TOMATO NACHO DIP

My friend came up with this recipe. The thick and creamy cheese dip gets its zip from convenient canned green chilies. It's a snap to zap in the microwave.-Rhonda McKee, Greensburg, Kansas

Yield 2-2/3 cups.

Number Of Ingredients 9

1 can (4 ounces) chopped green chilies
1/2 cup chopped onion
2 tablespoons butter
2 tablespoons all-purpose flour
1/2 cup whole milk
1-1/2 cups cubed process American cheese (Velveeta)
1 cup shredded Monterey Jack cheese
1/2 cup chopped fresh tomato
Tortilla chips

Steps:

  • In a 1-1/2-qt. microwave-safe dish, combine the chilies, onion and butter. Cover and microwave on high for 45 seconds or until butter is melted. Stir in flour until smooth. Gradually stir in milk until blended. , Cook, uncovered, on high for 30-60 seconds or until thickened. Add cheeses and tomato. Microwave, uncovered, at 70% power for 1-2 minutes or until cheese is melted. Serve with tortilla chips.

Number Of Ingredients 15

3 tbs. olive or canola oil
1 cup red or yellow onions, finely chopped
4 peppers chopped
6 med. sized garlic cloves, finely chopped
10 small jalapeno peppers seeded and finely chopped
1/2 tsp. crushed red pepper flakes
2 cups corn niblets
3 to 4 tbsp chili powder
2 - 3 tbsp cumin
pepper to taste
juice of 3 large or 6 small limes
16 oz. solid cream cheese
2 cups sour cream
2 cups monterey jack cheese, shredded
2 cups tomatoes finely chopped

Steps:

  • In large saute pan, heat oil and saute onions, peppers, garlic,jalapeno peppers and red pepper flakes a few minutes until slightly softened. Add corn niblets, chili powder, cumin, pepper and lime juice and saute a few minutes more to blend the spices well into mixture. In mixmaster, blend cream cheese until softened. Add sour cream just until blended. fold in Monterey jack cheese, then add this cheese mixture to the vegetable mixture, blending well. Put into shallow cassserole dish. Bake at 350 deg. for about 30 minutes or until heated thru. Can be made a day ahead and refrigerated. Take out a least an hour before reheating. Sprinkly chopped tomatoes over the top. Can also sprinkle chopped cilantro over top before serving.

I found this recipe, years ago, in an issue of Quick Cooking (a Taste of Home spin-off that's been renamed). It's one of the first recipes that I kept, and, having resurrected it, I can see why -- it's easy and delicious!

4 ounce(s) monterey jack, shredded
1/2 cup(s) fresh tomato, chopped
- tortilla chips

Steps:

  • In a 1-½ qt. microwave-safe dish, combine chilies, onion, and butter. Cover and microwave on high for 1-2 minutes or until butter is melted. Stir in flour until smooth. Gradually stir in milk until blended. Cook, uncovered, on high for 1 - 2 minutes or until thickened. Add cheeses and tomato.
  • Microwave, uncovered, at 70% power for 2 - 3 minutes or until cheese is melted. Serve with tortilla chips.
