Kittencal's Greek Marinated Tomato, Olive and Feta Salad image

If you love Greek salads you will love this, it's an absolute must made with garden ripe tomatoes! I use the dressing from my recipe#66596 but you may use your own favorite dressing, the cucumber is only optional I like to add some in, plan ahead this salad must be chilled at least 3 hours before serving or up to 6 hours. Serve this salad with crusty bread on the side to dip into the juice, you may also serve the tomatoes with juice on a bed of lettuce.

1/3 cup plus 2 tablespoons Greek salad dressing
3/4 cup feta cheese (broken into small pieces, do not crumble finely)
1 -2 tablespoon chopped fresh parsley
6 large roma tomatoes, chopped
1/2 small cucumber (peeled, seeds removed and chopped) (optional)
3/4 cup kalamata olive (pitted and sliced or use similar brined olives)
1 small red onion, thinly sliced (or to taste)
fresh ground black pepper (to taste)
salt (optional)
crusty bread (to serve on the side)

Steps:

  • In a large glass bowl stir together the dressing with parsley.
  • Add in feta pieces and all remaining ingredients (except black pepper, salt and bread) toss to combine and season with black pepper------ (don't be tempted to add in more than the stated amount of dressing as the tomatoes will release more juice when chilled, you just might find your salad swimming in too much liquid!).
  • Cover and refrigerate for a minimum of 3 hours or up to 6 hours.
  • Serve with crust bread.

Garden tomatoes are good to use in this salad! A very thinly sliced red onion placed on top of the tomatoes can be used if desired. If you love tomatoes you will love this salad...try to use only tarragon vinegar for this.

6 tablespoons tarragon vinegar
2 teaspoons dried oregano
1 tablespoon Dijon mustard
1 shallot, minced
1 teaspoon garlic (or to taste)
1 teaspoon minced fresh ginger
1 cup olive oil
4 -5 large ripe tomatoes, thinly sliced
1/2-3/4 cup kalamata olive, pitted and chopped
1 cup crumbled feta cheese
salt and pepper

Steps:

  • In a bowl combine vinegar, oregano, Dijon, shallots, minced garlic, minced ginger, oil, salt and pepper' whisk to combine.
  • Arrange the tomato slices on a platter, sprinkle lightly with salt and pepper if desired .
  • Sprinkle with chopped olives, then feta cheese.
  • Drizzle with enough dressing to coat.
  • Pass the remaining dressing on the side.
  • Delicious!

A very quick and simple salad I threw together when I couldn't find any greens in the fridge. It turned out delicious. In truth, amounts are guesstimates, dependent on what you have in your fridge!

100 g feta cheese
10 -15 cherry tomatoes
5 -10 green olives
1 tablespoon basil, fresh
10 ml olive oil
salt & pepper

Steps:

  • Cube the Feta.
  • Quarter the cherry tomatoes.
  • Slice the olives.
  • Chop the basil.
  • Mix in a mixing bowl.
  • Sprinkle with olive oil.
  • salt and pepper to taste.
  • If possible, let it stand for 15 minutes to an hour or so before serving, but its great either way!

5 large tomatoes (about 3 pounds), cored, sliced
1 red onion, halved, thinly sliced
1/2 cup olive oil
1/2 cup red wine vinegar
1/4 cup chopped fresh parsley
3 large garlic cloves, finely chopped
4 ounces feta cheese (about 1 generous cup), crumbled
1/3 cup brine-cured olives, preferably Kalamata (optional)

Steps:

  • Overlap tomato and onion slices on large platter. Whisk oil, vinegar, parsley and garlic in small bowl. Season to taste with salt and pepper. Pour over salad. Let stand at room temperature 1 hour or cover and refrigerate up to 3 hours, basting occasionally with dressing.
  • Sprinkle salad with cheese and garnish with olives, if desired.

I had to make this salad two days in a row. When I got home from work yesterday, my husband asked me where I'd hidden the leftovers from the night before because he wanted them for lunch. Well, I'd taken them with me for MY lunch -- so I made another batch last night to go with our chili. The night before that I'd served it with shredded chicken Bobbie-Q (see my recipes) over mashed potatoes. There was a bit left over last night -- and I made sure to leave it for my husband. I brought peanut butter & a cucumber for my lunch instead. *sigh* Anyway, if you do have any of this salad left, use it by the next day.

1/2 cup chopped onion (yellow or sweet)
1 cup diced tomatoes
1/3 cup sliced pimento stuffed olive

2 pieces ginger, peeled (this is subjective. The pieces I cut are about 1/4" thick each)
1 clove garlic
1/2 teaspoon sugar (optional)
salt, to taste
1 tablespoon vinegar, to taste or 2 tablespoons lemon juice
1/4 cup olive oil
2 large ripe tomatoes, chopped (I often use cherry tomatoes)
1/2 onion, chopped
3 -4 sprigs fresh coriander leaves, finely chopped

Steps:

  • Crush ginger using mortar and pestle to make fine paste.
  • Add garlic; crush with ginger.
  • Remove to small bowl; whisk in salt, sugar, vinegar and oil.
  • In bowl, mix tomatoes, onion and coriander.
  • Add salad dressing; toss lightly to coat.
  • Note: I often make this with a couple of cupfuls of cherry tomatoes, halving the larger ones.
