1 egg
2 pounds ripe tomatoes, peeled
Salt and freshly ground black pepper
1/3 cup plain bread crumbs
4 tablespoons mayonnaise
3/4 cup thinly sliced Vidalia onions
1/4 teaspoon fresh thyme leaves
2 tablespoons chiffonade fresh basil
1/2 cup grated fontina cheese
1/2 cup grated mozzarella cheese
2 tablespoons extra-virgin olive oil
2 tablespoons grated Parmesan
1 1/4 cups all-purpose flour
2 teaspoons Essence, recipe follows
1/2 teaspoon salt
4 ounces (1 stick) cold unsalted butter, cut into pieces
3 to 4 tablespoons ice water
1 tablespoon dried thyme
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
2 1/2 tablespoons paprika

Steps:

  • Preheat oven to 375 degrees F.
  • Roll out the pie crust on a lightly floured surface to fit a deep 9 or 10-inch pie pan. Place the pastry in the pie pan and crimp edges decoratively. Refrigerate at least 30 minutes, then line with aluminum foil. Fill with pie weights and bake for 12 to 15 minutes, or until lightly golden around the edges. Remove foil and pie weights, and return to the oven for 3 to 5 minutes. Remove from the oven and transfer to a cooling rack to cool. Crack the egg in a small bowl, reserving yolk for the filling, separately. Lightly beat the egg white with a fork, then brush the surface of pie crust with a light coating of egg white and allow to cool.
  • Slice the tomatoes, discarding the stem and root ends, into 1/4-inch slices and lightly season with the salt and pepper.
  • Sprinkle about 1/3 of the bread crumbs in the bottom of the pie crust. In a small bowl combine the mayonnaise with the reserved egg yolk and stir until smooth. Place a layer of tomatoes in the bottom of the piecrust over the breadcrumbs, using about half of the tomatoes, then top with half of the sliced onions. Drizzle with half of the mayonnaise mixture, half of the thyme and basil, half of the fontina and half of the mozzarella cheeses. Top with half of the remaining breadcrumbs then top with the remaining tomato slices, remaining onions, remaining fontina and mozzarella, remaining mayonnaise mixture, and remaining thyme and basil. Top with the remaining bread crumbs and drizzle with the olive oil. cover with the Parmesan cheese, place in the oven and bake until bubbly hot and golden brown, about 1 hour and 15 minutes. Remove from the oven and allow to cool for at least 30 minutes before slicing and serving. Serve warm or at room temperature.
  • 2 teaspoons Essence, recipe follows
  • In the bowl of a food processor combine flour, Essence, salt, and butter and process until mixture resembles coarse crumbs. While the motor is running, add water in increments until dough comes together to form a ball. Transfer dough to a lightly floured surface and shape into a flat disc. Refrigerate overnight or at least one hour.
  • Remove from refrigerator and roll out on a lightly floured surface to desired shape and thickness.
  • Combine all ingredients thoroughly.

1 9" pie crust, prepared but not baked (Pillsbury)
1/4 cup grated parmesan
Cayenne pepper
3/4 cup mayonnaise
3 tablespoon lemon juice
1/4 cup fresh chopped basil or 2 teaspoons dried basil
Salt and pepper
2 cups grated cheddar cheese
8-10 plum tomatoes, peeled and sliced or 2 cups whole canned tomatoes, drained for 30 minutes and chopped
6 scallions, thinly sliced

Steps:

  • Preheat oven to 350 degrees. Roll out pie crust and sprinkle with parmesan and cayenne. Cover crust with a sheet of wax paper and press cheese and cayenne into crust by hand or with a rolling pin. Place pie crust into a 9 inch pie plate and crimp edges. In a small bowl stir together mayonnaise, lemon juice, basil and salt and pepper. Sprinkle 1/2 cup cheese in bottom. Top with 1/3 of the tomatoes and scallions. Sprinkle with more cheese and drizzle on 1/3 of mayonnaise mixture. Continue to layer tomatoes, scallions, cheese and mayonnaise and finish with cheese on top. Bake for 30-40 minutes until crust is golden and pie is bubbly. Allow pie to cool for 30 minutes. The pie will be easier to slice when it has completely cooled.

