2 cups shredded Cheddar cheese (8 oz)
8 slices white or whole wheat bread
1 small onion, chopped (1/3 cup)
8 slices bacon, crisply cooked
1 medium tomato, thinly sliced
1 medium avocado, pitted, peeled and thinly sliced
1/3 cup butter, softened

Steps:

  • Place 1/4 cup cheese on each of 4 bread slices. Divide onion, bacon, tomato and avocado evenly onto bread slices. Top with remaining cheese and bread slices. Spread 2 teaspoons butter over each top slice of bread.
  • Place sandwiches, buttered side down, in 12-inch skillet over medium heat. Spread remaining butter over top slices of bread. Cook uncovered about 5 minutes or until bottoms are golden brown. Turn; cook 2 to 3 minutes longer or until bottoms are golden brown and cheese is melted.

I LOVE avocados, especially the black Haas avocados. They're creamy and have such a "buttery" taste, and yet are cholesterol-free. This recipe makes a really delicious sandwich. When I make it for the kids, I eliminate the cumin, but add it when I'm making a sandwich for myself -- I like cumin's very mild spicy flavor that has a hint of caraway in it.

1 ripe avocado, halved, seeded and peeled
1 tablespoon lemon juice
1/2 teaspoon ground cumin
1/4 teaspoon salt
1/2 teaspoon finely minced parsley
8 slices bread (I use whole grain)
6 ounces monterey jack cheese, sliced
1 large tomatoes, thinly sliced
2 tablespoons butter, softened

Steps:

  • In a small bowl, mash together avocado, lemon juice, cumin and salt until smooth. Stir in parsley and set aside.
  • Top four of the bread slices with cheese; spread with avocado mixture and top with tomato slices. Add the four remaining bread slices on top. Using 1 tablespoon of the softened butter, spread some on the top of each sandwich.
  • Heat a large nonstick griddle or 12-inch skillet, over medium-high heat. Add sandwiches, buttered sides down. Carefully spread the remaining softened butter over the top of each sandwich.
  • Cook 4-6 minutes or until toasted, turning once.

4 slices white bread
75 g tasty cheese, grated
1 tomatoes, sliced (I used vine-ripened)
1 avocado, sliced
1 onion, thinly sliced
4 olives, sliced (I used green olives with lemon pepper)
sea salt & freshly ground black pepper

butter

Steps:

  • Heat oil in pan over med-low heat (or use non-stick pan)and fry onion until soft and lightly browned, adding tomato slices for the last minute or two of cooking time.
  • Meanwhile, divide avocado equally between two slices of bread, buttering the other two slices if desired.
  • Add all other ingredients except butter, then place second slice of bread on top pressing lightly to flatten sandwich a bit.
  • Wipe out pan (or use separate pan) and add a little butter.
  • After butter has melted, fry sandwiches until crisp and golden brown on both sides.

  • 1. Heat a skillet over medium heat. 2. Butter one side of 2 slices of whatever bread you're using. Place one slice butter side down in the pan. 3. I don't remember where I got this recipe, but it sure is delicious! To get the perfect grilled cheese every time, you should start by heating your skillet to low. Once you build your sandwich, leave the skillet on low and cover with a lid or foil. Cook for a couple of minutes to let the cheese get gooey and you fillings get warm. Then remove the lid/foil and turn up heat, flipping your sandwich until it is perfectly toasted. Yum!

1/2 medium red onion, finely chopped
1 pint cherry or grape tomatoes, quartered
2 avocados, preferably Hass, pitted and coarsely chopped
2 tablespoons extra-virgin olive oil, plus more for brushing
1/3 cup fresh lime juice (about 3 limes), plus lime wedges for serving (optional)
Coarse salt and freshly ground pepper
Cornmeal Pizza Dough
4 ounces coarsely grated pepper Jack cheese (about 1 1/3 cups)
Sour cream, for garnish (optional)

Steps:

  • Toss onion, tomatoes, and avocados with oil and lime juice in a medium bowl. Season with salt and pepper; set aside.
  • Heat a grill until medium-hot. Generously brush one side of pizza dough with oil; grill, oiled side down, until underside is golden brown and top begins to bubble, 3 to 5 minutes. Quickly brush top with oil; flip crust. Top with a layer of cheese. Grill until melted and crust is cooked through, 3 to 5 minutes more.
  • Slide pizza with a large spatula onto a cutting board. Season with salt and pepper. Top with avocado mixture. Dot with sour cream and serve with limes, if desired. Repeat to make more pizzas.
