Cornmeal
2 to 2-3/4 cups all-purpose flour
1-1/2 cups rye flour
1/2 cup finely chopped onion
3 tablespoons sugar
2 tablespoons caraway seeds
1 teaspoon salt
1 package (1/4 ounce) active dry yeast
1-1/2 cups 2% milk
3 tablespoons butter
1 large egg white
1-1/2 teaspoons water

Steps:

  • Grease a 9x5-in. loaf pan and sprinkle lightly with cornmeal; set aside., In a large bowl, combine 1 cup all-purpose flour, rye flour, onion, sugar, caraway, salt and yeast. In a small saucepan, heat the milk and butter to 120°-130°. Add to dry ingredients; beat just until moistened. Stir in enough remaining all-purpose flour to form a firm dough., Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down. Shape into a loaf. Place in prepared pan. Cover and let rise until doubled, about 30 minutes. Combine egg white and water; brush over loaf. Bake at 350° for 40-45 minutes or until golden brown. Remove from pan to a wire rack to cool completely.

6 to 6-1/2 cups all-purpose flour
3 tablespoons sugar
2 packages (1/4 ounce each) active dry yeast
1 teaspoon salt
3/4 teaspoon dried oregano
1/2 teaspoon garlic powder
1/2 teaspoon dried basil
1/4 teaspoon dried rosemary, crushed
2 cups tomato or V8 juice
1/2 cup tomato sauce
2 tablespoons olive oil

Steps:

  • In a large bowl, combine 3 cups flour, sugar, yeast, salt, oregano, garlic powder, basil and rosemary. In a large saucepan, heat the tomato juice, tomato sauce and oil to 120°-130°, stirring occasionally. Add the dry ingredients; beat until smooth. Stir in enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down. Turn onto a lightly floured surface; divide in half. Shape into two loaves. Place in two greased 8x4-in. loaf pans. 1 1/4 cups buttermilk, room temperature
2 tablespoons olive oil
1 cup rye flour
3 cups bread flour
1 tablespoon brown sugar
1 teaspoon salt
1 teaspoon fast rising yeast (Bread machine yeast)
2 tablespoons dried onion flakes
1 teaspoon caraway seed
1 teaspoon black caraway seed

Steps:

  • Place ingredients except seeds and onion flakes in bread machine according to the instructions of your machine. Mine calls for wet ingredients first so I listed them in order to be placed into the machine. Be sure to place the salt and yeast in separate corners.
  • Set machine on the dough cycle. Place seeds and onion flakes in when machine beeps during the end of kneading.
  • Lightly oil large baking pan.
  • When dough cycle is finished remove dough to a floured work surface. Divide into two. Roll out into a 1 inch disk. Fold one side in to center pressing with rolling pin, then the other half fold to center pressing inches Then fold at center line pressing seams to seal. Roll the loaf forward and back to form a 12 inch loaf. Repeat with the other 1/2 of the dough.
  • Place both on the pan leaving room for them to raise. Cover with oiled plastic wrap. Place in a warm draft free place for 45 minutes.
  • Remove wrap dust with flour and score the loafs Leave to stand for ten minutes while you preheat oven to 425 degrees.
  • Bake for 20 minutes.
  • It will sound hallow when you tap on the bottom which will be dark.
  • Cool on wire rack.

This is from Graham Kerr, the man who said, "If you are out of salted nuts, the best appetiser is champagne!" This is from Volume 1 of his CBC Television Cookbooks. I also have Volume 3 and it was published in 1969, so this recipe is some kind of late 1960s cocktail party creation. Graham's recipe notes include: "At heart this is a dish that everyone enjoys except those with ulcers and those who have a romantic meeting with someone who isn't at the party." and, "Vodka based creations blend well." I use party rye-sized pumpernickel bread for the "brown bread rounds" he writes of; also, this recipe is for 2 people only so increase if you're serving a crowd (makes a great summer party treat) but don't make them too far ahead.

4 slices onions (VERY thin!)

