3 tomatoes (vine-ripened)
1 celery rib
3 cm ginger (piece fresh)
1 large apple
ice cube (to serve)
1 celery & leaves (to serve)

Steps:

  • Push the tomatoes , celery, ginge and apple through the chute of a juicer.
  • Fill a glass with ice cubes and pour the juice over and stir with a celery stick.

1 cup loosely packed flat-leaf parsley leaves
2 medium stalks celery
3 medium kale leaves with stems
1/2 large juicy lemon, peel and pith removed
1 tablespoon chia seeds, optional

Steps:

  • Juice, in this order, the tomatoes and parsley (together), celery, kale and lemon, following your juicer's specific settings for each. Stir in the chia seeds if using and let soak for 5 minutes. Serve the juice immediately over ice, if desired.

4 tomatoes, diced
1 carrot, sliced
1 stalk celery, sliced
1 red bell pepper, diced
salt, to taste
pepper, to taste
1 tablespoon garlic
½ cup water
2 tablespoons fresh parsley, optional

Steps:

  • Add the tomatoes, carrot, celery, red bell pepper, salt, pepper, garlic, and water to a large pot and bring to a boil.
  • Reduce heat, cover, and simmer for 20 minutes, or until vegetables are tender.
  • Remove from heat, let cool for 10 minutes.
  • Add mixture to a blender and add in the parsley. Blend until consistency is smooth.
  • Serve chilled.
  • Enjoy!

1 bunch celery, trimmed and cut into 1-inch pieces
1 tablespoon extra virgin olive oil
4 garlic cloves, minced
1 anchovy, rinsed and chopped (optional)
1 14-ounce can chopped tomatoes in juice
3 tablespoons chopped flat-leaf parsley
Pinch of sugar
Salt and freshly ground pepper to taste

Steps:

  • Place the celery in a steamer above 1 inch of boiling water. Cover and steam 5 minutes, until just tender when pierced with a knife. Remove from the heat and drain.
  • Heat the oil over medium heat in a large, heavy skillet and add the garlic. Stir until it smells fragrant, about 30 seconds, and add the anchovy if using, tomatoes, 2 tablespoons of the parsley, a pinch of sugar and salt and pepper. Stir together, then stir in the celery. Cook, stirring often, until the tomatoes have cooked down and the mixture is fragrant, about 10 minutes. Taste and adjust the seasonings. Stir in the remaining parsley just before serving.

Number Of Ingredients 11

13 pounds ripe tomatoes (about 40 medium)
2 celery ribs, coarsely chopped
3 medium onions, coarsely chopped
1 medium green pepper, coarsely chopped
1-1/2 cups chopped fresh parsley
1/2 cup sugar
1 tablespoon Worcestershire sauce
4 teaspoons salt
1/4 teaspoon hot pepper sauce
1/4 teaspoon cayenne pepper
1/4 teaspoon pepper

Steps:

  • Quarter tomatoes; place in a 6-qt. Dutch oven. Add celery, onions, green pepper and parsley. Simmer, uncovered, until vegetables are tender, about 45 minutes, stirring occasionally. , Meanwhile, rinse five 1-quart plastic containers and lids with boiling water. Dry thoroughly. Cool tomato mixture slightly; put through a sieve or food mill. Return to pan. Add remaining ingredients; mix well. Bring to a boil. Remove from heat; cool. , Fill all containers to within 1/2 in. of tops. Wipe off top edges of containers; immediately cover with lids. Freeze up to 12 months. Thaw frozen juice in refrigerator before serving.
