This was for the Italian category for Zaar World Tour. Haven't made this yet but I have had it many times at Panera and its wonderful. Great when summer tomatoes and basil are bountiful!

1 loaf focaccia bread
5 -6 ripe tomatoes, chopped
2 tablespoons chopped fresh basil
red onion, sliced paper thin
4 ounces fresh mozzarella cheese, cut into cubes
balsamic vinaigrette

Steps:

  • Cut bread into four wedges, place on plate. Gently toss tomatoes, basil and red onion together. Place 1/4 mixture on each wedge of bread, top with 1/4 of cheese cubes. Pour about 2 ounce of dressing over each.
  • Serves 4 or it can be divided to serve 8 as a side dish.

Number Of Ingredients 10

6 ounces day-old Tuscan bread (or equivalent)
1 pound ripe field tomatoes
3 ounces red onion (about 1/2 cup)
5 ounces unsalted, fresh mozzarella
16 oil-cured olives
15 large basil leaves
2 tablespoons olive oil
3 tablespoons white-wine vinegar
1/8 teaspoon salt
Freshly ground black pepper to taste

Steps:

  • Soak the bread quickly in a bowl of cold water, just enough to moisten it. Squeeze it to remove excess moisture.
  • Wash, trim and chop tomatoes into chunks. Place in a large serving bowl.
  • Cut the red onion into matchstick lengths; add to bowl.
  • Cut mozzarella into small cubes and add to bowl.
  • Pit olives and add to bowl.
  • Wash, dry and cut basil into strips and add to bowl.
  • Break bread into bite-size pieces and add to bowl.
  • Sprinkle with oil and vinegar; season with salt and pepper, and mix thoroughly.

Tomato, Mozzarella, and Bread Salad image

A rich, delicious vehicle for showcasing summer's wonderful tomatoes, this salad is an enticing partner for light pasta dishes or pasta salads. See the menu accompanying Farfalle with Mushrooms (page 76).

Number Of Ingredients 6

2 cups diced day-old Italian bread
1 1/2 to 2 pounds flavorful tomatoes, diced
4 ounces fresh mozzarella cheese, finely diced
4 to 6 fresh basil leaves, thinly sliced
2 tablespoons extra-virgin olive oil
Salt to taste

Steps:

  • Preheat the oven or toaster oven to 300°F.
  • Arrange the diced bread in a single layer on a baking sheet and bake until dry and crisp, stirring occasionally, 15 or 20 minutes.
  • Combine the remaining ingredients in a serving bowl and toss together. Just before serving, toss in the bread.