  • Cut rounds from brown bread (big enough around to hold your tomato and onion slices), or use party rye-sized pumpernickel bread with crusts trimmed (and smaller tomato and onion slices).
  • Place onion slices on one slice of bread and season with salt and pepper.
  • Sandwich bread together.
  • Spread edges of bread with mayonnaise then roll the edges in minced parsley.
  • Garnish with a slice of tomato and sprig of parsley if you like.
  • (Actually, I like to just cram the tomato into the sandwich as well--).

4 cups bread flour
1 pinch salt
1 (1/4 ounce) package active dry yeast (about 1 tbsp)
1 teaspoon sugar
1 cup warm water (110F)
4 tablespoons extra virgin olive oil
1 onion, finely chopped
1 garlic clove, crushed
4 ounces sun-dried tomatoes packed in oil, drained
9 large basil leaves
fresh ground pepper, to taste
milk, to glaze
1 teaspoon coarse sea salt
basil leaves (to garnish)

Steps:

  • Sift flour and salt into a large bowl.
  • In a small bowl, dissolve yeast and sugar in warm water.
  • Let stand 5-10 minutes until frothy.
  • Stir 3 tbsp olive oil into yeast mixture.
  • Using a wooden spoon, gradually stir yeast mixture into flour to give a soft, but not sticky, dough.
  • Knead on a lightly flour surfgace 5 minutes until smooth and elastic.
  • Put dough into an oiled medium-size bowl.
  • Cover and let rise in a warm place 35-40 minutes until doubled in size.
  • Oil a baking sheet.
  • Heat remaining 1 tbsp olive oil in a skillet, add onion and garlic.
  • Cook 3 minutes until softened.
  • Remove skillet from heat and set aside.
  • turn out dough onto a lightly floured surface and cut in half.
  • Roll out to give 2 rectangles each about 12 x 9.
  • Transfer 1 piece to the baking sheet and prick surface with fork.
  • Spread cooked onion mixture over pricked dough, leaving a 1/2 inch boarder around the edge.
  • Arrange sun-dried tomatoes and basil leaves over onion and season with the ground pepper.
  • Moisten edges of the dough with a little cold water and cover with second sheet of dough.
  • Crimp edges to seal.
  • Using a sharp knife make a lattice pattern on surface of dough.
  • Brush with a little milk to glaze and sprinkle with coarse sea salt.
  • Let rise 20 minutes.
  • Preheat oven to 450.
  • Bake loaf in preheated oven about 25 minutes until golden-brown and underside is firm and lightly colored.
  • Serve warm or cold.
  • Cut into pieces and garnish with basil.

3 onions , thinly sliced
3 garlic cloves , thinly sliced
4 tbsp olive oil
1.2kg mixed tomato , from really big to cherry
8 thyme or oregano sprigs, or a mixture, stripped, plus a few more
1 tbsp golden caster sugar
50-85g fresh white breadcrumbs - if you've got a crust, use this so the crumbs are nice and golden

Steps:

  • Heat oven to 180C/160C fan/gas 4. Heat half the oil in a pan and gently soften the onions and garlic for 15-20 mins until really soft and sticky but not browned. Put the onions, tomatoes (halve the large ones), herbs, sugar and breadcrumbs in a baking dish, season well and toss together.
  • Drizzle with the remaining oil, scatter with a few more herb sprigs and bake for 1 hr until going golden on top and the tomatoes are juicy.

New York Deli-Style Rye Bread image

American "deli rye" is descended from traditional breads in Middle and Eastern Europe, where rye and wheat grow together and "bread spice" (a combination of caraway, coriander, anise and fennel seeds) is common. This kind of rye bread spread across the United States in the 20th century along with Jewish delicatessens, where it served as the perfect foil for rich fillings like pastrami and chopped liver -- not to mention tuna melts. The sour tang and chewy texture of the original breads have largely been lost over time, because rye bread today is made mostly from wheat flour and just a scant amount of rye. This recipe restores some of the original charm, but is still quick and easy for home baking.

