My brother loves Rice Krispies squares, and my mom loves sugar cookies. I came up with a cute treat they'd both like.

3 tablespoons butter
4 cups miniature marshmallows
7-1/2 cups crisp rice cereal
1 tube (16-1/2 ounces) refrigerated sugar cookie dough
2/3 cup all-purpose flour
1 teaspoon water
4 drops green food coloring
1-1/2 cups sweetened shredded coconut
Black paste food coloring
Vanilla frosting
Brown decorating icing
1 cup semisweet chocolate chips, melted
Candy pumpkins

Steps:

  • In a large saucepan over low heat, melt butter. Stir in marshmallows until melted. Remove from heat. Stir in cereal until well coated. With a buttered spatula, press into a greased 13x9-in. pan. Cool. , Beat cookie dough and flour until combined. On a lightly floured surface, roll out dough to 1/4-in. thickness. Trace tombstone pattern onto waxed paper; cut out 16 tombstones from dough. Place 2 in. apart on ungreased baking sheets. , Along bottom edge of each cookie, insert two toothpicks halfway into dough. Bake at 350° until edges are golden brown, 8-10 minutes. Remove to wire racks to cool., In a large resealable plastic bag, combine water and green food coloring. Add coconut; seal bag and shake to coat. Toast coconut in a shallow pan in a 350° oven for 5-10 minutes or cook in a skillet over low heat until golden brown, stirring occasionally. Set aside. Using black paste food coloring, tint frosting gray. Frost sugar cookies; decorate with brown decorating icing. , Cut cereal bars into 3x2-in. rectangles; spread with melted chocolate chips. Using toothpicks, insert cookies into cereal bars. Decorate with coconut and candies as desired.

A BLOODY GOOD TSUNAMI CAKE



A Bloody Good Tsunami Cake image

The tsunami--or pull-it-up--cake really works perfectly for a scary Halloween cake. For this one, you simply plunge a plastic toy hatchet, meat cleaver or dagger into the top of a red velvet cake (you can make it from scratch with my recipe below, but there's no shame in using a store-bought cake!), then wrap the cake in clear acetate, pour a creamy red topping and decorations onto the top inside the acetate shell, then pull up the acetate so that it allows the "bloody" topping to cascade down over the sides of the cake. It's creepy in the best possible way!

2 large beets (about 7 ounces total)
1/4 teaspoon kosher salt
1 tablespoon olive oil
Softened unsalted butter, for the cake pans
2 1/2 cups all-purpose flour, plus more for the cake pans
1 1/2 cups granulated sugar
2 tablespoons cocoa powder
1 teaspoon baking soda
1 teaspoon kosher salt
3/4 cup buttermilk
1/2 cup vegetable oil
2 tablespoons red food coloring
1 teaspoon white vinegar
1 teaspoon vanilla extract
2 large eggs, at room temperature
1 pound cream cheese, at room temperature
1 stick (8 tablespoons) unsalted butter, at room temperature
2 cups white chocolate chips, melted (about 11 ounces)
1 teaspoon vanilla extract
2 cups powdered sugar
1 1/2 cups milk
1 1/3 cups heavy cream
1/4 cup cornstarch
Pinch kosher salt
One 14-ounce can sweetened condensed milk
Red food coloring, as needed
Red sprinkles, for topping
Red sparkling sugar, for topping

Steps:

  • For the roasted beet purée: Preheat the oven to 425 degrees F.
  • Place the beets in a piece of foil and season with the salt. Top with the olive oil and a splash of water, close up the foil and roast until a knife or skewer comes out with ease when inserted into the beets, 25 to 30 minutes. Set aside to cool just enough to handle.
  • Peel the beets, transfer to a blender with any remaining juices and purée, adding up to 1/4 cup water if needed to get it to puree.
  • For the red velvet cake: Reduce the oven temperature to 350 degrees F. Butter and flour two 8-inch round cake pans.
  • In the bowl of a stand mixer, combine the flour, granulated sugar, cocoa, baking soda and salt. Mix on low for 30 seconds with the paddle attachment.
  • In a separate bowl, whisk to combine 1/2 cup of the roasted beet purée, the buttermilk, oil, food coloring, vinegar, vanilla and eggs. In 2 parts, pour into the mixer. Mix on medium speed until combined. Do not overmix. Pour the batter into the prepared pans.
  • Bake on the center rack until a toothpick inserted in the center comes out clean, about 35 minutes. Let cool for 10 minutes, then turn out on a wire rack. Let the cakes cool completely before frosting.
  • For the cream cheese frosting: Meanwhile, beat the cream cheese and butter in a large bowl with an electric mixer until combined. Add the chocolate and vanilla extract, then continue to mix until incorporated. Next, slowly add the powdered sugar, beating until the frosting is light and fluffy. Transfer to a piping bag or ziptop bag and snip off the end.
  • Pipe a tablespoon of frosting onto a rotating cake stand and place an 8-inch cake round on top, pressing gently to adhere. Place the first cake on the cake round and trim the dome to make flat if needed. Cut the cake in half horizontally to make 2 layers. Frost the top of the first layer, then place the second half on top and frost. Repeat with the remaining cake, cutting in half and stacking between layers of frosting. There should be 4 layers. Finally, frost the sides, finishing with the top.
  • For the bloody good tsunami topping: Whisk the milk, heavy cream, cornstarch and salt in a medium saucepan until smooth. Heat over medium heat, whisking constantly, until the mixture just begins to thicken, about 5 minutes. Remove from the heat and immediately whisk in the condensed milk and red food coloring (as many drops to get the color you prefer). Place a layer of plastic wrap over the top of the mixture to prevent a skin from forming, then allow to cool completely before using.
  • To assemble the bloody good tsunami cake: Cut a sheet of clear acetate that can wrap completely around the base of the cake, adding an extra 2 inches so that it can be secured with tape on the side and also making sure that the acetate is taller than the top of the cake by at least 5 inches. Wrap the acetate around the cake and tape it to form a long tube--it should not be so tight as to squeeze against the outer layer of the cake, but still have no gaps at the top of the cake so that the topping will not seep over the edges. Gently spoon the bloody good tsunami topping over the top of the cake, then spoon an even layer of red sprinkles and sparkling sugar, about 1/4 inch thick, over the topping. Plunge a plastic toy hatchet, meat cleaver or dagger into the center of the top of the cake--it should be very decorative and realistic-looking for the best effect!
  • To reveal the tsunami, grasp the top of the acetate and gently pull up to loosen from the base of the cake, then continue pulling up over the top of the cake in one single motion to allow the topping to cascade over the side of the cake.

CREAMY MASCARPONE HERB GRITS

1 1/2 cups whole milk
2 1/2 cups vegetable stock, plus more if necessary
2 cloves garlic, finely chopped
1 1/2 cups stone ground grits
Salt
3 tablespoons butter
1/2 cup mascarpone cheese
1 teaspoon chopped fresh parsley
1/2 teaspoon chopped fresh rosemary

Steps:

  • In a 5-quart pot, combine the milk, stock, and garlic. Generously season the mixture with salt. Pour the grits into the cold liquid and bring the mixture to a boil, whisking constantly. Immediately reduce the heat to a simmer and continue to stir until the grits are soft and creamy, at least 20 minutes. If necessary, add more stock to continue cooking the grits. Stir in the butter, mascarpone, and herbs.

Here's what you need: brownie mix, milk chocolate chips, chocolate sprinkle, graham cracker

2 boxes brownie mix, prepared
3 cups milk chocolate chips
chocolate sprinkle, for decorating
graham cracker, for decorating

Steps:

  • Prepare 2 boxes of brownie mix according to instructions on box. Pour into a greased 9x9-inch (23x23-cm) square pan. Bake according to instructions on box.
  • Cut each tray of brownies into 25 small squares. Form each brownie square into a ball, rolling in palms until smooth.
  • In a microwave-safe bowl, add the milk chocolate chips and microwave in 30 second intervals until smooth, about 1 minute and 30 seconds total.
  • Turn a plastic sandwich bag inside out and hold it from the inside with one hand. Spoon ¼ of the milk chocolate into the bag. Turn the bag back out making sure chocolate does not fall out the opening. Seal it closed. Cut the corner of the bag, keeping in mind the more you cut off the larger your piping hole will be.
  • Coat the brownie balls in the melted milk chocolate using a fork. Place on a parchment paper-lined baking sheet and chill until chocolate has hardened, about 20 minutes.
  • Place one of the milk chocolate brownie bites onto a clean surface.
  • Using a chopstick, poke a rectangular hole into the brownie bites using the flat end.
  • Break graham cracker in half into a rectangular shape. With the milk chocolate write RIP.
  • Zig zag the milk chocolate around the hole.
  • Stick the graham cracker in the hole. Coat the chocolate with chocolate sprinkles.
  • Enjoy!
