100g bag spinach
400g can chopped tomatoes
1 tsp chilli flakes
4 eggs

Steps:

  • Heat oven to 200C/180C fan/gas 6. Put the spinach into a colander, then pour over a kettle of boiling water to wilt the leaves. Squeeze out excess water and divide between 4 small ovenproof dishes.
  • Mix the tomatoes with the chilli flakes and some seasoning, then add to the dishes with the spinach. Make a small well in the centre of each and crack in an egg. Bake for 12-15 mins or more depending on how you like your eggs. Serve with crusty bread, if you like.

900g ripe vine tomatoes
3 garlic cloves
3 tbsp olive oil
4 large free range eggs
2 tbsp chopped parsley and/or chives

Steps:

  • Preheat the oven to fan 180C/ conventional 200C/gas 6. Cut the tomatoes into quarters or thick wedges, depending on their size, then spread them over a fairly shallow 1.5 litre ovenproof dish. Peel the garlic, slice thinly and sprinkle over the tomatoes. Drizzle with the olive oil, season well with salt and pepper and stir everything together until the tomatoes are glistening.
  • Slide the dish into the oven and bake for 40 minutes until the tomatoes have softened and are tinged with brown.
  • Make four gaps among the tomatoes, break an egg into each gap and cover the dish with a sheet of foil. Return it to the oven for 5-10 minutes until the eggs are set to your liking. Scatter over the herbs and serve piping hot with thick slices of toast or warm ciabatta and a green salad on the side.

8 large tomatoes
1/3 cup fresh grated parmesan cheese
8 medium eggs
1 teaspoon herbs, of your choice see note
4 slices cheddar cheese or 4 slices American cheese, sliced into four pieces
salt
fresh ground pepper

Steps:

  • Note the tomatoes should be fresh picked and should be at the point where you can still hollow them out but headed for buttery soft in the next day or so.
  • Herbs: oregano,chervil, basil, sage, Mrs. Dash.
  • Preheat oven to 425°F while slicing tomatoes. Remove tops the scoop out seeds and pulp.
  • Place in a shallow baking dish, sprinkle with a bit of salt or Mrs Dash [I used Italian], fresh ground pepper and put in a pinch of the parmesan cheese.
  • Crack the egg into the tomato. Sprinkle with pepper, salt or Mrs. Dash, other herbs and a tiny bit of parmesan.
  • Bake for 20 minutes for soft yolks and 30 to 35 for hard. During the last 4 minutes place two slices of the cheddar cheese in a cross pattern on top. Melt and let brown. When I removed I put a small amount of fresh chives on top of the cheese.

Shakshuka (Baked Eggs With Spicy Tomato Sauce) image

Shakshuka means "all mixed up" in Hebrew and is one of the most popular breakfast dishes in Israel and at Sofra. Many countries in the Middle East and Eastern Mediterranean claim a version of their own, like Tunisian chakchouka, made with peppers and harissa, and a Moroccan version made with lamb sausage and harissa. The eggs are poached directly in the spicy tomato sauce, so it's important that the sauce is well seasoned and warmed before you add the eggs.

2 tablespoons extra-virgin olive oil
4 teaspoons finely chopped garlic
1 (28-ounce) can diced tomatoes, including the liquid
1 teaspoon Maras pepper
1 1/2 teaspoons hawayei (see Cooks' Note), or 1 teaspoon curry powder
1 1/2 teaspoons freshly squeezed lemon juice
Kosher salt and freshly ground black pepper
6 eggs
6 (6-inch) store-bought pita breads or 3 Sofra Pita Breads, split in half widthwise
1/2 cup Zhoug

Steps:

  • Preheat the oven to 350°F.
  • To make the spicy tomato sauce, in a large saucepan over low heat, combine the olive oil, garlic, tomatoes, Maras pepper, and hawayej. Simmer until the tomatoes are soft and melted, about 15 minutes. It is important to cook the sauce slowly so the tomatoes are soft enough to puree but don't reduce too much. Set the sauce aside to cool slightly.
  • Using an immersion blender and starting at low speed, puree the sauce, gradually increasing the speed as the mixture becomes smoother and resembles a silky tomato soup. Stir in the lemon juice and season with salt and pepper to taste. Cover and refrigerate up for up to 1 week or use immediately.
  • When you are ready to make the shakshuka, gently reheat the sauce and pour it into a 9x13-inch glass baking dish or six soufflé ramekins or small cazuelas (4 to 5 inches in diameter and at least 1-inch high).
  • To make in a 9x13-inch dish, first crack each egg into a small bowl or ramekin to ensure that the yolks stay intact. Using the back of a spoon, make a divot for each egg and slide it into the sauce, one at a time, so that it doesn't float on top; leave a little space between each egg.
  • To make in individual baking dishes, set the ramekins onto a baking sheet. Ladle about 1/2 cup sauce into each dish and, using the back of a spoon, make a divot for the egg. To ensure that the yolks stay intact, first crack each egg into a small bowl or ramekin, then slide it into the sauce.
  • Lightly season the eggs with salt and transfer to the oven. Bake until the egg whites are just barely set and the yolks are very loose, about 20 minutes.
  • Remove the shakshuka from the oven. Scoop one egg on top of each pita bread and carefully spoon a generous amount of tomato sauce from the pan over the top of the egg. Place 1 teaspoon of zhoug on top of each serving and pass around additional zhoug at the table. If serving the shakshuka individually, top each shakshuka with 2 teaspoons of zhoug and serve them with a spoon and the bread on the side so that you can use the bread or spoon to scoop up the sauce. Serve immediately with additional zhoug.

1 teaspoon crushed dried rosemary
2 cans (15 ounces each) diced tomatoes in juice
1 can (15 ounces) crushed tomatoes
1/4 cup grated Parmesan
Coarse salt and ground pepper
8 large eggs

Steps:

  • Preheat oven to 350 degrees. Set four 12-ounce ovenproof bowls or ramekins on a large rimmed baking sheet.
  • In a large saucepan, heat oil over medium. Add garlic and rosemary; cook, stirring, until garlic is golden, about 2 minutes. Add diced tomatoes (with juice), crushed tomatoes, and 2 tablespoons Parmesan; bring to a boil. Reduce to a simmer, and cook, stirring occasionally, until slightly thickened, 2 to 4 minutes. Season tomato sauce with salt and pepper.
  • Divide tomato sauce among bowls, reserving 1 cup. Crack 2 eggs into each bowl. Dividing evenly, top with reserved sauce and 2 tablespoons Parmesan. Bake until egg whites are just opaque (yolks should still be soft), 24 to 28 minutes, rotating sheet halfway through.

1 shallot, minced
1 clove garlic, minced
Kosher salt and freshly ground black pepper
One 28-ounce can diced San Marzano tomatoes with juices
1/4 cup chopped fresh flat-leaf parsley leaves
8 large eggs
1/2 cup crumbled feta cheese

Steps:

  • Put a large Dutch oven over medium heat. Add the olive oil, shallot, garlic, and a pinch of salt and cook for 1 minute. Add the tomatoes with juices and allow the sauce to come up to a simmer. Season with salt and pepper and then stir in the parsley.
  • Carefully crack the eggs into the sauce so as not to pop the yolks, leaving a little space between each egg. Top with the feta, reduce the heat to medium-low, cover, and cook until the whites are set and the yolks are still runny, about 2 minutes.
  • Scoop out the eggs and transfer to plates. Top with sauce and serve.

  • Heat oven to 190C/fan 170C/gas 5. Wash the spinach and trim off any thick stalks. Put into a large pan, then cook, covered, until the spinach is wilted, about 2-3 mins. Drain well, pressing out all excess water, then return to the pan with about a quarter of the butter, stirring until the spinach is glistening.

