2 tablespoons butter
2 tablespoons olive oil
4 cloves garlic, minced
1 medium onion, finely diced
Two 15-ounce cans tomato sauce or marinara sauce
Dash of sugar (or more to taste)
Salt and freshly ground black pepper
1 1/2 pounds fettuccine
1 cup heavy cream
Grated Parmesan or Romano, as needed
Chopped fresh basil, for serving

Steps:

  • Heat the butter and oil in a large skillet over medium heat. Add the garlic and onions and saute for a minute or so. Pour in the tomato sauce, add sugar, salt and pepper to taste and stir. Cook over low heat for 25 to 30 minutes, stirring occasionally.
  • Cook the pasta according to the package directions. Drain, reserving 1 cup of pasta water.
  • Remove the sauce from the heat and stir in the cream. Add cheese to taste, then check the seasoning. Stir in the pasta and thin with a little pasta water if needed. Add the chopped basil and serve immediately.

4 large garlic cloves, finely chopped
1 cup chopped drained oil-packed sun-dried tomatoes
1 cup whipping cream
1 7.25-ounce jar roasted red peppers, drained, chopped
1/2 teaspoon dried crushed red pepper
1 cup chopped fresh basil leaves
1 pound penne pasta
1 cup freshly grated Parmesan cheese

Steps:

  • Heat oil in heavy medium saucepan over medium heat. Add garlic; sauté 1 minute. Add tomatoes, cream, red peppers and crushed red pepper; simmer over medium heat 2 minutes. Stir in 1/2 cup basil and simmer 1 minute longer.
  • Cook pasta in large pot of boiling salted water until tender but still firm to bite, stirring occasionally. Drain, reserving 3/4 cup pasta cooking liquid. Return pasta to pot. Add sauce, cheese and 1/2 cup basil and toss to coat. Add enough reserved cooking liquid to pasta to moisten if dry. Season with salt and pepper.

I got this recipe through a recipe exchange with a friend and it is very good! It does have quiet a few steps and ingredients but it is definitely worth it.

1/4 cup kosher salt
1 lb linguine
2 tablespoons unsalted butter
1 tablespoon olive oil
1 lb large shrimp, peeled and deveined
2 tablespoons creole seasoning
1 1/2 teaspoons salt
1 cup finely chopped onion
1/4 cup jalapeno, finely chopped
1 tablespoon garlic, minced
1 1/2 cups heavy cream
1/2 teaspoon fresh ground black pepper
1 cup diced tomato
1/2 cup reserved pasta cooking water
1 cup monterey jack pepper cheese, grated
1/4 cup parmesan cheese, grated
2 tablespoons basil leaves, chopped

Steps:

  • Set a large 1-gallon stock pot of water to a boil and add the kosher salt. Place the linguine in the pot and stir the pot until the water returns to a boil. Cook the pasta until tender, but with a bit of resistance (al dente), about 12 minutes. Drain and reserve 1/2 cup pasta water.
  • While the pasta cooks, prepare the sauce. Set a 12-inch saute pan over medium-high heat. Add the butter and olive oil to the pan. Once the butter has melted, season the shrimp with 1 tablespoon of the creole seasoning and 1/4 teaspoon of the salt and add the shrimp to the pan. Sear the shrimp until well browned on both sides, about 2 minutes. Remove from the pan and set aside.
  • Add the onions and jalapenos to the pan and saute until the onions are softened and lightly caramelized, about 4 to 5 minutes. Add the garlic to the pan and saute until fragrant, about 30 seconds. Add the cream, remaining 1 tablespoon of creole seasoning, remaining 1 1/4 teaspoons of the salt and the pepper to the pan and bring to a boil. Cook the sauce until the cream is reduced by half, about 2 minutes.
  • Return the shrimp to the pan, and add the tomatoes, linguine and the reserved cooking water to the pan and cook, tossing to incorporate for 3 to 5 minutes. Remove pan from the heat and add the Pepper Jack, Parmesan and basil and toss to blend. Serve immediately.

1 1/2 pound penne rigate or bow tie pasta
3 tablespoons extra-virgin olive oil
1/2 pound shiitake mushrooms, stemmed and sliced
2 large shallots, chopped
3 to 4 cloves garlic, finely chopped or grated
A pinch or 2 crushed red pepper flakes
1/2 cup dry sherry
1/2 cup chicken stock or seafood stock
1 (15-ounce) can crushed tomatoes
1 pound shelled, cooked or raw bulk lobster pieces
1 teaspoon lemon zest
Salt and freshly ground black pepper
1/2 cup cream
A handful chopped chives or parsley or both

Steps:

  • In a large saucepan boil water for the pasta. When water begins to boil add salt liberally, let water return to a boil and cook pasta to al dente. Drain.
  • Heat a large skillet over medium heat with olive oil, 3 turns of the pan. Add mushrooms, shallots and garlic, red pepper flakes and saute 5 minutes. Deglaze the pan with sherry, stir in stock and tomatoes and bring to a bubble. If using raw seafood, season with lemon zest, salt, and pepper. Raise the heat a bit then add the seasoned seafood and heat through or cook until just about firm and opaque, a couple of minutes. If using cooked seafood, season the seafood when you add it to skillet with lemon zest, salt and pepper.
  • Stir in heavy cream and toss hot pasta with sauce and chives and/or parsley, adjust seasoning and serve.

