A great way to serve tomato mozzarella salad. Great presentation; always a hit! You can find the bite-sized mozzarella ('Bocconcini') at most supermarkets. If they are on the larger side, cut them in half.

20 grape or cherry tomatoes, halved
20 fresh basil leaves
20 small balls fresh mozzarella cheese (often labeled bocconcini)
salt and pepper to taste
½ cup balsamic vinegar
¼ cup extra virgin olive oil
20 toothpicks

Steps:

  • Using a toothpick, spear a half of a tomato, a leaf of basil, a mozzarella ball, and another half of a tomato. Repeat with remaining ingredients.
  • Place on a serving dish and sprinkle with salt and pepper. Mix the vinegar and oil together in a small bowl to serve as a dipping sauce.

Tasty Tomato, Basil & Mozzarella Bites image

Have you ever had one of those super awesome hors d'oeuvres at a party or wedding and then found yourself wanting that same thing every day for the next month? Well... this is one of those dishes. It's fresh, garlicky, balsamicky, and it's pretty!

1 whole wheat baguette
4-5 roma tomatoes
1 bunch fresh basil
1/2 lb mozzarella cheese, the fancy kind
1 medium-large red onion
3 Tbsp balsamic vinegar
1/4 c extra virgin olive oil
1 Tbsp of each: minced garlic, italian seasoning, grated parmesan cheese
1 Tbsp margerine or butter
1 Tbsp sugar
salt and pepper to taste

Steps:

  • 1. Slice the baguette about a 1/4-1/2 inch thick, you'll and get about 26-30 slices. Slice the tomatoes, making sure to get enough for 1 per crostini. Slice the mozzarella cheese about the same size as the tomatoes, maybe a little thinner.
  • 2. Very thinly slice the onion. Toss them in a warm saucepan with 1 tbsp of margerine, the sugar and salt & pepper to taste. After about 2 minutes of tossing, dump the balsamic vineger in the pot, stir, and cover for another few minutes before stirring again. Repeat until the onions are purple and very soft.
  • 3. In a small bowl, combine the oil, garlic, parmesan, and seasonings and microwave for about 1 minute. This will infuse the oil. Brush each slice and broil for a couple minutes- until edges are brown.
  • 4. On each slice, put a tomato, followed by a small piece of basil, then a piece of the mozzarella. Lastly, top with a few of the balsamic onions and shake a small amount of parmesan on the whole platter. Eat them right away or you might not get any!
