2 cups elbow macaroni (uncooked)
28 ounces canned, whole tomatoes (with the juices)
3 Tablespoons sugar
1/2 teaspoon salt
2 - 3 Tablespoons butter

Steps:

  • Cook elbow macaroni in boiling, salted water according to package instructions. Drain well.
  • In a large skillet, pour in tomatoes, breaking them up in bite-sized chunks using a meat chopper or your clean hands.
  • Add cooked macaroni, sugar and salt; bring to a simmer over medium heat, stirring occasionally.
  • Once simmering, lower heat and add butter, stirring until melted.
  • Taste, and add black pepper and additional salt if desired. Tastes great served with buttered bread.

1 pound Italian pork sausage, casings removed
One 28-ounce can chopped tomatoes
2 cups macaroni noodles
1 1/2 cups vegetable or chicken stock
3/4 cup peas, fresh or frozen
Kosher salt and freshly ground black pepper
1 cup shredded cheese (I like a mix of Parmesan and mozzarella!)
A handful of fresh parsley or torn basil, for garnish, optional

Steps:

  • Heat a large pot over medium-high heat. Add the sausage and cook, breaking it up with a wooden spoon, until browned and cooked through, about 7 minutes. Add the chopped tomatoes, noodles and stock and bring to a boil. Reduce to a simmer, cover and cook, stirring occasionally, until the noodles are tender, 25 to 30 minutes. Stir in the peas (if they're frozen, they'll thaw pretty much immediately when stirred in). Season with salt and pepper. Top with cheese and herbs, if desired.

1 (8 ounce) package macaroni
1 tablespoon butter
1 teaspoon bacon grease
1 (8 ounce) can tomato sauce
1 (14.5 ounce) can chopped stewed tomatoes, with juice
½ teaspoon white sugar
salt and ground black pepper to taste

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the macaroni, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 8 minutes. Drain well in a colander set in the sink.
  • Pour the macaroni into a saucepan and place over medium heat; stir in the butter, bacon grease, tomato sauce, stewed tomatoes with juice, and sugar; season with salt and pepper. Stir while cooking until butter and bacon grease has melted and incorporated completely, 5 to 10 minutes; remove from heat, cover, and allow to sit about 20 minutes before serving.

This is a hotdish my mother thought of. It's an easy, quick, and tasty meal that will satisfy almost everyone.

1 (14 ounce) package macaroni and cheese mix
1 ½ pounds ground beef
½ cup chopped green bell pepper
½ cup chopped onion
1 teaspoon salt
1 teaspoon cayenne pepper
1 (10 ounce) can diced tomatoes with green chile peppers (such as RO*TEL®)
3 slices American cheese, or more to taste

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
  • Bring a large pot of lightly salted water to a boil. Cook macaroni noodles, without the cheese powder packet, until almost tender and firm to the bite, about 7 minutes.
  • In the meantime, heat a large skillet over medium-high heat. Add beef, bell pepper, and onion; cook until beef is browned and crumbly, 6 to 7 minutes. Season with salt and cayenne pepper. Drain and discard grease if desired.
  • Drain macaroni and place in a casserole dish. Add the cheese powder packet, diced tomatoes with green chiles, and the sauteed beef and vegetables. Stir well. Lay American cheese slices on top, covering filling as well as possible.
  • Bake in the preheated oven until piping hot throughout and cheese is melted, 15 to 20 minutes. Let cool briefly before serving.

1 (16 ounce) package elbow macaroni
1 (28 ounce) can petite diced tomatoes
6 tablespoons butter
¼ cup flour
1 quart half-and-half
2 cups chicken broth
4 cups shredded mild Cheddar cheese
2 cups shredded sharp white Cheddar cheese
fresh ground black pepper to taste
1 sleeve buttery round crackers (such as Ritz®), crushed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter a baking dish.
  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes; drain, return macaroni to pot, and stir tomatoes into the macaroni. Cook over medium heat until the macaroni absorbs some of the liquid from the tomatoes, about 4 minutes. Remove from heat.
  • Melt butter in a large saucepan over medium-high heat. Stir flour into melted butter and cook until bubbly, 1 to 2 minutes. Slowly stream half-and-half and chicken broth into the butter mixture while stirring. Bring the mixture to a boil and continue to cook while stirring continually until thickened and bubbly, 2 to 3 minutes.
  • Remove saucepan from heat. Melt mild Cheddar cheese and sharp Cheddar cheese into the butter mixture one handful at a time, stirring to incorporate each addition before adding the next. Season the cheese mixture with pepper and pour over the macaroni; stir to coat pasta evenly. Transfer the mixture to the prepared baking dish and top with crushed crackers.
  • Bake in preheated oven until crust is golden brown and the liquid is bubbling, 15 to 20 minutes. Cool 10 minutes before serving.

4 cups cooked elbow macaroni
1 can (14-1/2 ounces) diced tomatoes, drained
1 can (10 ounces) diced tomatoes and green chilies, undrained
1 cup shredded Colby-Monterey Jack cheese, divided
6 bacon strips, cooked and crumbled

Steps:

  • In a greased 11x7-in. microwave-safe dish, combine the macaroni, tomatoes and 3/4 cup cheese; mix well. Cover and microwave on high for 2 to 2-1/2 minutes; stir. Cover and heat 45 seconds longer. , Sprinkle with bacon and remaining cheese. Microwave, uncovered, for 20-40 seconds longer or until cheese is melted. Let stand for 5 minutes before serving.

This is another of my favorite Minnesota hotdishes. Once again, this is my mom's recipe that she used to make when I was a kid.

Number Of Ingredients 6

1 lb ground beef (you can also substitute your favorite "other" ground meat)
2 cups elbow macaroni, uncooked (or 3 cups if you want it to go farther)
1 (28 ounce) can diced tomatoes, do not drain (you can also use crushed if you like bigger pieces of tomato)
1 (14 ounce) can sweet corn
2 (10 ounce) cans condensed tomato soup
1 medium onion, chopped (whatever your favorite kind, I use white onions)

Steps:

  • Brown ground beef and drain off grease.
  • Cook macaroni according to package directions.
  • In a large pot or casserole, combine ground beef, noodles, tomatoes, corn and soup (use soup as is from the can, do NOT add anything to it).
  • Simmer in large pot on stove, or bake at 350 degrees in casserole dish until heated all the way through.
  • Top with your favorite variety of shredded cheese before serving.

1 (8 ounce) can tomato sauce
8 ounces uncooked elbow macaroni or 8 ounces bow tie pasta
8 ounces shredded mozzarella cheese

  • Cook noodles until al dente, 8-10 minutes, and drain.
  • Preheat oven to 350°F.
  • Cook ground beef with garlic, oregano, basil, onion, green pepper, and salt and pepper until beef is browned, cooked through, and veggies are tender.