3 tablespoons olive oil
1 clove garlic, chopped
2 medium-size zucchini, sliced 1/4 inch thick
3 medium-size tomatoes, peeled, seeded and diced
1 cup tomato sauce, canned or fresh
Salt to taste
1 teaspoon sugar (optional)
2 tablespoons heavy cream
1 tablespoon Parmesan cheese
1 pound of linguine or fresh egg noodles

Steps:

  • Add oil to skillet. When oil is hot, add the garlic and saute 30 seconds.
  • Add zucchini and stir-fry two minutes.
  • Add tomatoes and saute for three minutes. Then add tomato sauce and simmer for 10 minutes. Taste first and, if necessary, add salt and sugar. (Mr. Perlman suggests adding the sugar only to counteract the acidity of the tomatoes.)
  • Just before serving, add heavy cream and Parmesan cheese; cook for five minutes. Serve with the pasta prepared al dente.

Spicy Tomato Cream Sauce Pasta w/ Italian Sausage image

This is a combination of a couple of different recipes that I have combined. Make it spicy or not up to you. The spicier the better in my house.

1 1/2 lb hot italian sausage
1 box penne, mostaccioli, fettucini or linguini
1 large onion
1 pt heavy cream
1 1/2 c chicken broth
28 oz canned crushed tomatoes
1 can(s) tomato paste
5 clove garlic minced
1 Tbsp cajun seasoning
1/2 tsp salt
1 tsp black pepper
1 c parmesan cheese
3 Tbsp butter

Steps:

  • 1. While cooking sauce cook your pasta al dente and drain. Dice and caramelize onion in butter. Add Italian sausage to onions and brown. If in casings remove from casings. When sausage is browned add garlic and cook for another minute or two. Drain excess fat if you want to. I leave it in and dish does not come out greasy.
  • 2. Add chicken broth to sausage mixture and simmer for about 5 minutes. Now add crushed tomatoes, paste, salt, pepper, and a heaping tablespoon of cajun seasoning (if wanting it milder just add a teaspoon or two and use mild sausage). Let simmer for a few more minutes. Add heavy cream and simmer for a couple of minutes.
  • 3. Now add pasta and parmesan cheese to sauce and let simmer for 5 minutes. We prefer this recipe with mostaccioli pasta, but I have made it with several different types of pasta and it has been good with all of them. So just use your favorite.
  • 4. This recipe started from TRACY JOYNER's recipe on here. As I stated in the description I have combined a couple of recipes with Tracy's to come up with this. I wanted to make sure Tracy got credit for being the inspiration of this dish.

3/4 cup roasted red pepper, drained and patted dry
1 tablespoon olive oil

1 cup carnation 2% evaporated milk
3/4 lb short pasta (penne, fusilli, or farfelle)
1/4 cup fresh basil, chopped

Steps:

  • Purée tomatoes and roasted peppers in blender, food processor or with immersion blender. Reserve.
  • Heat olive oil in a large deep skillet on medium heat. Add garlic and red pepper flakes. Cook gently for 1-2 minutes until fragrant. Add pureed tomatoes and roasted peppers. Bring to a boil on medium-high heat. Lower temperature and simmer for 15 minutes, until starting to thicken. Remove garlic cloves. Add Carnation 2% Evaporated Milk and cook for an additional 5 minutes. Taste and adjust seasonings if necessary.
  • Meanwhile, cook pasta according to package directions.
  • Add pasta and basil to sauce in skillet. Toss over very low heat to combine. Serve immediately.
  • TIPS: Sprinkle with Parmesan cheese.
  • For another idea, try using other pastas such as gnocchi, tortellini or ravioli.

1 garlic clove
8 sun-dried tomatoes, large chopped (I used bottled, drained)
12 black olives, pitted (about 1/4 cup)
7 ounces canned tuna, drained
2 cups marinara sauce
1/2 cup cream
2 tablespoons flat leaf parsley, chopped fine
12 ounces pasta, such as penne or 12 ounces farfalle pasta, cooked al dente

Steps:

  • Note: I make my marinara with a bit of olive oil, garlic, canned tomato puree, a bit of Tobasco, basil, salt and pepper. It went great with this recipe.
  • Heat the oil in a frying pan. Add the garlic, sun-dried tomatoes and black olives. Cook a bit. Pour in the marinara sauce and cook for a few minutes. Add the tuna to the sauce. Cook for another minute. Add the cream and cook on high heat until the sauce is hot but not boiling. Add the pasta and finish cooking directly in the sauce. Sprinkle the dish with the parsley. Serve immediately. Buon appetito!

