Summer tomatoes and the creamy feta cheese spread make this savory phyllo tart the perfect lunch. Also great as an appetizer for your summer dinner party. Simple and delicious.

Number Of Ingredients 17

For the Crust:
• 8 sheets (#4) phyllo
• 4 oz (226 g) salted butter, melted
• Black sesame seeds
For the Filling:
• 8 oz (230 g) feta cheese, crumbled
• 8 oz (230 g) ricotta cheese
• 1-2 tablespoons finely chopped mint
• 3-4 tablespoons olive oil
• Shredded Gouda, Gruyere, or Mozzarella cheese
• Black pepper, to taste
The vegetables:
• Bell pepper slices
• Tomato slices
• ¼ cup olive oil
• Salt
• Oregano

Steps:

  • Preheat the oven to 400 °F, 200 °C.
  • Make the filling: Combine all of the filling ingredients in a bowl and mix them together. Taste and adjust seasoning if desired.
  • Assemble the tart:
  • Line a half sheet pan with parchment paper.
  • Layer the phyllo sheets on top of the parchment and drizzle melted butter between each sheet.
  • Spread the filling on top of the final sheet of phyllo making sure to leave a border. About 1 and ½ inches.
  • Top with the bell peppers.
  • Combine the olive oil with some salt and mix together. Brush the peppers with the oil.
  • Top with tomato slices and brush them with the oil.
  • Sprinkle some dried oregano over the tomatoes.
  • Fold the sides of the phyllo over to create a border.
  • Brush with the remaining melted butter and sprinkle the border with some sesame seeds.
  • Bake on the center rack of the oven for 45-50 minutes or until golden.
  • Set aside to cool for 10 minutes and serve.

Recipe for a savory tart made with phyllo dough and filled with feta cream, tomatoes, and za'atar.

6 sheets fillo pastry
2 tablespoons unsalted butter, or olive oil
4 ounces feta cheese
1/4 cup cream cheese
1 to 2 tablespoons milk, as needed
1/2 teaspoon za'atar seasoning
1/4 teaspoon dried oregano
1 pound cherry tomatoes , halved or quartered
1 tablespoon chopped fresh parsley

Steps:

  • Gather the ingredients.
  • Position a rack in the center of the oven and heat to 350 F. Line a large rimmed baking sheet with parchment paper or a silicone baking mat. Set aside.
  • Add the feta, cream cheese, za'atar, dried oregano, and 2 tablespoons of milk to a food processor . Puree until smooth, adding an additional tablespoon or 2 of milk if needed to get a creamy, spreadable texture. Note that the mixture will be quite salty but it will also provide the seasoning for the pastry and tomatoes.
  • On the prepared baking sheet, gently brush a layer of fillo pastry with the melted butter , top with another layer and repeat until all the layers are used.
  • Spread the feta cheese mixture over the top layer of fillo, leaving about a 1 1/2-inch border on all sides.
  • Spread the tomatoes on evenly over the feta mixture. Fold up the sides of the fillo to create a rectangular tart with an edge. Brush any exposed dough edges with some of the melted butter.
  • Bake until the pastry is a light golden brown, 35 to 45 minutes. Top with the parsley and serve.

2 garlic cloves, crushed
8 phyllo pastry sheets
1 cup shredded mozzarella cheese
3 medium red and orange tomatoes, sliced
4 ounces crumbled feta cheese
1/3 cup fresh basil, chopped

Steps:

  • Lightly grease a large baking sheet.
  • Preheat oven to 375*F.
  • Combine butter and garlic.
  • Place 1 sheet of phyllo on pan and brush with butter/garlic mixture.
  • Repeat with remaining phyllo and butter/garlic mixture.
  • Sprinkle phyllo with mozzarella to within 2.5" of the edges.
  • Top with sliced tomatoes.

