This quick and easy tomato salad recipe is the best way to highlight the natural flavor and sweetness of fresh summer tomatoes!

4 cups halved cherry tomatoes (or chopped larger tomatoes)
¼ cup finely diced red onion
2 tablespoons snipped fresh basil (or more to taste)
2 tablespoons olive oil
2 tablespoons balsamic vinegar
Kosher salt and freshly-ground black pepper, to taste

Steps:

  • Combine tomatoes, onion and basil in a bowl.
  • In a separate bowl or jar, whisk or shake together olive oil and vinegar. Pour over tomatoes and toss to coat. Season with salt and pepper, to taste.
  • Serve immediately, or allow the salad to marinate for about 30 minutes - 1 hour at room temperature or in the fridge (if you prefer a cold salad).

6 to 8 ripe tomatoes
4 green onions
1 cup extra-virgin olive oil
3 to 4 tablespoons balsamic vinegar
2 tablespoons brown sugar
Salt and freshly ground black pepper
Handful fresh parsley leaves, lightly chopped
12 fresh basil leaves, chiffonade

Steps:

  • Cut the tomatoes into 4 wedges, then cut the wedges in half and add to a bowl. Lop off the tops of the green onions, then slice the white and mostly light green parts really thin. Add to the tomatoes.
  • Add the olive oil, balsamic vinegar, brown sugar, dash of salt and pepper to a jar. Screw on the lid and shake to combine. Pour the dressing over the tomatoes and toss.
  • Add the herbs and gently toss to combine. Cover and refrigerate for a couple of hours before serving.

10 large basil leaves (chiffonade or roughly chopped)
3 tablespoons balsamic vinegar

  • Cut all of your grape or cherry tomatoes in half and place into a large mixing bowl. Place basil in with tomato mixture.

5 Roma tomatoes (or a mix of tomato varieties like cherry, heirloom, etc..)
1/4 red onion
1/2 a large English cucumber
fresh chopped basil (- as much as you'd like!)
balsamic vinegar (for drizzling (approx 1-2 TBSP))
1 lemon (, squeezed for juice)
1 clove garlic ((peeled and minced))
1/4 cup extra virgin olive oil
1 TBSP white wine vinegar
1/4 tsp salt (or extra to taste)
1/8 tsp pepper (or extra to taste)

Steps:

  • First chop those veggies! Cut Roma/plum tomatoes in half lengthwise then horizontally into slices. If adding cherry/grape tomatoes to the mix, slice in half lengthwise. Chop or slice onions Chop basil into ribbons.
  • Next let's make the dressing! Squeeze juice from lemon and mince garlic. Combine with remaining ingredient and season to taste.
  • Combine tomato, onion, and basil with dressing and mix well to coat.
  • Drizzle with balsamic vinegar and allow mixture to sit for 10-20 minutes. The longer this salad sits, the more pronounced the flavors will be. Serve with your favorite main dish and enjoy!

24 ounces cherry, plum, or hot house tomatoes (or other variety of ripe tomato)
3 tablespoons extra-virgin olive oil
2 tablespoons balsamic vinegar
2 garlic cloves (minced)
1 teaspoon fresh oregano (or 1/2 teaspoon dried oregano , optional)
1 teaspoon fresh basil (chopped, or 1/2 teaspoon dried basil, optional)
Salt (to taste)
Black pepper (freshly ground, to taste)

Steps:

  • Gather the ingredients.
  • Slice the tomatoes in half and, if using plum or larger tomatoes, core them to remove the seeds . Chop the tomatoes into chunks (whatever size you desire). If using grape, cherry, or another small tomato, cut in half so they will absorb the flavors of the dressing. There's no need to seed them.
  • Place the chopped tomatoes in a large bowl. Add the olive oil, balsamic vinegar, garlic, and herbs (if using). Toss well.

Twice a year there's a this model Airplane show in Lakeland, FL. The food vendor sells the most delicious tomato salad. I couldn't find any recipe close to it on here so I added this one. They used homegrown tomatoes. So finding good quality tomatoes is key.

2 large garlic cloves, smashed and finely chopped