8 cups thinly sliced sweet onions
2 tablespoons butter
12 bacon strips, cooked and drained
2 cups soft bread crumbs
3 to 4 medium tomatoes, thinly sliced
2 cups shredded cheddar cheese
3 large eggs
1/4 teaspoon salt
1/8 teaspoon pepper
Additional tomato slices, optional

Steps:

  • In a large skillet, saute onions in butter until tender. Crumble nine bacon strips; set remaining strips aside. Place the bread crumbs in a greased 9-in. deep-dish pie plate. Layer with half of the tomatoes, onions, crumbled bacon and cheese. Top with the remaining tomatoes, onions and crumbled bacon., In a bowl, beat the eggs, salt and pepper; pour over the top. Sprinkle with remaining cheese. Top with reserved bacon strips. Arrange additional tomato slices around the edge if desired. Bake at 350° for 35-40 minutes or until a knife inserted in the center comes out clean. Let stand for 10 minutes before cutting. Refrigerate leftovers.

This reminded us of a BLT. It does sound strange, but we loved the way all the textures and flavors were perfect together. It's sweet, smoky, and savory. This is a great way to use up the abundance of tomatoes this time of year.

1 9 inch pie shell
5 large tomatoes, peeled and sliced
4 slice bacon, cooked and chopped
1 sweet onion, sliced or chopped
1 tsp salt
1/2 tsp pepper
2 Tbsp milk
1/2 c mayonnaise
1 1/2 c sharp cheddar cheese, shredded
1/4 c Ritz crackers, crushed
2 tsp butter, melted
2 green onions (scallions), sliced

Steps:

  • 1. Prick pie shell with fork and bake at 350 degrees for about 10 minutes.
  • 2. Fry bacon. Cook till tender. Drain, set aside.
  • 3. Peel and slice tomatoes to fill bottom of pie shell.
  • 4. Sprinkle with chopped onion and salt and pepper.
  • 5. Layer more tomatoes, salt and pepper (again).
  • 6. Mix mayo, bacon and cheese and milk.
  • 7. Spoon on top and pat down to cover tomatoes.
  • 8. Sprinkle with Ritz crackers mixed with melted butter
  • 9. Sprinkle Scallions on top.
  • 10. Bake 350 degrees for 30 minutes.

1/2 package Pillsbury refrigerated pie crusts
1 egg
1/4 cup mayonnaise
2 pounds ripe tomatoes

1/3 cup plain breadcrumbs
3/4 cup thinly sliced Vidalia onions
fresh thyme leaves
2 tablespoons chiffonade fresh basil
1/2 cup grated fontina cheese
1/2 cup grated mozzarella cheese
2 tablespoons olive oil
2 tablespoons grated Parmesan

Steps:

  • Prepare pie crust per package directions. Remove from oven and let cool for about 10 minutes. Reduce oven temperature to 375 degrees. Slice the tomatoes and sprinkle with salt and pepper and allow to drain on paper towels for about 30 minutes. Separate egg. Mix yolk with 1/4 cup mayonnaise in a small bowl. Lightly beat the egg white and brush on the pie crust. Sprinkle 1/3 of breadcrumbs on bottom of pie crust. Top with 1/2 of tomato slices and then 1/2 of sliced onions. Drizzle with 1/2 of mayonnaise mixture, 1/2 of thyme and basil, then 1/2 of both cheeses. Use 1/2 of remaining breadcrumbs, and then all of the other layered ingredients in the same order. Top with remaining breadcrumbs, drizzle with olive oil, and finish with grated Parmesan. Bake until bubbly and hot, about 1hour, 15 minutes. Remove from oven and allow to cool for about 30 minutes before slicing. Serve warm or at room temperature.

TOMATO AND ONION PIE

This is really old fashioned food. The only change I have made over the years is to cook the onion-in the original recipes for this it goes in raw (and often stays that way). I went looking for something similar to make, and as I couldn't find anything decided to post it. We are having this as a side with roast pork tonight, but it's good with any roast meat.

