CHEDDAR TOMATO FONDUE

2/3 cup finely chopped drained canned tomatoes
2 garlic cloves, lightly crushed
2 tablespoons unsalted butter
3 tablespoons dry white wine
1 tablespoon cornstarch
12 oz Cheddar, coarsely grated (3 cups)
Accompaniment: cubes of French bread

Steps:

  • Cook tomatoes and garlic in butter in a 4-quart heavy saucepan over moderately low heat, stirring occasionally, until most of liquid is evaporated, about 5 minutes. Stir together wine and cornstarch in a small bowl, then stir into tomatoes and simmer gently, stirring, 1 minute. Discard garlic. Add Cheddar by handfuls, stirring until completely melted. Serve in a fondue pot set over a flame.

One 28-ounce jar tomato-basil sauce, such as Giada DeLaurentiis for Target
1/2 teaspoon crushed red pepper flakes
1/4 cup chopped fresh basil
4 ounces thinly-sliced prosciutto, chopped into 1/2-inch pieces
One 7 to 8-ounce ball fresh mozzarella, sliced into six 1/4 to 1/3-inch-thick slices
Kosher salt and freshly ground black pepper
3/4 cup (2 ounces) shredded Gruyere
Serving suggestion: grilled bread

Steps:

  • In a small saucepan, bring the tomato-basil sauce and red pepper flakes to a simmer over medium heat. Cook uncovered until thick, 20 to 25 minutes. Remove the pan from the heat and stir in the basil.
  • Preheat the broiler.
  • Place six 5-ounce ramekins on a baking sheet. Divide the sauce equally among the ramekins. Divide the prosciutto among the ramekins. Place the slices of mozzarella between 3 paper towels to absorb any excess moisture. Place the slices of mozzarella on top of the prosciutto. Season with salt and pepper. Sprinkle the Gruyere on top.
  • Broil until the cheese is melted and golden brown, 5 to 8 minutes. Serve with grilled bread.

8 ounces cream cheese, softened to room temperature
1 cup smoked mozzarella
1 cup provolone
1/2 cup freshly grated Parmesan
1/3 cup sour cream
1/2 teaspoon dried thyme
1/2 teaspoon Italian seasoning
1/4 teaspoon red pepper flakes
Kosher salt, to taste
Freshly ground black pepper, to taste
1 small tomato, chopped
1 tablespoon parsley, finely chopped

Steps:

  • Preheat oven to 350ºF. In a large bowl, combine cream cheese, cheeses, sour cream, thyme, Italian seasoning and red pepper flakes. Stir together until smooth and fully combined. Season with salt and pepper. Transfer cheese mixture into a small skillet. Bake until cheese is bubbling, around 20-25 minutes. Broil if desired. Garnish with tomato and parsley and serve with baguette.

  • Sauté 2 tablespoons minced shallots or scallions in 1 tablespoon olive oil or butter, and when tender bring to the boil with 1/4 cup each of chicken stock and dry white French vermouth. When syrupy, blend in 2 cups fresh tomato pulp (see box above), a clove of minced garlic, and a good pinch of tarragon or basil. Simmer 2 to 3 minutes to cook the tomatoes, then correct seasoning and fold in minced parsley.

1 tablespoon flour
1/2 cup grated mozzarella cheese

8 sun-dried tomatoes (not packed in oil)
6 fresh basil leaves, slivered
1 loaf crusty Italian bread
1/2 lb prosciutto
2 apples
1 pear
1 cup broccoli, slightly cooked

Steps:

  • Pour 1 cup of boiling water over sun-dried tomatoes in a small bowl, and leave to soften for 10 minutes.
  • Remove tomatoes from water and chop into small pieces.
  • Rub inside of fondue pot with cut side of garlic.
  • Heat wine in pot until it begins to boil.
  • Toss cheese with flour.
  • Add cheese slowly to pot, stirring the constantly.
  • Add tomatoes and basil leaves to mixture and stir until smooth.
  • Serve with dippers.
