2 Tbsp. extra-virgin olive oil, plus more for grill
¼ cup apple cider vinegar
¼ cup (packed) light brown sugar
2 Tbsp. honey
2 tsp. Worcestershire sauce
1 tsp. garlic powder
1 tsp. paprika
¼ tsp. cayenne pepper
½ cup plus 2 Tbsp. country-style mustard
5-6 lb. skin-on, bone-in chicken breasts and/or whole legs
2 Tbsp. plus 3 tsp. kosher salt, divided, plus more
2 large sweet onions, sliced into ½"-thick rounds
1 (15-oz.) jar pickled green beans
2 lb. tomatoes, halved if large, sliced into ½"-thick rounds

Steps:

  • Prepare a grill for 2-zone heat (for a charcoal grill, bank two-thirds of coals over one side of grill and scatter remaining coals over the other side; for a gas grill, set one burner to medium-high heat and the remaining burners to medium-low heat). Clean and lightly oil grate.
  • Mix vinegar, brown sugar, honey, Worcestershire, garlic powder, paprika, cayenne, and 1/2 cup mustard in a medium bowl; set aside.
  • Season chicken on all sides with 2 Tbsp. plus 2 tsp. salt. Grill chicken skin side down over direct heat, turning halfway through or whenever there is a flare, until lightly charred, 5-8 minutes. Move chicken to cooler part of grill, cover with lid, and continue to grill, turning several times and keeping covered, until an instant-read thermometer inserted into the thickest part of the breast registers 140°F, 15-20 minutes. The smaller pieces will go more quickly ,and you can transfer them to a rimmed baking sheet until all pieces are ready.
  • Uncover grill and return any pieces from baking sheet back to grill. Using a brush, generously baste chicken with reserved sauce. Continue to grill, turning every 1-2 minutes and basting the other side, until the internal temperature of thickest part of breast registers 155°F and sauce is shiny and lacquered, about 6 minutes. Transfer chicken to a cutting board as pieces are done (again, the smaller pieces will go more quickly). Let rest 10 minutes before separating drumsticks from thighs and slicing chicken breast in half on a bias.
  • While chicken rests, gently toss onions, 2 Tbsp. oil, and 1 tsp. salt in a medium bowl, being careful not to break up onion rounds into rings. Grill over medium-low heat, turning once, until charred on both sides and tender, 10-15 minutes.
  • Whisk 2 Tbsp. bean pickling liquid and remaining 2 Tbsp. mustard in a large bowl. Drain beans and add to bowl. Add tomatoes and grilled onions. Toss to combine; season with salt.
  • Arrange chicken on a large platter and serve with salad alongside.
  • Do Ahead: Sauce can be made 3 days ahead. Cover and chill.

  • Preheat the grill. Whisk together the mustard, honey, horseradish and mint in a bowl and season with salt and pepper, to taste. Let sit at room temperature for at least 15 minutes to allow the flavors to meld.
  • Thread the tomatoes onto skewers and put them into a large bowl. Add the asparagus and drizzle with a little oil. Season with salt and pepper, to taste. Put the tomatoes on the grill and cook until charred on both sides. Grill the asparagus for about 2 minutes per side. Put the vegetables on a platter and drizzle them with the mustard sauce. Serve hot or at room temperature.

½ cup grainy brown mustard
3 large ripe tomatoes, thinly sliced

  • Preheat oven to 375 degrees F (190 degrees C). Fit the pie crust into a 9-inch pie dish. With a fork, poke holes into the bottom of the crust.

2 sprigs lemon thyme
1 box kosher salt

Zest of 1 lemon

1 teaspoon capers
10 nicoise olives
1/4 cup olive oil
2 cloves roasted garlic, minced
1 tomato, finely chopped
Pinch cayenne pepper
1 lemon
1 lime
1 blood orange
1 tablespoon pommary mustard
1/2 cup olive oil
Salt and pepper to taste

Steps:

  • Preheat oven to 450 degrees. Stuff the cavity of the snapper with a sprig of rosemary and thyme. Place the fish on a cookie or sheet pan. In a large bowl mix the box of kosher salt and the citrus zests. Chop a sprig of the rosemary & thyme and mix it with the salt mixture and generously pepper. Add the water to the salt until you can form a semi-crumbly snowball, adding more salt and water if necessary. Pack this salt mixture around the fish (the crust shouldn't be more than a 1/2 an inch thick.) Bake in oven for 25 to 30 minutes. The shell should be solidified and have a faint golden color.;
  • Mix the 6 ingredients in a bowl and let macerate for 20 minutes;
  • Mix the citrus juices and mustard together and slowly emulsify olive oil into it, season.