2 tablespoons butter, divided,plus extra for greasing
1 large onion, finely sliced
1 teaspoon brown sugar
2 slices bread, processed to crumbs
1 teaspoon mixed Italian herbs
salt & freshly ground black pepper
6 small tomatoes, cored and halved horizontally (about 600g total)

Steps:

  • Melt 1 tablespoon of butter in a small pan, and cook the onion for about 5 minutes or until softened.
  • Add the brown sugar and cook over a low heat for a further 10 minutes or until well softened and caramelized.
  • Meanwhile, use the extra butter to generously grease a 6 cup casserole dish.
  • Place 1/3 breadcrumbs on base.
  • Season with a sprinkle of the Italian herbs and salt and pepper. Place half the halved tomatoes over the crumbs.
  • Cover with all the caramelized onion and a further 1/3 of the crumbs.
  • Season again, and then add the remaining tomato halves.
  • Top with the remain 1/3 crumbs, season again, and then use the remaining 1 tablespoon of butter to dot across the top.
  • Bake in a moderate oven for about 30 minutes, or until cooked through and browned on top.

LAYERED TOMATO & ONION PIE

4 -5 ripe tomatoes, sliced
2 onions, sliced
4 -5 slices bread, blended
salt

1 tablespoon butter

Steps:

  • Preheat oven to 180 degrees celcius.
  • In a round, deep baking dish splinkle a layer of blended bread crumbs on the bottom, followed by a layer of tomato then a layer of onion. Sprinkle a bit of salt and pepper on top.
  • Repeat step 2 until you get to the top of the dish. Finish with a 1cm layer of breadcrumbs. Put the tbs of butter in the middle ontop of the breadcrumbs.
  • Put in oven. Cook for approximately 20-30 minutes. Pie is cooked when tomato and onion have gone soft and breadcrumbs ontop are crispy.
  • Enjoy.

DIJON-TOMATO & SWEET ONION PIE

1 9" pie shell (bottom shell only)
1 medium vidalia onion (or any similar sweet onion such as walla walla, for ex.)
3-4 heirloom tomatoes
1 c cheddar cheese, grated
1 c gruyere cheese, grated
1/2-2/3 c mayonnaise (2/3 cup in original recipe)
1 Tbsp dijon mustard
1 tsp stoneground mustard
cracked black pepper, to taste
10 fresh basil leaves (fresh only!)
pinch sweet paprika

Steps:

  • 1. Preheat oven to 350 degrees. Note: I use a cast iron skillet to prepare the pie. Bake the pie shell until lightly golden, about 15 minutes. Remove from the oven and set aside to cool. Leave the oven on.
  • 2. While the pie crust is cooling, prepare the filling by thinly slicing the onion and tomatoes (or if you prefer you can dice the onions and tomatoes). Arrange the tomato slices on paper towels to absorb excess moisture. My heirloom tomatoes were bursting and almost too ripe for this dish. The end result was my pie was a little watery but a good stint overnight in the refrigerator helped to firm up the pie considerably. Also, before I forget I think the next time I will lightly sautè the onions first before adding them to the pie.
  • 3. In a prep bowl, mix together both cheeses, the mayonnaise, both mustards and a generous pinch of pepper. The mixture should be thick, but spread easily.
  • 4. Spread a thin layer of the cheese mixture over the bottom of the pie shell. Top the mixture with half of the onion slices, then half of the tomato slices, followed by the remaining onions, then the remaining tomatoes.
  • 5. Spread the rest of the cheese mixture over the tomatoes and garnish with a sprinkle of paprika. Bake until browned and bubbly, 40 to 45 minutes. Remove the pie from the oven and let rest for 10-15 minutes. Cut into slices, then top each serving with some of the fresh basil. We served the pie with a simple side of steamed vegetables: green beans, carrots and romanesco.

2 medium tomatoes, peeled
1 small vidalia onion, chopped
1 1/2 tsp dried basil
4 slice bacon, fried crisp and crumbled
3/4 c sharp cheddar cheese, grated

2 Tbsp mayonnaise

  • 1. Preheat oven to 350 degrees F.
  • 2. Slice the peeled tomatoes and drain the slices on paper towels.

