I found this recipe a few years ago in a dairy cookbook, and it has become a family favorite. My husband, Wayne, and our two children are mostly meat-and-potato eaters, but I don't hear any complaints when I make this bread! -Penney Kester, Springville, New York

2 tablespoons butter
1 medium onion, minced
1 cup shredded cheddar cheese
1/2 cup sour cream
1/4 cup mayonnaise
3/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon dried oregano
Pinch rubbed sage
2 cups biscuit/baking mix
2/3 cup 2% milk
3 medium tomatoes, cut into 1/4-inch slices
Paprika

Steps:

  • Preheat oven to 400°. In a small skillet, heat butter over medium heat. Add onion and cook until tender. Remove from the heat. Stir in the cheese, sour cream, mayonnaise and seasonings; set aside. , In a bowl, combine the baking mix and milk to form a soft dough. Turn dough onto a well-floured surface; knead lightly 10-12 times. Pat into a greased 13x9-in. baking dish, pushing dough up sides of dish to form a shallow rim. Arrange tomato slices over top. Spread with topping; sprinkle with paprika. , Bake for 25 minutes. Let stand for 10 minutes before cutting.

An easy savory quick bread combining fresh tomatoes, Italian herbs, garlic, and cheese. Bake up some summer right in your kitchen with this tomato bread.

3 cups (360 grams) all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1 large egg
1/3 cup (66 grams) vegetable oil
1/3 cup (76 grams) milk
1 cup (113 grams) grated cheddar
3 cloves garlic, roughly chopped
1 pound (454 grams) fresh tomatoes
large handful of fresh basil and oregano

Steps:

  • Preheat oven to 350 °F. Grease an 8.5 x 4.5-inch loaf pan.
  • In a large mixing bowl, whisk together flour, baking powder, baking soda, and salt. Stir in the egg, oil, and milk, followed by the grated cheese. The batter will be very thick.
  • Combine the chopped garlic, tomatoes, basil, and oregano in a food processor. Using a series of 10-15 one-second pulses, chop the tomatoes and garlic until no large pieces remain, but mixture is not completely smooth.
  • Fold the tomato and garlic mixture into the batter. Resulting batter will still be thick, but should be fully moist. If dry patches of flour remain, stir in an additional 2-3 tablespoons of milk. If batter is quite wet, stir in an additional 2-3 tablespoons of flour.
  • Pour (scoop) the batter into the prepared loaf pan. Bake 45-50 minutes, until a tester inserted into the center of the bread comes out clean.
  • Cool in pan for 10 minutes, then turn out onto a wire rack to continue cooling. Enjoy while still warm.

2 packages (1/4 ounce each) active dry yeast
3/4 cup warm water (110° to 115°)
3 cups shredded cheddar cheese
3/4 cup shredded Parmesan cheese
2 cups warm 2% milk (110° to 115°)
3 tablespoons sugar
1 tablespoon butter, melted
2 teaspoons salt
6 to 6-1/2 cups all-purpose flour
1 large egg white
1 tablespoon water
TOPPING:
1/2 cup finely shredded cheddar cheese
1 garlic clove, minced
1/2 teaspoon sesame seeds
1/2 teaspoon poppy seeds
1/2 teaspoon paprika
1/4 teaspoon celery seed

Steps:

  • In a large bowl, dissolve yeast in warm water. Add cheeses, milk, sugar, butter, salt and 3 cups flour. Beat on medium speed for 3 minutes. Stir in enough remaining flour to form a firm dough., Do not knead. Cover and let rise in a warm place until doubled, about 1-1/2 hours., Stir dough down; transfer to 2 greased 9x5-in. loaf pans. This bread is wonderful made with garden fresh tomatoes, it's perfect for a barbecue! I used the Philadelphia brand soft cream cheese in the small tub for this. Use only firm plum tomatoes for this.

1 (8 ounce) container soft cream cheese
1/3 cup grated parmesan cheese
1 tablespoon minced fresh garlic (can use more)
2 -3 tablespoons chopped fresh basil
salt and pepper
1 large unsliced French bread
4 large plum tomatoes, thinly sliced (can use less)

Steps:

  • Microwave the the cream cheese in a medium microwave-safe bowl on HIGH for 20 seconds; Add in the Parmesan cheese, garlic and basil; mix well to combine, then season with salt and pepper to taste.
  • Slice the bread in half lengthwise.
  • Evenly divide and spread the mixture over the cut sides of the bread.
  • Top with the sliced tomatoes, then sprinkle a small amount of salt over the tomato slices.
  • Broil about 5-inches away from heat with the oven door partially open for about 5 minutes.
  • Cut into desired size slices.

1 cup shredded cheddar cheese
2 eggs, Lightly Beaten
1/3 cup milk
1 (14 1/2 ounce) can diced tomatoes with juice

Steps:

  • Heat Oven to 350 Degrees.
  • Coat two 8 1/2 x 4 1/2 x 2 1/2- inch loaf pans with non-stick cooking spray.
  • Stir together baking mix, shredded cheese and salt to taste in a large bowl.
  • Make well in center of mixture.
  • Add eggs, milk and tomatoes to well.
  • Stir just until the dry ingredients are moistened.
  • Divide batter evenly between the pre-pared loaf pans.
  • Bake for 45 minutes or until a toothpick inserted comes out clean.
  • Cool pans on rack 5 minutes.
  • Turn out of pans.
  • Serve warm.
