CHICKEN ENCHILADA CASSEROLE VERDE RECIPE

This classic chicken enchilada casserole recipe is made with seasoned chicken, black beans, tomatillo salsa and plenty of poblano peppers.

12 ounces chicken
3-4 tablespoons olive oil
1 tablespoon taco seasoning (- I like to use a chili powder blend!)
6 ounces Mexican style beer (- OR! Use some chicken broth instead)
1 small onion (chopped)
2 poblano peppers (chopped)
1-2 jalapeno peppers (chopped (optional for more heat))
4 cloves garlic (minced)
Salt and pepper to taste
1 teaspoon ground cumin
1 teaspoon dried oregano
2-3 cups Tomatillo Salsa
1 can black beans (15 ounces)
8 corn tortillas (You can use flour tortillas as well)
1 cup shredded white cheddar cheese ((or use Monterrey Jack or Pepper Jack))
Fresh chopped cilantro for serving

Steps:

  • For the chicken, drizzle with olive oil and sprinkle with the taco seasonings and salt and pepper.
  • Heat a large oven-safe skillet or pan to medium heat. Add the chicken and sear each side about 2 minutes each. Add beer or chicken broth and reduce heat. Simmer about 15-20 minutes, or until the chicken is cooked through and you can shred it with a fork. Remove from heat and add to a mixing bowl. Shred the chicken up with a couple forks.
  • Add oil to the same skillet and heat.
  • Add onions and peppers. Cook about 5 minutes to soften.
  • Add garlic and stir. Cook 1 more minute.
  • Add salt and pepper to taste, cumin and oregano. Stir.
  • Add the cooked seasoned vegetables to the mixing bowl with the cooked chicken, then add the tomatillo salsa and black beans. Stir to incorporate.
  • In the same pan, spoon some of the chicken mixture onto the bottom of the pan.
  • Layer on half of the tortillas, then half of the remaining chicken mixture and the shredded cheese. Repeat with the remaining tortillas, then remaining chicken mixture, then the remaining cheese.
  • Set oven to broil.
  • Set the skillet in the middle of the oven and broil for about 5 minutes, or until the cheese is nicely melted. You can also bake it at 350 degrees for 15 minutes, if preferred.
  • Sprinkle with chopped cilantro and serve!

A fast take on traditional enchiladas, this spicy casserole is easy to pull together and makes plenty for leftovers. Also, healthy ingredients can be substituted (especially if you're like me and have to make due with items in your fridge or pantry when you forget to pick-up the sour cream at the store). Can also be made ahead and reheated when desired.

6 -8 tomatillos
1 jalapeno (2 if you prefer spicy)
1 lime
1 garlic clove
1 cup fat-free cottage cheese or 1 cup sour cream
fresh cilantro
1 chicken breast, cooked
9 -12 corn tortillas
1 cup low-fat jalapeno monterey jack cheese
1/4 cup sliced jalapeno (optional)

Steps:

  • Preheat over to 350 degrees.
  • -Unpeel the tomatillos and rinse them in the sink. Cut them into quarters and throw them into a food processor (a blender can also be used).
  • -Add the sliced jalapeno, garlic, as well as the squeezed lime and cilantro.
  • -Add a few pinches of fresh ground salt and pepper and run food processor until all ingredients are blended together.
  • -Pour mixture into a sauce pan over low heat. Let simmer for 10 minutes to bring out the taste in the tomatillos. They should slowly change from a bright green to paler shade.
  • As the verde is simmering, you can start to get the rest of your ingredients ready for the casserole.
  • -Cut up your cooked chicken breast and put it into your food processor. Course a few times until the chicken is shredded. Should yield just over a cup. Put into a bowl and put to the side.
  • -Grate the jalapeno jack. Pending on your taste, a 1/2 cup - cup will do. Put into another bowl and to the side.
  • I prefer a round pie dish, though a rectangular casserole dish can be substituted, as well.
  • -Spray your dish with a non-stick spray and in the bottom, line with 3 corn tortillas and try to cover as much as the dish as possible though there will be overlap, as well as uncovered corners.
  • The Tomatillo Verde sauce should now be a pale shade of green. Add the cottage cheese or sour cream and stir until well-blended. Leave on the heat for another 1-2 min stirring regularly.
  • -With a spoon scoop onto the corn tortillas until covered. Add a handful of chicken and a handful of cheese until covered. Add a few sliced jalapenos for taste.
  • -Repeat 3 more corn tortillas on top of the first layer; sauce, chicken and cheese.
  • -You should finish the dish with 3 tortillas on top and enough sauce to drizzle over so they don't burn. I also like to finish with a sprinkling of cheese and a few jalapenos for garnish.
  • -Put in oven for 30-35 minutes. Garnish with a sprinkling of fresh cilantro and a dollop of sour cream. Cut into pie slices and serve.

