TUSCAN TOMATO AND BREAD SOUP - PAPPA AL POMODORO

Extra virgin olive oil, plus high quality finishing oil, for garnish
1 large red onion, diced
Kosher salt
Pinch crushed red pepper flakes
3 garlic cloves, smashed and finely chopped
1 cup white wine
2 pounds ripe summer tomatoes, diced
10 basil leaves, half whole and half cut into chiffonade
2 cups tomato juice
2 cups day-old Italian bread, crusts removed and cubed
1/2 cup grated Parmigiano-Reggiano

Steps:

  • Coat a large wide pot with olive oil over medium heat and add the onions. Season with salt and crushed red pepper, to taste, and cook until the onions are soft and very aromatic, about 8 to 10 minutes. Toss in the garlic and cook for 2 to 3 more minutes. Add the wine and cook until it has reduced by half. Stir in the tomatoes, season with salt, to taste, and cook until the tomatoes are really soft and juicy, about 12 to 15 minutes. Toss in the whole basil leaves.
  • Working in batches, carefully puree the tomatoes in a blender*. Return the tomato puree to the pot and add the tomato juice and the bread. Cook the soup over medium heat for until the bread has completely lost its shape and the soup is really thick, about 20 minutes. Taste the soup and adjust the seasoning, if needed.
  • Ladle the soup into bowls and serve garnished with grated cheese, basil chiffonade and a drizzle of big fat finishing oil.

Pappa means pap, which is what this soup is. If you ever needed proof that stale bread needn't go to waste, this soup is it. And this stale bread recipe can be made with canned tomatoes, so you can make it throughout the year. When the weather is hot, you can serve this at room temperature.

1 pound stale country bread
2 tablespoons extra virgin olive oil
1 small onion, chopped
2 to 3 garlic cloves (to taste), minced
1 1/2 pounds ripe tomatoes, peeled, seeded, and chopped, or 1 (28-ounce) can, with juice
1 tablespoon tomato paste
Pinch of sugar
Pinch of sugar
1/4 teaspoon red pepper flakes (optional)
Salt and freshly ground pepper
4 cups water
2 to 3 tablespoons slivered fresh basil

Steps:

  • If your bread is too hard to cut, douse it with water first. Then remove the crusts and cut into cubes. You should have about 7 cups.
  • Heat the oil in a large, heavy soup pot over medium-low heat. Add the onion and cook, stirring, until tender, about 5 minutes. Add the garlic and cook, stirring, for about a minute, until fragrant. Add the tomatoes, tomato paste, sugar, red pepper flakes, and salt and pepper, and cook, stirring occasionally, until the tomatoes have cooked down, about 10 minutes. Taste and adjust seasoning.
  • Stir the bread cubes into the tomatoes. Add the water, half the basil, and about 1 teaspoon salt. Bring to a simmer and simmer, stirring and mashing the bread, for about 10 minutes, until the soup is thick, like oatmeal. Stir in the remaining basil, taste and adjust seasoning. Serve hot, warm, or room temperature.

Although some bread soups are very simple mixtures of bread and broth, the ones I love most are packed with produce. And while the traditional versions of the Mediterranean soups are made with white bread, there's no reason not to use whole-grain breads in these recipes. I don't recommend sourdough, however, because the flavor is too strong. Called pappa al pomodoro, this humble mixture of bread, tomatoes, garlic and basil has a luxurious flavor. Although the soup is traditionally made with unsalted Tuscan bread, it works beautifully with any country bread.

1 large yellow onion, diced small (2 1/2 cups)
Coarse salt and ground pepper
2 garlic cloves, minced
Red-pepper flakes (optional)
3 pounds very ripe tomatoes, cored and coarsely chopped
6 ounces day-old crusty bread, thick crusts removed, torn into 1-inch pieces (4 cups)
1/4 cup fresh basil leaves, torn if large

Steps:

  • In a large saucepan or Dutch oven, heat oil over medium-high. Add onion, season with salt and pepper, and cook, stirring often, until soft, about 10 minutes. Add garlic and pinch of red-pepper flakes (if using) and cook until fragrant, 1 minute. Add tomatoes and cook, stirring often, until they begin to break down and release their liquid, 5 minutes.
  • Add 3 cups water and season with salt and pepper. Bring to a boil, then add bread and stir to combine. Reduce heat to low, cover, and simmer until bread is soft and soup thickens, about 15 minutes. Season to taste with salt and pepper.
  • To serve, divide soup among serving bowls, drizzle with a little oil, and top with basil leaves.