2 cups/310 grams bread flour
1 cup/155 grams light rye flour
2 teaspoons/6 grams caraway seeds (optional)
2 teaspoons/10 grams kosher salt
1 1/2 teaspoon/5 grams active dry yeast
2 teaspoons honey
2 teaspoons flavorless vegetable oil, such as grapeseed or canola
1 teaspoon cornstarch

Steps:

  • In the bowl of a standing mixer, whisk together the flours, caraway seeds (if using), salt and yeast. Put 1 1/4 cups lukewarm water into a small bowl, then stir in the honey and oil.
  • Using a dough hook attachment at low speed, gradually pour in the liquid mixture. Mix just until a cohesive dough starts to form and no streaks of dry flour remain, about 2 minutes. Scrape down sides of the bowl halfway through. Cover bowl tightly with plastic wrap and let dough rest for 20 minutes.
  • Turn mixer to medium-low and knead until smooth and elastic, easily clearing the sides of the bowl, about 8 minutes. The dough should be moist but not sticky; if needed, add more flour 1 tablespoon at a time.
  • Lightly oil a medium-size mixing bowl. Transfer the dough to a lightly floured surface and knead 30 seconds, shaping dough into a smooth round ball. Place seam side down in the oiled bowl. Cover with plastic wrap and let rise until doubled in size, 1 1/2 to 2 hours.
  • Stack 2 rimmed baking sheets and line the top sheet with aluminum foil. Punch the dough down to deflate. Turn out onto a lightly floured surface. Press and stretch into a rough 6-inch square.
  • Lift and fold top 2 corners of dough into the center of the square and press gently to seal. Lift and fold down the upper third of the dough toward the center and press gently to seal. Lift and fold down the top half of the dough to form a loaf, and pinch the seam closed. Turn the loaf seam side down, gently slide hands underneath, and transfer to the prepared pan. You should have an oval loaf about 8 inches by 4 inches; use hands to shape as needed. Cover with oiled plastic wrap and let rise until loaf increases in size by about half, 30 minutes to 1 hour.
  • Meanwhile, place a rack in the lower third of oven and heat to 450 degrees. When the dough has risen, make 3 deep slashes across the top, using a sharp paring knife or razor blade. Place in oven, reduce heat to 375 degrees and bake until deep golden brown, 35 to 40 minutes, rotating pan once during baking.
  • Meanwhile, dissolve cornstarch in 1 cup cold water. Simmer in saucepan or microwave until clear and syrupy. Transfer hot, baked bread immediately to a wire rack and brush top and sides with cornstarch mixture until glazed and shiny. Let cool completely before slicing.

GOURMET ONION, MUSHROOM, AND MOZZARELLA BURGER ON RYE BREAD

1 ½ cups panko bread crumbs, divided
1 pound lean ground beef
2 large eggs
2 tablespoons Worcestershire sauce
4 cloves garlic, minced, divided
2 tablespoons olive oil, divided
3 medium onions, chopped
1 tablespoon butter
1 (8 ounce) package baby bella mushrooms, chopped
salt and ground black pepper to taste
1 splash red wine, such as Cabernet Sauvignon
4 slices mozzarella cheese
8 slices rye bread

Steps:

  • Place 1/2 cup bread crumbs on a plate. Combine remaining bread crumbs with ground beef, eggs, Worcestershire sauce, and 1/2 of the garlic in a large bowl. Mix well and form into 4 large balls. Place each ball in the bread crumbs and press to flatten and coat burgers on each side.
  • Heat 1 tablespoon oil in a skillet over medium heat. Add onions and remaining garlic and cook until browned, 5 to 7 minutes. Reduce heat to low, add butter and mushrooms, and season with salt and pepper. Add red wine and cook for 5 minutes more.
  • Meanwhile, heat remaining oil in another skillet over medium-low heat. Add burgers, cover, and cook until bread crumbs on the bottom have turned a nice brown color, 5 to 7 minutes. Flip, add a slice of mozzarella cheese to each burger, cover, and cook until no longer pink in the center, 5 to 7 minutes more. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).
  • Place each burger on a slice of rye bread, cover with mushroom-onion mixture, and top with remaining bread.
