This is a fantastic twist on an ordinary pasta bake. Quick and easy to make, and one which you can use forever! Serve with fresh bread and a salad.

1 (16 ounce) package rotini pasta
1 tablespoon vegetable oil
1 onion, chopped
1 cup chopped bacon
salt and pepper to taste
1 (10.75 ounce) can condensed tomato soup
2 cups shredded Cheddar cheese, divided
½ cup milk

Steps:

  • Bring a large pot of lightly salted water to a boil. Add rotini pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Heat oil in a large saucepan or skillet, add onion, bacon, salt, and pepper. Cook until bacon is crispy and onion is soft. Drain fat. Pour in tomato soup and stir; bring to boil. Reduce heat to low; add 1 cup Cheddar cheese and the milk. Stir until cheese is melted.
  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Combine sauce with pasta in a baking dish. Sprinkle with remaining 1 cup cheese. Place under the oven broiler until sauce is thick and cheese browned, 3 to 5 minutes.

2 tablespoons kosher salt
16 ounces spaghetti pasta
1 pound thick-cut bacon or pancetta, chopped
3 tablespoons extra-virgin olive oil
1 cup red onion, diced
1 teaspoon red chili flakes
3 tablespoons garlic, minced
2 cups Roma tomatoes, diced
1/4 cup red wine
4 tablespoons basil, chiffonade
1/4 cup freshly grated Parmesan
Salt and freshly ground black pepper

Steps:

  • In a large stock pot, boil 3 quarts of water, when boiling add 2 tablespoons kosher salt and the pasta and cook until the pasta is al dente.
  • In a large saute pan over medium heat, add bacon and saute until bacon is crispy. Remove bacon to drain on a paper towel-lined plate and remove 3/4 of the bacon fat from the pan. Add extra-virgin olive oil, onions, and red chili flakes. Cook until onions are translucent, add garlic, cook for 2 minutes then add tomatoes. Saute for 5 minutes, then deglaze with wine.
  • Drain pasta and add to the tomato mixture pan. Add basil and bacon. Toss with Parmesan, and add salt and pepper, to taste.

BACON-TOMATO LINGUINE

Kosher salt
12 ounces fresh linguine
6 slices bacon, cut into 1/2-inch pieces
3 cups cherry or grape tomatoes
1 shallot, thinly sliced
2 large eggs
1/3 cup grated parmesan or pecorino romano cheese, plus more for topping
1 teaspoon finely grated lemon zest
Freshly ground pepper
1 cup fresh basil, torn

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs. Reserve 1 1/4 cups cooking water, then drain the pasta; set aside.
  • Meanwhile, cook the bacon in a large nonstick skillet over medium-high heat until crisp, about 5 minutes. Add the tomatoes and shallot and cook until the tomatoes are starting to burst, about 5 minutes. Pour off all but 2 tablespoons of the drippings from the skillet.
  • Whisk the eggs, cheese, lemon zest and 1 teaspoon pepper in a medium bowl. Slowly whisk in 1 cup of the reserved cooking water; set aside.
  • Reduce the heat under the skillet to medium low. Add the pasta and toss well. Slowly pour in the egg mixture, tossing, to make a creamy sauce, about 1 minute. Season with salt and add the remaining 1/4 cup cooking water as needed to loosen. Stir in the basil. Top each serving with more cheese and season with pepper.

2 pound(s) pork sausage, mild, ground up
12 small grape tomatoes
1 package(s) cream cheese whipped
2 cup(s) cooked bacon bits, diced fine
2 cup(s) diced raw bacon, fine dice
1 package(s) panko bread crumbs
1 cup(s) asiago cheese, grated
1 tablespoon(s) oregano, fresh, diced fine
6 large egg yolks
1 cup(s) milk
1/2 cup(s) ranch dressing
1 pint(s) home made fresh salsa of your choice
1 large english cucumber, diced fine
4 cup(s) Crisco food shortening

Steps:

  • First you will take this step by step, take the grape tomatoes and core out the center, once done set them aside, take the cream cheese and whip in the bacon bits, you're looking for a rich bacon flavored cream cheese, make sure this is whipped to the point of frosting,
  • Now take a piping bag with a small tip, or a Ziploc bag with the corner cut out, fill the bag with the cream cheese mix and stuff the tomato with the mixture until it's full, once your done, set in fridge.
  • Now take sausage and raw bacon and mix together with the Asiago cheese, take a small amount and wrap the sausage mix around the stuffed tomato, just like a scotch egg.
  • Once all tomatoes are stuffed and wrapped with the meat mixture, set them aside and start the breading set up, in one bowl add the milk and eggs and whip till blended, second bowl is going to be bread crumbs and third bowl will be your stuffed bacon pork wrapped tomato.
  • Now once everything is ready, you need to do the sauce, take salsa, ranch and 1 cup of bacon bits and load into food processor along with one cup of diced English cucumber, it should look red but also light.
  • Heat a med sized heavy duty pan up with three cups of grease with a candy thermometer to 300 deg, now take one of the bacon stuffed tomatoes, and dip them into egg first, then bread all over, now take them and dip them into hot grease and fry till golden brown, 6 to 8 min each.
  • Place each bon bon on a grate to drain the grease off, when there all ready drained, take and place on favorite dish, for the sauce, serve in a bowl on the side or spoon sauce over top or if you have a Chinese spoon set, put sauce in bottom and a tomato bon bon on top and bon appetite!