6 cloves garlic
1 large onion, peeled,cut in half,thinly sliced

1/2 teaspoon red chili pepper

1 cup packed basil, shredded

Steps:

  • Sauté the garlic and onion in olive oil with the chili pepper until the garlic has lightly browned and the onion is just getting golden; add the tomato; season with salt; add half the basil leaves torn into tiny pieces; crush the tomatoes with the back of a wooden spoon and stir; cook until the tomatoes fall apart (about 20 minutes).
  • Put the bread into the sauce; the bread will soak up the sauce and it will get quite thick; add enough stock to soften the bread and to make it liquidy; add the remaining basil and cook until the bread becomes a kind of mush (this is called'pappa').
  • Serve, sprinkling with parmesan cheese and a drizzle of extra virgin olive oil over each serving.

four 3/4-inch- (2-cm-) thick slices peasant bread
1/3 cup (80 ml) olive oil
3 medium cloves garlic,smashed, peeled, and sliced
1 medium onion, very finely chopped
14 large basil leaves, washed well and cut across into narrow strips
1 3/4 pounds (790 g) plum tomatoes, peeled and cut into 1/4-inch (.5-cm) dice
4 cups (1 liter) chicken stock [for a vegetarian soup, use Garlic Broth ]
2 teaspoons coarse salt, or less if using commercial broth
freshly ground black pepper, to taste

Steps:

  • Heat the oven to 225°F (107°C; less than #1/2 gas mark; less than #1/4 British regulo). Place the bread directly on the middle rack of the oven. Bake for 20 to 30 minutes, just to dry the bread out; do not brown. Break the bread into large pieces.
  • In a medium saucepan, heat the oil over medium heat. Add the garlic and cook, stirring, for 5 minutes. Stir in the basil and cook for 1 minute. Stir in the tomatoes and bring to a boil. Cook at a low boil for 13 to 15 minutes, stirring frequently.

  • Remove the top of the roll. Using a small knife cut around the inside of the bread (being careful not to cut through the sides) and scoop out the center of the roll - save this for later.
  • Butter the inside of the roll and place 3-4 cheese slices around the inner edge of the bread bowl. Bake in a preheated oven at 375˚F (190˚C) for 10 minutes, or until the cheese has melted.

1/2 cup extra virgin olive oil
9 garlic cloves, minced (fresh is best)
8 ounces crusty white sourdough bread, in 1-inch cubes
2 tablespoons extra virgin olive oil
3 large onions, finely chopped
8 cups chicken stock (canned chicken broth is okay)
2 (28 ounce) cans peeled plum tomatoes, drained and coarsely crushed
1/2 cup parmesan cheese, freshly grated

Steps:

  • GARLIC BREAD CROUTONS:.

Use a packet mix to rustle up your own cheat's garlic bread to serve alongside classic and creamy tomato soup

500g pack ciabatta bread mix (we used Wright's)
100g garlic butter , at room temperature (we used Lurpak)
2 tsp dried oregano
175g grated cheddar or mozzarella , or a mixture
a little oil , for greasing
1 onion , chopped
1 carrot , chopped
2 x 400g cans plum tomatoes
1 vegetable stock cube
100g half-fat crème fraîche
pinch of sugar (optional)

Steps:

  • Heat oven to 200C/180C fan/gas 6. Make up the bread mix following pack instructions, then roll out to a 30 x 40cm rectangle. Spread over 75g of the garlic butter and half the oregano, then sprinkle the cheese and roll up like a Swiss roll.
  • Cut into 8 even slices and transfer to a well-greased round 23cm tin and arrange 7 round the outside, 1 in the middle. Brush with any leftover butter. Cover with oiled cling film and leave in a warm place to puff up while you make the soup. Once doubled in size, bake bread for 25-30 mins.
  • Heat the remaining garlic butter in a pan until foaming. Add the onion and carrot, and cook until softened. 2 tablespoons extra virgin olive oil
1/2 cup chopped onion
3 cloves garlic, chopped
A 28-ounce can plum tomatoes
Salt and freshly-ground black pepper
6 thin slices country bread, lightly toasted
1/2 cup freshly grated Parmesan cheese

Steps:

  • Preheat oven to 350 degrees.
  • Heat the oil in a heavy skillet. Add the onion and saute over medium heat until golden. Stir in the garlic.
  • Chop the tomatoes with their juice and add to the skillet. Season the mixture to taste with salt and pepper.
  • Line the bottom of a 2 quart oven-proof mixing bowl or deep baking dish with 2 slices of the bread. Sprinkle with two tablespoons of the cheese and spoon half the tomato mixture over it. Add 2 more slices of the bread, 2 more tablespoons of the cheese and the rest of the tomato mixture. Top with the remaining bread and cheese. The juices from the tomato mixture should come about to the level of the top layer of the bread. If they do not, add a little water.
  • Cover the dish tightly with foil, place in the oven and bake about 1 hour, until the soup is bubbling and has puffed up. Serve at once.