2-pound piece thick-slab bacon, rind removed, cut into lardons
1 1/2 teaspoons ground cinnamon
1 1/2 teaspoons ground cloves
1 teaspoon freshly ground black pepper
1 teaspoon ground dried thyme
4 ounces bacon fat, cut into pieces
Aged sherry vinegar
Finely chopped fresh flat-leaf parsley, for garnish
Roasted Tomatoes:
3 tablespoons olive oil
2 teaspoons finely chopped fresh thyme leaves
Kosher salt and freshly ground black pepper
2 cups cherry tomatoes
Pinch sugar
Cheese Grits:
2 cups milk
2 cups stone-ground yellow grits
1 1/2 cups grated aged white Cheddar
1/2 cup freshly grated Pecorino-Romano
Hot water to thin grits, if necessary
Sauteed Baby Mustard Greens:
2 tablespoons unsalted butter
Pinch red pepper flakes
1 clove garlic, thinly sliced
1 pound baby mustard greens, washed
Shrimp:
2 tablespoons olive oil
16 colossal shrimp (15 and under) shelled and deveined, tail on

Steps:

  • For the bacon confit: Blot the bacon with paper towels and place in a small roasting dish Combine the cinnamon, cloves, pepper and thyme in a small bowl. Rub the bacon with the spice mixture. Cover and refrigerate for at least 8 hours and up to 12 hours.
  • Melt the bacon fat in a medium saucepan over medium-low heat. Add the bacon and cook slowly until golden brown and crisp on one side, about 10 minutes. Turn the bacon and increase the heat to medium-high. Cook the bacon until crisp, about 10 more minutes. Remove with a slotted spoon to a bowl, drizzle with a splash of vinegar and garnish with parsley. Reserve the bacon fat for the mustard greens.
  • For the roasted tomatoes: Preheat the oven to 325 degrees F. Mix together the oil, thyme and some salt and pepper. Place the tomatoes in a baking dish and drizzle with the oil mixture. Then sprinkle with the sugar. Bake the tomatoes until they are completely softened and start to wrinkle, 30 to 40 minutes.
  • For the cheese grits: Bring 6 cups of water and the milk to a boil in a medium saucepan and season with salt and pepper. Slowly whisk in the grits and bring back to a boil. Reduce the heat to medium and cook, whisking constantly. Cook until mixture is thick and tender, about 30 minutes, adding more water, if needed. Mix in the Cheddar and Pecorino-Romano until thoroughly incorporated. Season with some salt and pepper. Cover and keep warm until ready to serve.
  • For the sauteed baby mustard greens: Heat the butter and 2 tablespoons of the reserved bacon fat in a large saute pan over medium heat. Add the red pepper flakes and garlic and cook until the garlic is softened, about 1 minute. Add the mustard greens and season with salt and pepper. Toss just to coat with the fat. Add a splash of water and cook until the greens are just wilted, about 2 minutes.
  • For the shrimp: Heat the oil in a large saute pan over high heat until it begins to shimmer. Add 8 to 10 shrimp, sprinkle with salt and pepper. Cook until well-seared and crisp but just cooked through, about 2 minutes per side. Repeat with the remaining shrimp.
  • On a serving platter or individual plates, spoon and slightly spread a mound of hot grits (if they have gotten too stiff, thin them a bit by whisking in hot water over low heat). Spoon the tomatoes on top, then add the greens and bacon. Top with the shrimp.

  • In a blender blend together the shallot, the mustard, the vinegar, and salt and pepper to taste, with the motor running add the oil in a stream, and blend the dressing until it is emulsified. The dressing may be made 2 days in advance and kept chilled in a tightly sealed jar.
  • In a large saucepan combine the potatoes with enough water to cover them by 1 inch and simmer them for 20 minutes, or until they are tender. Drain the potatoes, peel them, and let them cool. Slice the potatoes 1/4 inch thick and arrange them decoratively on a platter with the tomatoes, cut into wedges, and the mustard greens.   • Preheat oven to 375°.
  • Grease tart pan or pie pan and put in crust.

The low-fat crust is like a German Quark-Oelteig which I make with Greek yogurt (easier to find in the United States than quark, and less expensive).

2 tablespoons milk
2 tablespoons canola oil
1 ⅓ cups all-purpose flour

3 medium tomatoes, cut into 1/2-inch slices
¼ cup extra virgin olive oil

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Generously oil a muffin pan.
  • Whisk Greek yogurt, milk, and oil together in a bowl until well combined. Add flour, baking powder, and salt; stir until everything holds together.
  • Transfer mixture onto a lightly floured countertop and knead dough until smooth. Divide dough into 12 equal portions with floured hands. Shape each piece to fit in the bottom of a muffin cup, place into the muffin cups and gently push down with your fingertips to form 1/2-inch high sides.