1 beef tomatoes (about 300g)
75 g red onions
2 large eggs
6 large basil leaves
1 tablespoon red wine vinegar
2 teaspoons sugar
1 tablespoon tomato puree
1/2 teaspoon sea salt
1/2 teaspoon black pepper
5 g grated parmegano cheese

Steps:

  • Cut 1 large beef tomato in half and hollow out the centre (do not discard).
  • Drop in a little fresh basil and a few rings of red onion then bake in the oven for about 5 minutes to soften them a little.
  • While the tomato is in the oven take the removed pulp and finely chop along with most of the remaining red onion (save about 6 thin rings of onion).
  • add the sugar, tomato purée, chopped basil leaves, salt, pepper and red wine vinegar and cook down into a thick sauce.
  • Remove the tomato cups from the oven and crack in one egg into each half.
  • Drop the rings of onion (you previously saved) into each tomato cup.
  • add a small pile of grated Parmegano cheese on top (try to leave the yolk showing for presentation).
  • Sprinkle with pepper and carefully place in the red hot oven for another 5-10 minutes (until the egg has cooked).
  • Serve half covered with the tomato pickle/ketchup you have made.

  • Sprinkle the insides with salt and pepper. Place the tomatoes on a rack. Turn upside down to drain.

1 cup pimento stuffed olives, sliced plus 1/4 cup olive brine
8 large eggs
Kosher salt and freshly ground black pepper
4 slices toasted country bread

Steps:

  • Smash 3 of the garlic cloves. Heat the oil in a large skillet over medium-high heat until hot. Add the smashed garlic, onions and thyme, and cook, stirring, until golden, about 6 minutes. Add the gin and cook until the liquid has reduced by half. Stir in the tomatoes, olives and olive brine and bring to a simmer. Cook, stirring occasionally, while breaking up the tomatoes, until the sauce is slightly thickened, 10 to 15 minutes. Season with 1/2 teaspoon each salt and pepper.

Coarse salt, sea salt, or fleur de sel

Either use your own homemade tomato sauce, leftover tomato or spaghetti sauce, or bottled prepared spaghetti or marinara sauce (your choice).

Steps:

  • In a frying pan (large enough to fit the amount of eggs you want to use), place prepared tomato sauce; bring to a simmer. NOTE: If you are using a thick sauce, just before adding the eggs, make a well with a spoon for each egg. One at a time, break each egg onto a saucer or into small cups or bowls. Slip eggs carefully into simmering tomato sauce by lowering the lip of each egg-cup 1/2-inch below the surface. Let the eggs flow out. Sprinkle with the grated parmesan cheese. Immediately cover with a lid and turn heat on low. Set a timer for exactly three minutes for medium-firm yolks. Adjust the time up or down for runnier or firmer yolks. Cook 3 to 5 minutes, depending on firmness desired. Lift each perfectly poached egg from the tomato sauce with a slotted spoon or spatula. Before serving, sprinkle with additional grated cheese over the top (if desired) and season with salt and pepper.

14 tablespoons olive oil
4 tomatoes, peeled, seeded, and chopped into 4-inch (1-cm.) dice
1 clove garlic, peeled and minced
1 tablespoon minced flat-leaf parsley
1 pinch of superfine sugar
Salt
Pepper
Butter
4 large eggs
4 small basil leaves
16 toast fingers

Steps:

  • 1. Heat the olive oil in a skillet over medium heat. Cook the tomatoes for 5 minutes and then add the garlic, parsley, sugar, a pinch of salt, and a pinch of pepper.
  • 2. Butter 4 ramekins and distribute the tomato sauce evenly among them. Crack an egg into each ramekin and cook for 15 minutes.
  • 3. Garnish each ramekin with a basil leaf and serve with toast fingers.

