A sprig of fresh parsley
1 shallot, peeled and thinly sliced or a few thin slices of onion

1 to 1½ pounds salmon fillets, pin bones removed
Freshly ground black pepper
A few slices of fresh lemon to serve

Steps:

  • Prepare the poaching liquid: Put the wine, water, dill, parsley and shallots or onions in a sauté pan, and bring to a simmer on medium heat.
  • Add the salmon: Sprinkle the salmon fillets with a little salt. Place salmon fillets, skin-side down on the pan, and cover.
  • Cook and serve the salmon: Cook 5 to 10 minutes, depending on the thickness of the fillet, or to desired done-ness. Do not overcook. Serve sprinkled with freshly ground black pepper and a slice or two of lemon on the side.

1 teaspoon olive oil
Four 4- to 6-ounce fillets salmon
Sea salt and white pepper
2 lemons, 1 halved and 1 cut into wedges
1 bottle dry white wine, such as pinot grigio
Fresh parsley, for garnish

Steps:

  • Drizzle the olive oil over the salmon fillets and season with some sea salt and white pepper. Set aside.
  • Fill a high-sided large skillet one-third of the way up with water. Add the wine and lemon halves. Bring to a low simmer, add the salmon and let cook until firm to the touch, 5 to 7 minutes for medium. For well-done salmon, cook for 10 minutes.
  • Serve garnished with the lemon wedges and parsley.

4 (6 ounce) salmon fillets
2 cups dry white wine
1 cup orange juice
1 cup water
1/4 cup green onion, chopped (optional)
1 teaspoon whole black peppercorn
1 teaspoon kosher salt
1 lemon, juice of
1 teaspoon dried tarragon (or 2 tsp. fresh)
1 teaspoon lemon zest (or orange zest or both)

Steps:

  • Place all ingredients(except salmon) in a 10-12 inch skillet.
  • Bring to a boil, then turn down to simmer and cook for 10-15 minutes.
  • Add salmon. Lower heat to medium low heat and gently simmer until fish is medium well done-about 10 minutes.
  • Remove salmon.
  • Condense liquid down, adding a little more orange juice if you want a little more orangy flavor.
  • Place salmon on serving dishes.
  • When sauce is starting to thicken up nicely, pour over fish.

1 small whole salmon, approximately 2 1/2 pounds
4 spring onions (scallions)
6 sprigs fresh tarragon
12 sprigs fresh parsley
1 lemon
2 teaspoons unsalted butter, approximately
1/2 cup dry white wine (more if needed)

Steps:

  • Preheat oven to 350 degrees.
  • Split salmon lengthwise, and lay one half on a sheet of heavy-duty aluminum foil. Split the spring onions lengthwise. Place the onions, tarragon and parsley on the salmon. Top with other half of the fish.
  • Slice lemon thinly and lay slices over top of salmon. Dot with butter. Sprinkle with white wine. Wrap foil loosely around the salmon, sealing the package tightly by folding over several times; this prevents steam from escaping.
  • Place salmon packet on a cookie sheet and bake 30 minutes. Remove from oven and set aside to cool, but do not open packet until ready to serve or to use.

It's an elegant dish for a large group - the recipe ultimately serves 12 - but it comes together quickly. Serve it, as a commenter suggests, with a homemade tartar sauce.

2 3-pound Atlantic salmon fillets, from the center cut
1 tablespoon salt
10 black peppercorns
1 bay leaf
1 small onion, quartered
1/4 cup sliced carrot
1/4 cup sliced celery
4 sprigs parsley, plus 1/4 cup minced
8 tablespoons unsalted butter, at room temperature
2 tablespoons lemon juice
1/4 teaspoon freshly ground white pepper

Steps:

  • Cut each fillet into six serving pieces. Set aside.
  • Fill a large fish poacher or roasting pan with enough water to cover the fish when it is added later, and bring the water to a boil. Add the salt, peppercorns, bay leaf, onion, carrot, celery and the sprigs of parsley, and simmer for five minutes.
  • Place the butter, lemon juice, white pepper and minced parsley in a mixing bowl. Beat until all the ingredients are well incorporated. Place the mixture on wax paper and roll into the shape of a log. Chill until ready to use.
  • Add the fish pieces to the court bouillon, cover with a piece of cheesecloth and simmer for 10 minutes. Remove the cheese cloth and drain the fish on paper towels. Serve with the maitre d'hotel butter.

1 celery stalk, cut into 1-inch pieces
1 small onion, peeled and halved
1/2 lemon, thinly sliced
Coarse salt
4 skinless salmon fillets (6 ounces each and about 1 inch thick)

Steps:

  • In a large, deep, straight-sided skillet or heavy pot, combine carrots, celery, onion, lemon, 1 1/2 teaspoons salt, and 6 cups water. Bring to a boil; reduce to a simmer, cover, and cook 8 minutes.
  • Season salmon with salt and gently lower into simmering liquid (liquid should just cover fish). Reduce to a very gentle simmer. Cover and cook until salmon is opaque throughout, about 5 minutes (longer for thicker fillets). Using a wide slotted spatula, remove salmon from liquid.