250 g penne pasta
1 tablespoon olive oil
600 g mild Italian pork sausage, casings removed and cut into pieces
200 g mushrooms, sliced
1 tablespoon butter
1/2 large onion, finely diced
1 garlic clove, crushed
1/2 cup chopped sun-dried tomato
1/2 cup water or 1/2 cup low-fat chicken broth
3 cups bottled pasta sauce
4 spring onions, chopped
1 cup smooth ricotta cheese
1/2 cup grated parmesan cheese
salt & freshly ground black pepper

Steps:

  • Bring 4-5 litres of water to the boil in a large pasta pot. Add pasta, stir to separate and cook for 10-12 minutes or until pasta is tender. Drain well and place in a large mixing bowl.
  • Heat oil in a large pan over high heat. Add the sausage pieces to the pan and cook for 3-4 minutes or until golden and cooked through. Remove and set aside. Add mushrooms to pan and cook over high heat until cooked, about 3-4 minutes. Set aside with sausages.
  • Reduce heat and add butter to pan. Add onion and garlic and cook gently for 2-3 minutes or until softenened. Add the semi dried tomatoes, water or stock. Return sausage and mushrooms to pan, with pasta, tomato sauce and spring onions. Toss well to combine then transfer half the mixture to a large well-greased baking dish (approximately 2 litre capacity).
  • Dollop ricotta over pasta then top with the remaining sausage mixture and scatter with parmesan cheese.
  • Bake in a preheated 200°C oven for 20 minutes.

1 cup half-and-half

4 cups fresh spinach (I imagine frozen would work just as well too)
1 (14 1/2 ounce) can diced tomatoes
1/2 cup rose wine (or whatever you prefer)
8 ounces cream cheese
1 cup Italian cheese blend
1 tablespoon dried basil
1 tablespoon garlic powder

Steps:

  • Prepare pasta according to package directions. Meanwhile, brown sausage over medium-high heat in a large skillet with garlic and basil. Add spinach and stir until wilted. Pour wine into skillet and deglaze pan. Add tomatoes, and continue cooking until mixture starts to boil again. Turn heat to medium-low and add cream cheese. Stir until all cream cheese is melted and add Italian cheese. Drain pasta and add to skillet. Serve immediately.

8 ounces pasta
1/2 cup yogurt, room temperature
1 ounce goat cheese
1/4 cup mozzarella cheese, shredded
4 tablespoons sun-dried tomato pesto
1/4 cup parsley, garnish
1/4 cup grated parmesan cheese, garnish

Steps:

  • Cook pasta al dente, reserve liquid and set aside. Most anything works, from linguine to penne.
  • In a large bowl, mix room temperature Greek yogurt, goat cheese, and mozzarella, stirring to combine.
  • Ladle some reserved pasta water into cheeses to thin it out to make the sauce.
  • Once sauce is proper consistency, adjust seasoning.
  • Ladle over individual plates of pasta, tossing to coat every strand.
  • Incorporate any cooked, sliced protein, portion of protein and/or vegetables if desired.
  • Sprinkle parmesan and fresh parsley on each plate for garnish.
  • Serve with fresh salad and bread.

1 1/2 lb Bay scallops
1 tb Butter
1/2 c Dry white wine
2 tb Minced shallots
1 tb Chives
1 t Minced garlic
2 tb Minced red bell pepper
1/4 c Shredded fresh basil
1 c Heavy cream
2 c Cooked pasta shells
Salt & Pepper -- to taste
2 Ripe tomatos
1 Gallon boiling water

Steps:

  • Plunge the tomatos into the water for 10 to 15 seconds or until the skin just begins to show a tiny split or two. Remove and let cool for a second or two and then peel the tomato under running water. Slice into halves and gently squeeze the tomato to force out the seeds. Chop the tomato quickly into a glass bowl until ready for use. (Glass or glazed china is important because of the acid) Rinse the scallops. Heat the butter in a pan and add the scallops. Cook and toss for a minute and add the wine, shallots, chives, garlic, bell pepper Cover the pan and let simmer for five minutes or until the scallops are just done. Remove the scallops with a slotted spoon and reserve. Put the liquid into a glass dish. Add the basil to the liquid. Put the cream and tomato into the pan and reduce over high heat buy one-half. Add the reserved liquid and reduce by half again. Add the pasta to this to heat through and then the scallops for just a minute. Serve with freshly grated parmesan cheese.