Steps:

  • 1. Preheat the oven to 400 degrees. 2. Hollow out the tomatoes, saving or discarding the inside. 3. Crack an egg into each hollowed tomato shell. 4. Cook for 15-25 minutes in a baking dish or ramekin. Test doneness with a fork several times while cooking to make sure the whites have set but the egg yolk is still runny. Oven temperatures vary so watching this carefully is important. A few minutes before ready top each with cheese if you are using some.

2 mild chorizo sausage, sliced
400ml tomato passata
1 tsp brown sugar
1 tsp harissa (optional)
½⁄ cup marinated red pepper strips
4 free range eggs
½⁄ cup pitted green olives
Chopped Italian parsley to serve
Sea salt and freshly ground pepper

Steps:

  • ■Preheat oven to 200C. Heat a frying pan over medium heat, add olive oil and cook eggplant for a few minutes until softened. Add chorizo and continue to cook for a few minutes. Add tomato passata, sugar, harissa and red peppers. Bring to the boil, lower heat and allow sauce to gently simmer for about 10 min. ■Divide sauce equally between four individual oven-proof ramekins. Make a well in the sauce in each ramekin and crack eggs into these, sprinkle with olives and cover with foil. Place in oven and allow eggs to cook for 10-15 min or until whites are firm but yolks are still runny. ■Sprinkle with parsley, sea salt, freshly ground pepper and serve with lots of crusty bread.

Skillet-Baked Eggs in Tomato Gravy with Spinach image

This recipe for tomato gravy is the kind of old-fashioned country cooking most commonly found in Appalachia. Typically, it would be served solo atop biscuits, but it seemed to be an open invitation for an addition of skillet-baked eggs, with the biscuits for sopping up this luscious combination.

2 slices bacon, cut into lardons (optional; see Cook's Note)
2 tablespoons pure olive oil (optional)
1 sweet onion, chopped
1 garlic clove, very finely chopped
2 tablespoons all-purpose flour
3 fresh tomatoes (about 1 1/2 pounds), peeled, seeded, and chopped (2 cups), or 1 (16-ounce) can whole tomatoes, chopped, with their juices
3/4 cup 2 percent milk
2 cups loosely packed baby spinach (about 3 ounces)
1 tablespoon chopped fresh herbs, such as parsley, basil, or chives, plus more for garnish
1 teaspoon chopped fresh thyme leaves
1/4 teaspoon Aleppo pepper, piment d'Espelette, or red pepper flakes, or to taste
Coarse kosher salt and freshly ground black pepper
4 large eggs
Cathead Biscuits or toasted bread, for serving

Steps:

  • Heat the oven to 350 degrees F.
  • If using bacon, line a plate with paper towels. Heat a large ovenproof skillet over medium-high heat. Add the bacon to the skillet and cook, stirring occasionally, until crisp, 3 to 5 minutes. Use a slotted spoon to transfer the bacon to the prepared plate. You can use the bacon fat to cook the onion or, if you prefer, tip out the bacon fat and heat the olive oil in the skillet over medium heat. You can also just start with the oil and not use the bacon at all.
  • Add the onion to the fat (or oil) and cook until browned, 5 to 7 minutes. Add the garlic and cook until fragrant, 45 to 60 seconds. Add the flour and stir to combine. Add the tomatoes and milk and stir to combine. Bring to a boil and then reduce the heat to maintain a simmer. Cook until the tomatoes soften and the gravy thickens, 3 to 5 minutes. Add the cooked bacon (if using), the spinach, all of the herbs, and the Aleppo pepper; stir to combine. Taste and adjust the seasoning with salt and black pepper.
  • Using the back of a spoon, make four wells in the tomato-spinach mixture in the skillet. Break an egg into each indentation. Season the eggs with salt and black pepper. Transfer the skillet to the oven and bake until the whites are set and the yolks are to the desired doneness, 8 minutes for runny, 10 minutes for firm, and 12 minutes for fully set. Garnish with additional herbs and more pepper. Serve immediately with the biscuits or toast.