TOMATO, SPINACH AND SPRING ONION PIE



Tomato, Spinach and Spring Onion Pie image

Okay, couldn't think of a catchy title. I made this when I was fed-up with 4 little pots on the stove, trying to achieve the desired 5 veggies/fruits a day! Here the thin crust is the carb, then 3 veggies are used for the rest of the pie. All you need add is the meat course. Preparation of the swiss chard is not included in the prep time. Do it earlier in the day or day before.

1 lb puff pastry, defrosted (or less)
3 large eggs
4 ounces spring onions, chopped
2 cups swiss chard, very well drained and as dry as possible
1/2 teaspoon salt
1 teaspoon ground nutmeg
1 cup milk
1 tablespoon flour
3/4 cup grated cheddar cheese
1 teaspoon Tabasco sauce
2 teaspoons chopped crushed garlic
1 lb small tomatoes, preferably rosa
1/4 cup torn basil leaves
olive oil (flavored with garlic) or olive oil flavored cooking spray (flavored with garlic)

Steps:

  • Set oven at 425 deg F/220 deg Celsius.
  • Use a generous pie plate: mine wasn't standard, and measured 7 1/2" across at the bottom, 10 1/2 inches across the top, and was a little more than 2" deep. Any pie dish will do.
  • Roll out the pastry on a floured board, and cut out a generous circle (lay the pie plate upside down on the pastry and cut with a knife in a wide circle around it).
  • Grease the pie plate lightly with oil, then plonk in the pastry and fit without stretching. Crimp the edges.
  • Whisk the 3 eggs, then use a brush and brush the pastry all over with the egg. Keep the beaten eggs.If necessary put the lined pie plate in the fridge.
  • I found lovely purple-bottomed sping onions, but use whatever you have: chop them and scatter evenly into the bottom of the pie plate, to cover. If you don't have spring onions, try rings of sweet onion.
  • In this case I used Swiss Chard, a soft,light green kind, from my own garden, but frozen, cooked and drained is just fine. I called it "spinach" because it's a shorter word, but swiss chard is what I use. If you prepare this early in the day, you can leave it to drain, and press out more liquid before using. Stir in salt and nutmeg.
  • Whenever I make a white sauce, I use a shortcut: put the milk in a small pot, whisk in the tablespoon flour, add a pinch of salt, and then whisk until milk comes to the boil and thickens. So try that here, and you cut out the butter normally used.
  • Pull off the heat, whisk once or twice, then add the cheese, Tabasco and garlic.
  • Stir the cheese sauce into the spinach.
  • Also stir in the egg mixture left over after you "painted" the pastry into the drained swiss chard/spinach. The eggs will help firm up the mixture during baking.
  • Rosa tomatoes are small plum-shaped tomatoes, and they are especially sweet. If you can't get them, use cherry tomatoes or even tomato slices, but in the latter cases, sprinkle over a little sugar. Rosa tomatoes simply explode in the mouth in a burst of sweet flavour.
  • Ladle the swiss chard mixture over the spring onions in the lined pie plate. Scatter the basil leaves over the swiss chard.
  • Pack the rosa tomatoes all over the top. (See my original photograph). If not using rosa, sprinkle over a little sugar.
  • Brush with olive oil or, preferably, spray the tomatoes with an olive oil and garlic spray.
  • Put in the preheated oven. Keep at that high heat for about 10 - 15 mins, then turn heat down to 350 deg.
  • Bake for about 30 mins or more, until pie has risen and is set.
  • Serve hot or warm, in slices, with a main dish of meat and a side salad.

1/2 - 1 cup basil, sliced
1 Vidalia onion, diced
1 cup Cheddar cheese, grated
1 cup mozzarella cheese, grated
1 cup mayonnaise
1/2 pound bacon, cooked and crumbled
Salt and pepper to taste

Steps:

  • Brown the crust in oven as per package instructions for about 8 minutes. Layer tomato slices on the crust. Top with basil and onion. In bowl, combine Cheddar, mozzarella, mayonnaise and bacon. Spread over the tomatoes. Bake uncovered for 15 to 20 minutes, or until browned and bubbly. Allow to cool for 5 to 10 minutes.
