AMAZING VEGETABLE SOUP (SOUTH BEACH DIET)

This was posted by a fellow SBDer, Mamacita, in the 3 Fat Chicks on a Diet boards. It's a wonderfully delicious, simple, vegetable soup. It originally called for zucchini, but I leave it out as I dislike summer squash. Feel free to add some in if you like, though. I sometimes add in a can of navy beans, rinsed and drained, with the tomatoes. For South Beach Diet, make sure your tomatoes have no added sugar. It makes quite a bit, but it reheats fairly well--or you can cool and freeze it. Don't be afraid of the garlic--it mellows out a lot during cooking.

2 quarts chicken broth or 2 quarts vegetable broth
1 small head green cabbage, shredded (I use angel hair shredded cabbage) or 1 (10 ounce) bag shredded cabbage for Coleslaw (I use angel hair shredded cabbage)
1 head celery, washed and sliced
1 leek, rinsed, trimmed, and sliced thinly
5 garlic cloves, peeled and minced
1 cup fresh green beans, cut into 2-inch lengths
1 medium zucchini, cut into 1/4 inch rounds (I leave out)
1 medium summer squash, cut into 1/4 inch rounds (I leave out)
1 (15 ounce) can diced tomatoes, drained
1 (14 1/2 ounce) can navy beans, rinsed and drained (optional)
shredded parmesan cheese, optional garnish (optional)
basil pesto, optional garnish (optional)

Steps:

  • Combine broth, cabbage, celery, leek, garlic, and green beans in an 8-quart soup pot. Bring to a boil, reduce heat, and simmer until green beans are just tender.
  • Add tomatoes, zucchini, and squash (and navy beans, if using) and cook an additional 45 minutes.
  • Serve hot, sprinkled with Parmesan cheese or with a spoonful of pesto stirred in, as desired.

Roasted Tomato Soup (South Beach Diet Phase 2) image

From newest book. Haven't tried. This rich, rustic flavor of this soup comes from slow-roasting the tomatoes (you can do other things while they are in the oven). If you like a little sweetness, add a touch of sugar substitute when you adjust your seasonings. If you're on phases 2 or 3, add whole wheat tortellini for a satisfying entree.

2 1/2 lbs plum tomatoes, cut in half lengthwise
1 medium onion, diced
4 garlic cloves, smashed and peeled
1 teaspoon dried basil
1 teaspoon dried oregano
1/4 teaspoon salt
fresh ground black pepper
1 tablespoon extra virgin olive oil
1 cup vegetable broth

Steps:

  • Heat oven to 425.
  • Line the baking pan with parchment paper. Arrange the tomatos, cut side up, on the pan. Scatter onion and garlic in a single layer around tomatoes. Sprinkle tomatoes, onion, garlic, with basil, oregano, salt and pepper to taste; drizzle with oil. Bake on the middle of the rack of the oven until tomatoes are golden on the bottoms and start to collapse, about 40 minutes.
  • Remove from oven and carefully transfer the contents of the pan to a blender. Add 1/2 cup broth and puree until smooth.
  • Transfer mixture to a medium saucepan. Stir in remaining 1/2 cup of broth and bring to a simmer over medium heat. Remove pan from heat and season soup with additional salt and pepper if desired. Serve warm.

1 tablespoon extra virgin olive oil
1 small onion, minced
2 stalks celery, minced
4 garlic cloves, minced
1/4 teaspoon dried basil

1/4 teaspoon red pepper flakes
5 ounces white mushrooms, trimmed and quarted (about 6 medium)
1 medium summer squash, diced
15 ounces lima beans, rinsed and drained
14 ounces no-salt-added diced tomatoes, with juices
8 ounces tomato sauce
3/4 cup water

Steps:

  • In medium saucepan, heat oil over medium heat. Add onions, celery, garlic, basil, oregano, and pepper flakes. Cook, stirring occasionally, 5 minutes.
  • Add mushrooms, squash. Cook, stirring occasionally, 5 minutes more.
  • Stir in beans, diced tomatoes and their juices, tomato sauce, and water. Bring to a simmer and cook briefly just to heat through.

1 tablespoon olive oil
1 onion, finely chopped
4 cloves garlic, minced
1/4 teaspoon hot pepper flakes
1 (28 ounce) can diced tomatoes
4 cups vegetable stock
1 lb frozen lima beans
2 tablespoons chopped fresh parsley
1/4 teaspoon salt
1/4 cup grated romano cheese or 1/4 cup parmesan cheese

Steps:

  • In a stock pot heat first 4 ingredients for 5 minutes.
  • Add the tomatoes, stock and beans.
  • Bring to a boil.
  • Cover and reduce heat to medium-low for 10 minutes.
  • Add the parsley and salt.

1 tablespoon extra virgin olive oil
4 scallions, thinly sliced
1 stalk celery, thinly sliced
4 garlic cloves, minced
2 teaspoons ground cumin
1/8 teaspoon cayenne
1 pinch salt
1 pinch fresh ground black pepper
30 ounces canned black beans, with their liquid
15 ounces canned diced tomatoes, with their liquid
1 1/2 cups low sodium chicken broth
1 tablespoon fresh lime juice

Steps:

  • In a medium saucepan, heat olive oil over medium heat.
  • Add scallions, celery, garlic, cumin, cayenne, salt, and pepper, Cook, stirring occasinally until vegetables soften.
  • Add cans of black beans, diced tomatoes, and chicken broth. Bring to a simmer and cook for 10 minutes.
  • Transfer 2 cups of soup to a blender and process until smooth. Return soup to pan and stir to combine.
  • Return to a simmer and cook for 10 minutes longer. season with lime juice, and adjust seasonings.
  • Serve with hot pepper sauce and sliced scallions on the side (not in ingredients).