1/2 cup canola oil
1 pound cleaned squid, both bodies and tentacles, with bodies halved lengthwise, then cut crosswise into thirds
1 teaspoon minced garlic
2 jalapeño peppers, stemmed, seeded and julienned
2 cups coarsely chopped tomatoes
1/4 cup chicken stock, optional
1 tablespoon rice wine
2 teaspoons fish sauce, more as needed
1/2 cup loosely packed chopped pickled mustard greens, homemade or store-bought, rinsed, or any Asian pickled green
1 cup scallions, cut in 1 1/2-inch batons

Steps:

  • Heat a wok over high heat until metal has a matte appearance and a drop or two of water flicked onto surface evaporates on contact. Add the oil and heat until smoking; it should register 350 degrees on a deep-frying thermometer. Add half of the squid and cook, stirring constantly, for 30 seconds. With a slotted spoon, transfer squid to a plate. Let oil return to temperature, then cook remaining squid the same way and add to plate.
  • Pour off all but 2 tablespoons oil from the wok. Return wok to high heat. When oil shimmers, add garlic and jalapeños and cook, stirring constantly, for 5 seconds. Add tomatoes, stock (or 1/4 cup water), wine and fish sauce and cook, stirring occasionally, for about 5 minutes, until tomatoes have begun to break down and sauce has started to thicken.
  • Stir in mustard greens and continue cooking, stirring occasionally, for 5 minutes longer. Stir in squid and scallions and cook for 2 minutes more, until scallions are just softened. Taste and adjust seasoning with fish sauce. Transfer to a plate and serve immediately.

2 -pound piece thick-slab bacon, rind removed, cut into lardons
1 1/2 teaspoons ground cinnamon
1 1/2 teaspoons ground cloves
1 teaspoon freshly ground black pepper
1 teaspoon ground dried thyme
4 ounces bacon fat, cut into pieces
Aged sherry vinegar
Finely chopped fresh flat-leaf parsley, for garnish
3 tablespoons olive oil
2 teaspoons finely chopped fresh thyme leaves
Kosher salt and freshly ground black pepper
2 cups cherry tomatoes
Pinch sugar
2 cups milk
Kosher salt and freshly ground black pepper
2 cups stone-ground yellow grits
1 1/2 cups grated aged white Cheddar
1/2 cup freshly grated Pecorino-Romano
Hot water to thin grits, if necessary
2 tablespoons unsalted butter
Pinch red pepper flakes
1 clove garlic, thinly sliced
1 pound baby mustard greens, washed
Kosher salt and freshly ground black pepper
2 tablespoons olive oil
16 colossal shrimp (15 and under) shelled and deveined, tail on
Kosher salt and freshly ground black pepper

Steps:

  • For the bacon confit: Blot the bacon with paper towels and place in a small roasting dish Combine the cinnamon, cloves, pepper and thyme in a small bowl. Rub the bacon with the spice mixture. Cover and refrigerate for at least 8 hours and up to 12 hours.
  • Melt the bacon fat in a medium saucepan over medium-low heat. Add the bacon and cook slowly until golden brown and crisp on one side, about 10 minutes. Turn the bacon and increase the heat to medium-high. Cook the bacon until crisp, about 10 more minutes. Remove with a slotted spoon to a bowl, drizzle with a splash of vinegar and garnish with parsley. Reserve the bacon fat for the mustard greens.
  • For the roasted tomatoes: Preheat the oven to 325 degrees F. Mix together the oil, thyme and some salt and pepper. Place the tomatoes in a baking dish and drizzle with the oil mixture. Then sprinkle with the sugar. Bake the tomatoes until they are completely softened and start to wrinkle, 30 to 40 minutes.
  • For the cheese grits: Bring 6 cups of water and the milk to a boil in a medium saucepan and season with salt and pepper. Slowly whisk in the grits and bring back to a boil. Reduce the heat to medium and cook, whisking constantly. Cook until mixture is thick and tender, about 30 minutes, adding more water, if needed. Mix in the Cheddar and Pecorino-Romano until thoroughly incorporated. Season with some salt and pepper. Cover and keep warm until ready to serve.
  • For the sauteed baby mustard greens: Heat the butter and 2 tablespoons of the reserved bacon fat in a large saute pan over medium heat. Add the red pepper flakes and garlic and cook until the garlic is softened, about 1 minute. Add the mustard greens and season with salt and pepper. Toss just to coat with the fat. Add a splash of water and cook until the greens are just wilted, about 2 minutes.
  • For the shrimp: Heat the oil in a large saute pan over high heat until it begins to shimmer. Add 8 to 10 shrimp, sprinkle with salt and pepper. Cook until well-seared and crisp but just cooked through, about 2 minutes per side. Repeat with the remaining shrimp.
  • On a serving platter or individual plates, spoon and slightly spread a mound of hot grits (if they have gotten too stiff, thin them a bit by whisking in hot water over low heat). Spoon the tomatoes on top, then add the greens and bacon. Top with the shrimp.

