BANANA BRIOCHE MONKEY BREAD WITH MOLOKO MILK STOUT BUTTERSCOTCH AND SMOKED ALMOND TOFFEE BRITTLE

Steps:
- In a small saucepan, heat milk until just warmed through. Transfer to a large bowl and add yeast; stir to combine. Let stand 1 minute until yeast is dissolved. Add 2 eggs and whisk to combine. Add 3/4 cups flour and mix until well combined. Sprinkle remaining 1 cup flour over top of mixture; cover with plastic wrap and let dough stand in a warm place until doubled in volume, about 1 hour.
- Transfer dough to the bowl of an electric mixer fitted with the dough hook attachment. Add remaining 5 eggs, granulated sugar, remaining 4 1/3 cups flour, and honey. With the mixer on low, add salt. Mix until dough forms a ball, adding more flour if necessary. Increase speed to medium and mix for about 5 minutes. Reduce speed to low and add butter; mix until fully incorporated.
- Lightly coat a large bowl with nonstick cooking spray and transfer dough to prepared bowl. Cover with plastic wrap and let stand in a warm place until doubled in volume, 1 to 2 hours. Punch dough down and cover again with plastic wrap. Transfer to refrigerator until ready to use, up to 1 week.
- In a large bowl, mix together 2 cups butterscotch and pureed bananas. Lightly coat twelve 1-cup ovenproof dishes or ramekins with melted butter; set dishes on a large rimmed baking sheet. Place one tablespoon butterscotch in the bottom of each baking dish. Sprinkle some of the toffee over the butterscotch; set aside.
- Divide dough into 12 equal pieces (about 5-ounces each). Working with 1 piece at a time, roll into a 6-inch-long rope using your hands. Cut rope into 8 equal pieces; add to bowl with butterscotch mixture and toss to coat. Transfer dough pieces to a prepared baking dish; repeat process with remaining pieces of dough. Sprinkle each baking dish filled with dough with more toffee. Cover baking dishes with plastic wrap and let stand in a warm place until spongy, about 1 hour.
- Preheat oven to 350 degrees.
- In a small bowl, mix together granulated cane sugar and cinnamon. Brush tops of dough with butterscotch mixture and sprinkle with cinnamon-sugar; top with remaining chopped toffee. Transfer to oven and bake, rotating halfway through baking, until golden and firm to the touch, about 30 minutes. Dust with confectioners' sugar and garnish with large toffee pieces. Serve immediately with remaining butterscotch, for dipping.
MATZO TOFFEE BRITTLE
I haven't tried this yet, but wanted to get it posted before I misplace the recipe. This way I will always know where I can find it. It sure does sound yummy! Update: I've made maybe 12 batches of this stuff -- and it's great. Everyone keeps asking for more. It's so easy to make and makes a great food gift wrapped up in a nice tin or box. Don't be afraid to try other nuts for the toppings. I ran out of almonds at one point and substituted pecans and walnuts. Delicious! I've also used the milk chocolate morsels with great success.

- Line a 15x10 inch jelly-roll pan with nonstick aluminum foil.
- Arrange matzos in prepared pan, breaking as necessary to fit and completely cover bottom of pan.
- Bring butter and brown sugar to a boil in a small saucepan over medium-high heat, stirring occasionally. Boil, stirring constantly, 3 minutes.
- Carefully pour mixture evenly over matzos in pan, and spread over matzos.
- Bake at 350 for 15 minutes. (Mixture will start to bubble at about 10 minutes. Continue to bake to 15 minutes). Carefully remove pan from oven to a wire rack. (Mixture will still be bubbly). Let stand 1 minute at room temperature or until no longer bubbly.
- Sprinkle top evenly with morsels; let stand 1 minute or until morsels soften. Spread morsels over brittle. Sprinkle with almonds; let stand at room temperature 30 minutes.
- Place pan in refrigerator, chill 30 minutes or until chocolate is firm. Break into about 20 pieces. Store in an airtight container up to 1 week in refrigerator.
- (Makes about 20 pieces or 1 1/2 pounds).

SMOKED ALMOND TOFFEE BRITTLE

- Line two rimmed baking sheets with a nonstick baking mat. Spray baking mat and baking sheet with nonstick cooking spray; set aside.
- Melt butter in a large, heavy-bottomed saucepan. Add sugar, corn syrup, salt, vanilla, and 1 tablespoon water; stir to combine. Cook, stirring constantly, until mixture becomes amber in color, 3 to 4 minutes. Pour onto one of the prepared baking sheets and let set.
- Meanwhile, chop half of the almonds; set aside. Melt chocolate in a large, heat-proof bowl set over (but not touching) simmering water. Remove from heat.
- Remove toffee from baking sheet and chop. Add to bowl with melted chocolate along with chopped almonds; stir to combine. Evenly spread mixture onto second prepared baking sheet. Chop remaining almonds and any bits of salt remaining in can; sprinkle over brittle. Transfer to refrigerator and chill until set, about 1 hour and up to overnight.

- Slice cake into 3 layers.
- Break toffee bars into tiny pieces.
- Whip the whipping cream, add the butterscotch topping to it.

- position a rack in the middle of the oven.
- preheat the oven to 350*.line a baking sheet with parchment paper.
- in a medium bowl, stir the flour, baking soda, and salt together.set aside.
- in a large bowl, whisk the melted butter, granulated sugar,brown sugar, and vanilla till smooth -- about 30 seconds.
- use a large spoon to stir in the flour mixture.the dough should look smooth.
- stir in the crushed toffee and walnuts. the dough will look crumbly.
- leaving a 1-1 1/2 " border empty on all sides.spoon the dough onto prepared baking sheets.
- press the dough into a rectangle that measures about 13x9" and is about 1/2" thick -- then use the palms of your hands to make it into an even layer.
- bake until the top feels firm and looks dark golden and the edges look light brown, about 19 minutes.
- let the cookie brittle cool on the baking sheet for 10 minutes, then use a large metal spatula to transfer the cookies onto a wire rack to cool.
- don't worry if the cookie breaks, it will be broken into pieces when cool.the cookie will become crisp as it cools.
- break the cooled cookie into 4-5" pieces.
- the cookies can be stored in a tightly covered container at room temperature for up to 4 days.

MIXED NUT TOFFEE BRITTLE

- In medium saucepan mix sugar and water.Heat on medium heat. Add butter and King Syrup. Cook till 295 degrees using a candy thermometer. Remove from heat add nuts stirring with a silicon spatula. Add baking soda ( it will bubble up) , stir quickly and pour onto a baking sheet with a silicon pad . Spread quickly and sprinkle with kosher salt.

- Boil the butter, sugar, and corn syrup until it reaches 300°F on a candy thermometer. Carefully stir in most of the crush cashews. Save a small amount to sprinkle on top of the chocolate. Pour into a sheet pan lined with aluminum foil and greased with butter. Place another piece of aluminum foil greased with butter on top. Use a rolling pin to gently roll the candy to be even thickness in the pan. Do this while the mixture is still hot. Let the mixture cool. Melt the chocolate and frost the brittle with the melted chocolate and sprinkle the chocolate with the crushed cashews. Break into pieces when the brittle is cool and firm.
