2 tablespoons olive oil
1 medium onion, chopped
1-1/4 cups uncooked whole wheat orzo pasta
2 cans (14-1/2 ounces each) whole tomatoes, undrained, coarsely chopped
3 cups reduced-sodium chicken broth
2 teaspoons dried oregano
1/4 teaspoon salt
1/4 teaspoon pepper
Optional: Crumbled feta cheese and minced fresh basil

Steps:

  • In large saucepan, heat oil over medium heat; saute onion until tender, 3-5 minutes. Add orzo; cook and stir until lightly toasted., Stir in tomatoes, broth and seasonings; bring to a boil. Reduce heat; simmer, covered, until orzo is tender, 15-20 minutes, stirring occasionally. If desired, top with feta and basil. Freeze option: Freeze cooled soup in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little broth or water if necessary.

8 cups beef stock
1 ½ cups orzo pasta
2 (14.5 ounce) cans fire-roasted diced tomatoes with juice
2 (10.75 ounce) cans tomato soup
1 (15 ounce) can kidney beans, rinsed and drained
1 (15 ounce) can cannellini beans, rinsed and drained
5 teaspoons chicken bouillon powder
1 pinch crushed red pepper flakes, or to taste
1 bunch kale, chopped

Steps:

  • Bring beef stock to a boil in a stockpot; add orzo and cook for 5 minutes. Mix in fire-roasted tomatoes, tomato soup, kidney beans, cannellini beans, chicken bouillon, and red pepper flakes into orzo; return to a boil. Reduce heat and simmer, stirring occasionally, for 1 1/2 hours. Mix kale into soup and simmer for 30 minutes more.

1 bunch kale
1 cup orzo pasta
1 cup carrot, sliced
1 cup sweet onion, chopped
1 cup celery, sliced
2 roma tomatoes, cubed
4 cups vegetable broth
1 tablespoon sugar
3 sprigs thyme
2 bay leaves
2 tablespoons sweet basil, chopped
1/4 teaspoon white pepper
1/2 teaspoon ginger
1/2 teaspoon kosher salt
2 tablespoons olive oil

Steps:

  • Saute onion, celery and carrots with a small amount of oil over medium heat. Cook until onions are slightly transparent.
  • Remove main and axial ribs and cut kale into 1 inch strips. Stir in coating entirely and saute until kale begins to relax.
  • Add sugar and tomatoes and cook until all liquid is gone stirring constantly.
  • Add vegetable broth and bay leaf and bring to a low boil.
  • Add orzo and remaining spices and cook over medium low heat for 15 minutes.
