- In a bowl, toss tomatoes, basil, cheese, oil and vinegar.
- Season to taste with salt and pepper.
- Refrigerate for 30 minutes.
- Toss refrigerated mixture with cooled pasta and let stand at room temp for 15 minutes before serving.

- 1. Prepare pasta according to package directions
- 2. Toss together hot pasta, olive oil, balsamic vinegar and assorted herbs
- 3. Cool completely
- 4. Stir tomatoes and cheese into pasta mixture
- 5. Just before serving stir in arugula or spring mix lettuce, adding salt and pepper to taste
