This is a great summer salad with healthy fiber. You can adjust the seasoning to your taste. This is a combination of recipes I gathered from Allrecipes site.The cook time is the chilling time. Enjoy!

3/4 cup canned kidney beans, drained and rinsed
1 large tomatoes, chopped in large pieces
1/2 cup chopped onion
1/2 cup chopped bell pepper
1/2 large English cucumbers or 1 regular cucumber, sliced thin
1 teaspoon dried basil
1 teaspoon dried dill
1/2 teaspoon pepper
1/2 teaspoon salt
1/2 cup mayonnaise (I used Lennie's #39780)
12 pitted kalamata olives

Steps:

  • Chop and slice veggies, using yellow or red bell peppers for color.
  • Mix all ingredients together with the mayonnaise.
  • Allow to chill and flavors to blend.
  • The tomatoes make this a little juicy so use a slotted spoon when serving.
  • Use whatever combination of spices you like.

1 cup celery, chopped
1/2 cup dill pickle, chopped
2 tablespoons pimiento, chopped
1 tablespoon onion, minced
1/4 teaspoon salt
1 dash pepper
1/3 cup mayonnaise

Steps:

  • Combine the kidney beans, celery, pickles, pimiento, onion, salt and pepper.
  • Toss lightly with the mayonnaise.

I saw this on Nigella Bites last night and made it for lunch today. We had it with crusty olive bread, but it would be nice as part of a buffet or picnic or as a potluck dish. It's very quick and easy to make, healthy and quite tasty. I used one can of beans, vine-ripened tomatoes, and everything else as listed in the recipe.

1/2 red onion, finely chopped
2 tablespoons red wine vinegar
2 cups cherry tomatoes
1 teaspoon fine sea salt (or more)
3 (14 ounce) cans red kidney beans, rinsed and drained
2 tablespoons extra virgin olive oil

Steps:

  • In a small bowl, combine onions and vinegar. Set aside to macerate while preparing rest of salad, or up to three hours.
  • Halve cherry tomatoes and place in a serving bowl. Sprinkle with 1 teaspoon salt. Add kidney beans, onion mixture and olive oil. Toss gently to mix, adjust salt to taste, and serve.

6 cups kidney beans, cooked and drained (or 2 cups dried kidney beans, soaked and cooked)
4 tablespoons ketchup
3 tablespoons freshly squeezed orange juice
3 tablespoons olive oil
2 tablespoons apple cider vinegar
2 teaspoons lemon juice
1 tablespoon dry mustard
3 tablespoons brown sugar
2 garlic cloves, minced
1 cup sweet onion, diced (Vidalia, Hermiston reds, Walla Walla)
1/2 tablespoon black pepper
3 tablespoons fresh parsley, minced

Steps:

  • Place the cooked kidney beans in a large non-reactive bowl.
  • In a smaller bowl, mix together the remaining ingredeints and toss with the kidney beans.
  • Refrigerate at least 3 hours to allow to marinate. Best eaten within 24 hours.

1950's Kidney Bean Salad image

This is a very old recipe my mother learned as a salad lady at a supper club she worked at in the early '50's. I have always enjoyed it and I hope you do also. Could also make a good vegetarian dish. Enjoy!

2 (15 1/2 ounce) dark red kidney beans, drained and rinsed well
6 -8 hard-boiled eggs, diced small
1/2 cup sweet onion, diced small
8 -10 sweet pickles, diced small
1/2 cup white sugar
1/2 cup apple cider vinegar
1 tablespoon flour
2 eggs
1 (5 ounce) can evaporated milk

Steps:

  • Beat 2 eggs, set aside.
  • In saucepan, blend sugar,flour, then add vinegar and egg mixture. Bring to a boil. Stirring constantly(to avoid scrambled eggs) over medium-low heat. Boil long enough to become thick.
  • Let dressing cool, slightly.
  • Add about half of the can of evaporated milk to dressing and mix well. ( personally use only 1/2 of the can).
  • Pour over bean mixture. Mix well Refrigerate 1-3 hours. Longer the better.
