Tomatoes and Dumplings image

To jazz up this versatile and homey dish, add basil, allspice or thyme to the tomatoes. Additional vegetables, like onions, carrots and celery can also be added to the tomatoes. Herbs like rosemary or tarragon could be mixed into the dumpling batter or add a splash of cream or balsamic vinegar once the dumplings are done.

2 (28 ounce) cans stewed tomatoes, i liked to use sliced,undrained
2 tablespoons butter or 2 tablespoons margarine
2 teaspoons sugar
salt and pepper, to taste
2 cups Bisquick baking mix
1 egg
3/4 cup milk

Steps:

  • Combine the tomatoes with juice, butter, sugar and seasonings in a large flat-bottomed kettle.
  • Heat the tomatoes over medium heat until boiling gently.
  • Combine the dumpling ingredients together and drop dough by teaspoon, in a single layer, on top of tomatoes.
  • Reduce the heat to low (the tomatoes on the bottom may scorch if heat is too high).
  • Cook, uncovered, for about 5 minutes.
  • Cover and cook for about 10 more minutes.
  • Remove the lid and serve.
  • Garnish with black pepper and extra pats of butter.

This simple-to-prepare side accompanies blander dishes nicely. I particularly like it with simply grilled salmon or other fish.

1/4 cup chopped onion
1 clove garlic, minced
2 tablespoons olive oil
4 large ripe tomatoes, chopped
1 teaspoon dried basil
1 teaspoon sugar
1 teaspoon salt
1/4 teaspoon fresh ground black pepper
2 medium zucchini, peeled and cubed
1 egg, lightly beaten
1 cup freshly grated parmesan cheese

Steps:

  • Heat oil in a large skillet over medium heat, and saute onion and garlic until tender, but not browned.
  • Add tomatoes, basil, sugar, salt and pepper.
  • Simmer, covered, for 20 minutes and stirring occasionally.
  • Add zucchini and simmer covered for 15 minutes, or until they are tender and stirring as needed.
  • Mix the beaten egg and the parmesan cheese together in a small bowl until it forms a mass.
  • With the aid of a tablespoon, drop the dumplings onto the tomato mixture (you should get 4 nicely-sized ones).
  • Simmer, covered, for 5 to ten minutes, until dumplings are firm.
  • When they are firm, gently flip them over to completely cook the top side (simmering another 1-2 minutes).
  • Serve each portion with one dumpling atop the tomato-zucchini mixture.

1/4 cups chopped onion
2 tablespoons vegetable oil
4 large fresh tomatoes, peeled and chopped
1 tablespoon minced fresh basil or 1 teaspoon dried basil
1 teaspoon sugar
1 teaspoon salt
1/4 teaspoon pepper
2 medium zucchini, peeled and cubed
PARMESAN DUMPLINGS:
1 egg, lightly beaten
1 cup grated Parmesan cheese

Steps:

  • In a large skillet, saute onion in oil until tender. Add tomatoes, basil, sugar, salt and pepper. Simmer, covered, for 10 minutes. Add zucchini; cook, covered, for 15 minutes or until tender. For dumplings, combine egg and cheese. Drop by tablespoons onto tomato mixture. Simmer, covered, for 5 minutes or until dumplings are firm.

Peruvian Purple Potato Dumplings with Ragout of Heirloom Tomatoes and Basil image

1 teaspoon chopped garlic
2 tablespoons extra-virgin olive oil
2 cups assorted color Heirloom tomatoes
Salt and pepper
1/4 cup fresh basil, torn, plus 1/4 cup
1 pound Peruvian purple potatoes
2 tablespoons kosher salt
1 cup flour
3 eggs
1 teaspoon roasted garlic, crushed

Steps:

  • Heat a medium size pan over high heat. Saute the garlic with olive oil and toss the heirloom tomatoes until heated through, approximately 5 minutes. Season with salt and pepper. Toss in 1/4 cup of the fresh basil before serving dish.
  • Peel and dice the potatoes and place in a small bowl. Blanch the potatoes lightly in salted water and rinse in ice water to keep the color.
  • Mix the cooled, cooked potatoes with the flour, eggs, and roasted garlic. Form mixture into a dough. Roll the dough onto a lightly floured surface, into a snake approximately 1/2-inch thick. Cut into 1/2 inch pieces and using your hands, roll each piece into balls.
  • Cook the dumplings in boiling water. Cook for approximately 2 minutes. Using a slotted spoon, remove the dumplings and toss with the Heirloom tomato ragu.
  • To serve, add the remaining torn fresh basil, and serve immediately on a large platter.