5 tablespoons butter, melted
14 sheets phyllo dough (14x9 in.)
7 tablespoons grated Parmesan cheese, divided
1 cup shredded part-skim mozzarella cheese
1 cup thinly sliced onion
1 pound plum tomatoes, sliced
1-1/2 teaspoons minced fresh oregano or 1/2 teaspoon dried oregano
1 teaspoon minced fresh thyme or 1/4 teaspoon dried thyme
Salt and pepper to taste

Steps:

  • Preheat oven to 375°. Brush a 15x10x1-in. baking pan with some of the melted butter. Unroll phyllo dough; cut stack into a 10-1/2x9-in. rectangle. Discard scraps., Line bottom and sides of prepared pan with 2 sheets of phyllo dough (sheets will overlap slightly). Brush with butter and sprinkle with 1 tablespoon Parmesan cheese. Repeat layers 5 times. (Keep dough covered with a damp towel until ready to use to prevent it from drying out.) , Top with layers of remaining phyllo dough; brush with remaining butter. EGGPLANT AND TOMATO PIE

Tomatoes have another week or so to go in most farmers' markets. This robust summer pie, topped with a layer of tomato slices flecked with thyme, is a nice party piece. It also packs well once cooled, so take leftovers to work for lunch.

1 Whole Wheat Yeasted Olive Oil Crust (1/2 recipe)
1 1/2 pounds eggplant (2 medium)
Salt and freshly ground pepper
2 eggs
1/3 cup milk
1 1/2 cups marinara sauce
2 teaspoons fresh thyme leaves
2 ounces Gruyère, grated (1/2 cup)
1 ounce Parmesan, grated (1/4 cup)
2 medium-size fresh tomatoes, in season, sliced
2 tablespoons extra virgin olive oil

Steps:

  • Line a lightly oiled 9- or 10-inch tart pan with the dough. Using a fork, pierce at regular intervals to allow for even baking. Refrigerate or freeze until ready to prebake and fill.
  • Heat the oven to 450 degrees Fahrenheit. Slice the eggplant about 1/3 inch thick and toss with salt to taste and 1 tablespoon olive oil. Line 1 to 2 baking sheets (as needed) with foil and brush the foil with olive oil. Lay the eggplant slices on the foil in 1 layer. Roast in the hot oven for 15 to 20 minutes, until the slices are soft when pierced with a knife and browned in spots. Remove from the oven and carefully fold the foil up over the eggplant slices (be careful not to burn yourself!). Crimp the edges of the foil and allow the eggplant to steam for another 15 to 20 minutes. It should now be completely cooked. Turn the oven down to 350 degrees.
  • Beat together the eggs in a medium bowl. Set the tart pan on a baking sheet to allow for easy handling. Using a pastry brush lightly brush the bottom of the crust with the beaten egg and place in the oven for 10 minutes. Remove from the oven and set aside.
  • Whisk the milk into the eggs. Add salt (I usually use about 1/2 teaspoon) and pepper. Spread 1/4 cup tomato sauce over the bottom of the crust. Top with a layer of eggplant slices. Season with salt and pepper. Spoon one third of the remaining sauce over the eggplant and sprinkle with thyme, Parmesan, and half of the Gruyère. Repeat the layers one or two more times, depending on the size of your eggplant slices, ending with the Gruyère. Pour on the egg and milk mixture. It should seep down into the layers; if it looks like it's not moving and going to overflow the crust, use a fork to create some holes so it does seep down. Arrange the sliced tomatoes on top and sprinkle any remaining thyme over the tomatoes. Drizzle on 1 tablespoon of olive oil. Place in the oven and bake for 40 to 45 minutes, until set and bubbling and browned on the top and edges. Remove from the heat and allow to sit for at least 10 minutes before serving. Serve hot, warm, or room temperature.

1 (9 inch) pie shell
7 ripe tomatoes, sliced
1 yellow onion
¾ cup mayonnaise
⅓ cup shredded mozzarella cheese
⅓ cup grated Parmesan cheese
ground black pepper to taste
2 teaspoons fresh basil
2 teaspoons fresh oregano

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bake the pastry shell for 8 to 10 minutes or until browned.
  • Slice onion and place in the bottom of pastry shell. Slice tomatoes and arrange over onions. Add black pepper to taste.
  • In a medium bowl, combine mozzarella, parmesan and mayonnaise. Spread this mixture evenly over tomatoes.
  • Bake at 350 degrees F (175 degrees C) for 20-25 minutes or until golden brown. Once cooked, garnish with fresh herbs.
