Thai Coconut Soup with Shrimp ( Tom Kha Soup) -Making Thai soup at home is actually really easy! All the classic flavors that make Thai soup so delicious like coconut milk, lemongrass and ginger in an easy to make (and quick) recipe. You should be able to find all the ingredients at your local grocery store.

3 cups chicken (or vegetable broth, low sodium)
2 Tbsp fresh grated ginger
1 stalk lemongrass (cut in half lengthwise (or 1 Tbsp lemongrass paste))
1-2 tsp red curry paste (according to taste)
2 Tbsp fish sauce * (or sub 1 Tbsp worcestershire sauce + 1 Tbsp low-sodium soy sauce)
1 can (15oz. light coconut milk)
1 cup shitake mushrooms (sliced)
1 cup red bell pepper (cut into strips (or diced))
10-12 medium shrimp (approx.. ½ lb. peeled and deveined)
1-2 Tbsp lime juice (according to taste)
1 cup fresh cilantro (chopped)
Jasmine rice (cooked (optional))
sriracha sauce (optional- to taste)

Steps:

  • In a large pot or Dutch oven add broth, ginger, lemongrass, curry paste and fish sauce and simmer for about 10 mins.
  • Add coconut milk, mushrooms and red bell peppers. Continue to cook stirring occasionally, until mushrooms are soft (about 5 min.). Add shrimp, continue to cook until shrimp are fully cooked (about 5 min.). Remove from heat, remove lemongrass stalks and stir in lime juice. Stir in cilantro, reserving a small amount for garnish.
  • Can be served as a soup or over jasmine rice for a heartier meal option.
  • * you should be able to find fish sauce at well stocked grocery stores (in the Asian section). If it's not available you can sub 1 Tbsp worcestershire sauce + 1 Tbsp low sodium soy sauce.

4 stalks fresh lemongrass
1 piece fresh ginger (2-3 inches)
32 ounces chicken broth
2 (14 ounce) cans coconut milk
1 -2 cup sliced mushrooms
50 -60 raw shrimp (thawed)
1 -5 teaspoon chili oil (to taste)
1 lime, juice of
tablespoon fish sauce (optional)
3/4 cup jasmine rice, per person
1 cheesecloth (10in x 10in piece)

Steps:

  • Cook as much Jasmine rice as needed.
  • Pour the chicken broth into a large pot over medium heat.
  • Shake the coconut milk thoroughly and add to the pot.
  • Add sliced mushrooms. (You can add chili oil now or anytime following. The longer it is mixing, the stronger the flavor).
  • Cut lemon grass into ~1 inch long pieces. Set aside. Thinly slice ginger. Set aside.
  • Cut a 10in x 10in square of cheesecloth. Place the lemon grass & ginger into the cheesecloth and tie closed. Drop the sachet into the pot.
  • Let simmer for ~15 minutes (usually the time I use to peel the shrimp and cut them in half).
  • Add Chili oil if you haven't already.
  • Add fish sauce, if desired.
  • Add shrimp. Cook ~3 minutes more (until shrimp are pink).
  • Take off the heat, remove the lemon grass/ginger sachet, and add lime juice.
  • Serve with desired amount of Jasmine rice.

1 tablespoon vegetable oil
2 tablespoons grated fresh ginger
1 stalk lemon grass, minced
2 teaspoons red curry paste
4 cups chicken broth
3 tablespoons fish sauce
1 tablespoon light brown sugar
3 (13.5 ounce) cans coconut milk
½ pound fresh shiitake mushrooms, sliced
1 pound medium shrimp - peeled and deveined
2 tablespoons fresh lime juice
salt to taste
¼ cup chopped fresh cilantro

Steps:

  • Heat the oil in a large pot over medium heat. Cook and stir the ginger, lemongrass, and curry paste in the heated oil for 1 minute. Slowly pour the chicken broth over the mixture, stirring continually. Stir in the fish sauce and brown sugar; simmer for 15 minutes. Stir in the coconut milk and mushrooms; cook and stir until the mushrooms are soft, about 5 minutes. Add the shrimp; cook until no longer translucent about 5 minutes. Stir in the lime juice; season with salt; garnish with cilantro.

1 teaspoon vegetable oil
4 stalks fresh lemongrass, chopped
3 large shallots, chopped
8 sprigs fresh cilantro, chopped coarse
3 tablespoons fish sauce
32 ounces chicken broth
2 (14 ounce) cans coconut milk
1 tablespoon sugar
1 -2 cup sliced mushrooms
50 -60 raw shrimp (thawed)
3 tablespoons lime juice
2 teaspoons Thai red curry paste
jasmine rice, 3/4 cup per person

Steps:

  • Cook as much Jasmine rice as needed.
  • Heat oil in large saucepan over medium heat until just shimmering.
  • Add lemon grass, shallots, cilantro and 1 tbsp fish sauce; cook, stirring frequently, until just softened, 2 to 5 minutes (vegetables should not be brown).
  • Stir in chicken broth and 1 can of coconut milk; bring to simmer over high heat. Cover, reduce heat to low and simmer until flavors have blended, 10 minutes.
  • Pour broth through fine mesh strainer and discard solids in strainer.
  • Rinse saucepan and return broth mixture to pan. Return pan to medium-high heat.
  • Stir remaining can coconut milk, curry paste*, and sugar into broth mixture and bring to simmer.
  • Reduce heat to medium, add mushrooms, and cook until just tender, 2 to 3 minutes.
  • Add shrimp.
  • Serve with desired amount of Jasmine rice.