1/2 cup plain nonfat yogurt
1 1/2 teaspoons dried basil
1 1/2 teaspoons prepared horseradish
1 teaspoon olive oil
1 teaspoon grated parmesan cheese
1/2 teaspoon red wine vinegar
1/4 teaspoon Dijon mustard
1/8 teaspoon sugar
1/8 teaspoon salt
1/8 teaspoon pepper
4 romaine lettuce leaves
2 large ripe tomatoes, chopped just before serving

Steps:

  • In a small bowl, combine all ingredients, except lettuce and tomato. Mix well. Chill several hours to blend flavors.
  • To serve, arrange lettuce leaves on four individual serving plates. Chop tomato and pile on lettuce. Spoon dressing over tomatoes, allowing 2 tablespoonfulls for each serving.
  • Serve right away.

4 ounces parmesan cheese, grated
1 cup fresh breadcrumb
1/4 teaspoon creole seasoning (Emeril's preferred, Emeril's Essence, your own recipe or store bought)
1/2 cup butter
1 teaspoon olive oil
1 teaspoon garlic, peeled and minced
2 teaspoons shallots, peeled and minced
8 roma tomatoes, peeled, seeded and diced
1/2 teaspoon creole seasoning (Emeril's preferred, Emeril's Essence, your own recipe or store bought)
2 tablespoons creole mustard
1 lb andouille sausage, chopped
1 tablespoon olive oil
1 cup onion, peeled and chopped
1/2 cup red bell pepper, seeded and diced
1/2 cup green bell pepper, seeded and diced
1 lb shrimp, peeled and chopped
28 ounces cream cheese, room temperature
4 ounces gouda cheese, grated
1/2 cup heavy cream or 1/2 cup whipping cream
4 eggs, beaten

Steps:

  • To make the crust: Combine the parmesan cheese, bread crumbs and seasoning.
  • Add butter and mix just until the ingredients are moist, without overmixing.
  • Press into the bottom of a 9" springform pan; set to the side.
  • To make the coulis: Heat the oil in a medium saucepan and saute the garlic and shallots until tender.
  • Add the tomatoes and cook for five minutes.
  • Add seasoning and mustard.
  • Whirl mixture in food processor or blender and strain; let cool until needed.
  • To make the filling: Preheat the oven to 350°F.
  • In a large skillet, cook the sausage; drain off fat.
  • In another pan, heat the olive oil and saute the onions, pepper and shrimp until the onions are translucent, about three minutes; set to the side.
  • Beat the cheeses in a bowl until smooth.
  • Add the cream, cooked sausage and vegetable mixture; blend in the eggs.
  • Pour into the crust and place the springform pan into a larger pan; add an inch of warm water and bake for a 65 minutes or until set (the cheesecake should feel firm when lightly touched).
  • To serve, pour a little coulis onto serving plate; place a slice of cheesecake on top.

I learned to make Jalapeno Honey Mustard with Sun Dried Tomatoes from a friend in California back in the 1990's. I used to on my baked chicken and found it amazing. Its very spicy so go carefully with the sauce. But if you love hot and spicy you should try this.

3 pound(s) boneless, skinless chicken breasts
3 tablespoon(s) melted butter
1 cup(s) jalapeno honey mustard with sun dried tomatoes, use recipe link below or any honey mustard of your choice
1/2 cup(s) or less water to thin mustard

Steps:

  • Place chicken breasts in a 9 by 13 inch pan or an oven safe casserole dish. Drizzle with melted butter. Thin Jalapeno Honey Mustard with Sun Dried Tomatoes until it is easily pour-able. Drizzle this over chicken. NOTE: If you do not want to make your own mustard you can use any commercial honey mustard and add some chopped jalapeno to taste.
  • Bake in a 350 degree oven for 30 minutes or until chicken is cooked through. Garnish with chopped sun dried tomatoes, jalapeno, or chopped parsley. Serve hot with rice.

1 medium tomatoes, diced (1/4-inch dice is perfect)
1 -2 garlic clove, chopped fine
1 tablespoon Dijon mustard (Grey Poupon is perfect)
1 -2 teaspoon capers
salt and pepper

Steps:

  • Heat oil in sauté pan over medium heat. Add diced tomato and let start to cook down, about 4-6 minutes.
  • When the tomatoes are half cooked through add the mustard, capers, garlic. Cook until heated through and tomatoes are cook through.
  • Spoon over fish or chicken.

  • In small bowl stir together Dijon-style mustard blend and dry mustard until well combined.
  • Gently stir in tomatoes.
  • Cover and refrigerate up to 24 hours.
  • Note: To peel tomatoes easily: using kitchen tongs or a fork, gently lower tomato into boiling water for 30 seconds or until skins split.
  • Dip in cold water or rinse under a running faucet.
  • Remove skin.