This delicious pasta is very simple to make, yet it tastes as though it took hours. There are many variations of this recipe, but I've found this to be the easiest and best tasting. It is by no means a low-fat meal, but if you go for a nice big walk after you eat, you will think this pasta was worth the extra exercise! Serve it with a crisp salad and some crusty bread (for mopping up any excess sauce!).

12 ounces pasta, Bow-Tie or 12 ounces penne
1 lb hot Italian sausage, ground
1/2 cup onion, diced
2 garlic cloves, minced
10 medium cremini mushrooms, sliced
1 (16 ounce) can diced and peeled tomatoes, drained
1 cup heavy cream
2 tablespoons butter
1 teaspoon rosemary
1 teaspoon thyme
1/2 cup parmesan cheese, freshly grated

Steps:

  • In a large skillet over medium heat, melt butter and cook onions until they start to soften, stirring frequently.
  • Add mushrooms and garlic to skillet. Cook, stirring frequently, until mushrooms soften and onions begin to turn translucent (about 5 minutes).
  • At this point, bring water to boil in a large pot. Add pasta and cook according to package directions. Shoot for an al dente pasta, as it will hold up better in the sauce.
  • Add ground sausage to skillet and, using a spatula, break it into chunks as it cooks. Adjust temperature as needed to thoroughly cook the sausage.
  • When sausage is browned, drain any drippings off of the skillet. Return to medium heat and add drained tomatoes.
  • When tomatoes have heated through, add cream, thyme and rosemary. Bring to a simmer and reduce heat to med-low.
  • Simmer until sauce thickens (about 5 minutes). Remove from heat and add cheese, stirring until melted into the sauce.
  • Add cooked pasta to skillet and toss with sauce. Adjust the amount of pasta added to the skillet according to how 'saucy' you like your dish.
  • Season with salt, fresh ground pepper to taste. Garnish with additional grated parmasean and fresh parsley.

1 onion, diced
1 clove garlic, minced
1 (14.5 ounce) can Italian-style diced tomatoes, undrained
1 tablespoon dried basil leaves
¾ teaspoon white sugar

⅛ teaspoon ground black pepper
½ cup heavy cream

Steps:

I was pleasantly surprised at how light this dish actually is. It is a rich one but it's not heavy. The flavors really compliment each other nicely and I wouldn't change a thing about this one. We will be having this one many times in the future.

2 Tbsp olive oil
2 Tbsp salted butter
1 small yellow or white onion, diced
5 medium cloves of garlic, minced
1 can(s) (15 ounces) tomato sauce
1 can(s) (14.5 ounces) diced tomatoes (with the juice)
1/2 c white wine (suggest Pinot Grigio or Gewürztraminer)
1/2 tsp kosher salt
1/2 tsp granulated white sugar
1/2 tsp crushed red pepper flakes (or 1/4 teaspoon ground cayenne pepper)
1/4 tsp freshly ground black pepper
1 lb dried pasta (suggest string pasta, i.e. fettuccine, linguini, spaghetti, etc.)
salted water to cook the pasta
1 c heavy cream (or half & half if you must)
1/2 c grated Asiago cheese (or Parmesan or pecorino romano)
8 or 9 fresh basil leaves, chopped (or 1 tablespoon dried basil flakes)
OPTIONAL:
1/2 lb fresh button mushrooms, cleaned and chopped
1 lb skinless, boneless chicken breast or thigh meat, chopped
1 lb small shrimp, shelled and de-veined, fresh or frozen/thawed, raw or pre-cooked

Steps:

  • 1. In a large skillet over medium-high heat, heat the oil and melt the butter. Once the butter stops sputtering, add the onions, garlic and mushrooms (if using). Sauté them for couple minutes or so, 'til the onions begin to soften.
  • 2. If you are using chicken pieces, add them to the onion mixture and continue to sauté until they are about cooked through, 4 or 5 minutes and leave them in the pan.
  • 3. Pour in the tomato sauce, diced tomatoes, wine, salt, sugar, red pepper flakes and pepper. Stir and cook over low heat for 25 to 30 minutes, stirring occasionally.
  • 4. While the sauce is simmering, cook the pasta according to package directions. Drain, reserving 1 cup of pasta water.
  • 5. While the pasta is cooking, if you are using uncooked shrimp, sauté them in a separate pan with a little butter until they are pink, about 3 minutes, then remove them from the heat, but keep them warm.
  • 6. Remove the sauce from the heat, add in the cooked shrimp (if using) and stir in the cream. Add the cheese, and check the seasonings. If needed, thin the sauce with some of the reserved pasta water. Add the cooked pasta and chopped basil, toss and serve immediately.