Roasted chicken, corn tortillas, cilantro --smothered in a creamy tomatillo sauce and cheese! Makes a great dish for supper, or something unique for a dish to pass.

6 (4 ounce) cans roasted green chilies, diced
2 lbs tomatillos, roasted
1 head garlic
3 cups onions, diced
18 corn tortillas, 6-inch
2 corn tortillas, 6-inch (sliced into strips)
1/2 cup fresh cilantro, diced
2 cups chicken broth
1 teaspoon salt
4 tablespoons olive oil, divided
1 cup sour cream
6 cups roasted chicken breast, shredded
4 cups Mexican blend cheese

Steps:

  • I roast 4 boneless, skinless chicken breasts for this recipe. Season the chicken with pepper, garlic powder and seasoned salt before roasting. I use my grill and place them on my rotiserie, keeping the temperature between 250-300 until juices run clear. Let the chicken cool, and use a fork or other utinsel to shred the chicken. Of coarse, any store bought already roasted chicken will do just fine.
  • Brush tomatillos and garlic with 1 tbsp olive oil.
  • Roast Tomatillos on the grill, until slightly charred. Once they pop and release water, remove.
  • Cut the top of the garlic to expose cloves and drizzle with olive oil, wrap in foil and roast on the grill or oven (on a baking sheet) for 10-20 minutes turning often. until slightly charred. Peel the garlic simply by squeezing the clove, the garlic should "slide" right out of the peel.
  • In a large pot, saute onions in in olive oil over medium heat until semi soft (about 5 to 8 minutes) stirring often.
  • Stir in the chiles, tomatillos, garlic, broth and the 2 corn tortillias that were sliced.
  • Bring to a boil and reduce heat to simmer. simmer for 10 minutes, stirring often. Remove from heat.
  • stir in cilantro and salt.
  • In small batches, place in food processor or blender and pulse until sauce is smooth, but still a bit chunky.
  • stir in sour cream.
  • Stir in shredded chicken.
  • In a 13x9 baking dish, place just enough mixture to cover the bottom, add enough cheese to cover the sauce and then a layer tortillas on top of the mixture, repeat. Top your creation with the remaining mixture and the remaining cheese.
  • Bake at 350 degrees for 25-30 minutes until cheese begins to slightly brown.

I learned this recipe from an amazing cook from Puebla. I've been perfecting it for over 15 years and realized that it was time to share it when my foodie friends tried to drink the sauce out of the saucepan. I use the roasted or baked chicken from the grocery store. I did it once only to save time, but found that they are tastier. Be conservative with the cream and the cheese. Do not use sour cream!

2 cloves garlic
3 serrano peppers
2 ¼ pounds small green tomatillos, husks removed
1 cup vegetable oil for frying
9 corn tortillas
3 cups water
4 teaspoons chicken bouillon granules
½ store-bought rotisserie chicken, meat removed and shredded
¼ head iceberg lettuce, shredded
1 cup cilantro leaves
1 (8 ounce) container Mexican crema, crema fresca
1 cup grated cotija cheese

Steps:

  • Cover a large griddle with aluminum foil and preheat to medium-high.
  • Cook the garlic, serrano peppers, and tomatillos on the hot griddle until toasted and blackened, turning occasionally, about 5 minutes for the garlic, 10 minutes for the peppers, and 15 minutes for the tomatillos. Remove to a bowl and allow to cool.
  • Heat oil in a small, deep skillet to 350 degrees F (175 degrees C). Using kitchen tongs, fry the tortillas individually, turning them once. They shouldn't be in the hot oil for more than 5 seconds per side. Remove excess oil with paper towels and keep warm. Remember that the hotter the oil, the less that the tortillas will absorb.
  • Place the toasted garlic, serrano peppers, tomatillos, and the water in a blender and blend until smooth; pour into a saucepan over medium heat and bring to a boil. Dissolve the chicken bouillon into the mixture, reduce heat to medium-low, and cook at a simmer until slightly thickened, about 10 minutes. The sauce shouldn't be too thick.
  • Soak three tortillas in the sauce, one at a time, for a few seconds, fill them with shredded chicken, sprinkle the meat with some of the sauce, roll them and place them seam side down on a pasta bowl. Spoon a generous amount of sauce over them and top them with lettuce, cilantro, crema, and cotija cheese. Pour a little more sauce over the whole thing if desired. Repeat the procedure twice more. Serve immediately.