4 thick slices apple-wood smoked bacon, cut into 1/4-inch slivers
2 tablespoons extra virgin olive oil
3 medium yellow onions, thinly sliced
2 cloves garlic, smashed
Sea salt
1 teaspoon raw sugar
4 cups seeded and chopped tomatoes (about 4 or 5)
1 14 1/2-ounce can chicken broth
1 tablespoon chopped oregano
1 tablespoon chopped rosemary
4 1/2-inch slices country bread, grilled or toasted
1/3 cup freshly grated Parmigiano-Reggiano cheese
Freshly ground black pepper

Steps:

  • Spread bacon in a soup pot over medium heat, and brown. Using a slotted spoon, move bacon to a bowl, and pour off fat from pot. Return pot to heat, and sprinkle in the olive oil, onions, garlic and a pinch of salt. Stir to coat, and cook for 10 minutes. Sprinkle in the sugar and continue cooking until onions are silky and well caramelized.
  • Add tomatoes and broth and bring to a simmer. Cook for a few minutes, then stir in bacon, oregano and rosemary. Season to taste with salt.
  • Lay a piece of toasted bread in each of four warmed bowls. Ladle soup on top; bread should rise to surface. Sprinkle cheese on top, season with coarsely ground black pepper, and serve.

1/2 cup slivered fresh basil
2 large garlic cloves, minced
3 tablespoons extra-virgin olive oil
1 cup chopped red onion
3 1/2 cups canned vegetable broth
1 pound plum tomatoes, coarsely chopped
3 3/4-inch-thick slices country white bread (each about 3x5 inches), cubed
Grated Parmesan cheese

Steps:

  • Divide basil and garlic between 2 large soup bowls. Heat 2 tablespoons oil in heavy large saucepan over medium-high heat. Add onion and sauté 3 minutes. Add broth, tomatoes and bread and bring soup to boil. Reduce heat to medium-low, cover and simmer until bread is falling apart, about 8 minutes. Transfer soup to processor. Using on/off turns, blend to coarse puree. Season soup with salt and pepper. Ladle into bowls over basil and garlic. Drizzle with remaining 1 tablespoon oil. Sprinkle with cheese.

THICK TOMATO-BREAD SOUP, CATALAN STYLE

4 tablespoons extra virgin olive oil
4 cloves garlic, slivered
4 ounces chorizo (casings removed), crumbled
1/2 teaspoon smoked paprika
3 pounds ripe beefsteak tomatoes, peeled
Generous pinch saffron threads
2 cups crustless country bread, finely diced
Salt
freshly ground black pepper
2 tablespoons minced flat-leaf parsley

Steps:

  • Heat oil in a large sauté pan. Add garlic and cook over low heat till soft. Add chorizo, raise heat and cook until starting to brown. Stir in paprika. Remove from heat.
  • Place a sieve over the pan, halve tomatoes horizontally and hold cut side down over sieve as you gently squeeze to remove seeds and allow juice to fall into pan. Remove sieve. Reserve tomato pulp. Heat juice in pan until warm, add saffron and set aside off heat 10 minutes.
  • Finely chop tomato pulp by hand or in food processor. Add to pan. Bring to a simmer. Stir in bread. Cook, stirring, 5 minutes. Season with salt and pepper. Allow to stand, off heat, stirring from time to time, until room temperature, about 30 minutes. Fold in parsley and serve.

PORTUGUESE GASPACHO FRESH TOMATO AND BREAD SOUP



Portuguese Gaspacho Fresh Tomato and Bread Soup image

My Grandmother used to make this wonderful soup on hot summer days. Very delicious! It's especially good when you use fresh tomatoes straight from your garden.

2 clove garlic, minced
1 Tbsp salt
1 green bell pepper, seeded, cored and coarsely chopped
3 tomatoes, large, coarsely chopped
1 cucumber, peeled and coarsely chopped
5 c water
1/4 c white vinegar
2 Tbsp olive oil
2 tsp chopped fresh coriander
1 pinch coarsely ground pepper
4 oz day-old french or italian bread, cut in 1-inch cubes. about 4 cups

Steps:

  • 1. In a large bowl, mash garlic and salt until paste-like. Add green bell pepper, tomatoes and cucumber. Toss gently breaking up- tomatoes with back of spoon.
  • 2. Add water, vinegar and olive oil. Stir to mix. Sprinkle with coriander and black pepper.
  • 3. Place pieces of bread over top, cover and let stand for 20 minutes, or until bread is softened. Taste and adjust seasonings with salt, pepper and vinegar if necessary. Serve immediately.
