TONY ROMA'S INSPIRED COLESLAW

Courtesy of Tony Roma's World Famous Ribs restaurant, this cole slaw is tangy and slightly sweet, with the wonderful flavor of celery seed.

Number Of Ingredients 11

3/4 tsp minced parsley
1 1/2 tsp fresh lemon juice
1/4 teaspoon minced onion
1/8 teaspoon celery seed
1/8 teaspoon white pepper
1/2 cups mayonnaise
3/4 tsp white vinegar
1/4 teaspoon salt
2 tbsp sugar
1/2 head cabbage (, cored and shredded (about 10 oz))
1/2 large carrot (, shredded)

Steps:

  • Combine all dressing ingredients in a large mixing bowl.
  • Blend with a wire whisk.
  • Refrigerate for as long as you can, but remember the slaw will have to be dressed for at least a couple of hours before serving. I usually make the dressing the night before.
  • Combine the dressing with the cabbage and carrots.
  • Mix thoroughly.
  • Refrigerate at least 2 hours before serving.
  • Mix together again just before serving.

I love there coleslaw. The portion it makes is really big so I cut it down to 3rds. I also used spelnda instead of sugar and did it to taste instead of adding it all at one time.

1 5/8 lbs carrots, shredded
2 bunches green onions (including green tops)
4 1/3 cups white vinegar
1 1/3 tablespoons garlic salt
2 teaspoons cumin
2/3 tablespoon dry mustard
1 1/3 lbs sugar
2 teaspoons black pepper
2/3 teaspoon oregano
1 3/4 tablespoons celery seeds

Steps:

  • Combine all ingredients
  • store in tight-fitting lidded container.

Serve a tangy side Tony Roma's-style with this coleslaw recipe. The veggies are tossed in lemon juice and mayo dressing with celery seed and white pepper.

1 small head green cabbage
1/2 small head red cabbage
3/4 cup mayonnaise
1/4 cup white wine vinegar, such as Chardonnay
1 to 2 tablespoons granulated sugar
2 teaspoons celery seeds
Kosher salt and freshly ground black pepper
1 cup matchstick carrots
1/4 cup fresh parsley leaves

Steps:

  • Remove and discard tough outer leaves from the green cabbage. Cut the head in half, cutting through the core. Use the tip of the knife to remove the core from both halves, then cut each half into quarters. Slice each quarter thinly into short strips. Repeat with the red cabbage and place both in a large bowl.
  • Whisk together the mayonnaise, vinegar, sugar and celery seeds in a small bowl, then season with salt and pepper. Add more sugar as desired. Toss the cabbage with half the dressing, then lay in a shallow dish (a 9-by-13-inch baking dish works well). Cover and refrigerate for 1 to 2 hours.
  • Once cabbage has marinated in the dressing, taste and add reserved dressing as desired. Add the carrots and parsley and toss to combine.

1/8 cup oregano
1/3 cup celery seed

Steps:

  • Combine all ingredients and store with tight-fitting lid. This recipe yields 4 servings.
