MARSHMALLOW TOFFEE BALLS
Soft marshmallow filling surrounded with a toffee and krispy coating. We like to make these for our Christmas trays. I don't know if you can get MacIntosh toffee in the USA. We find them with the chocolate bars.

Steps:
- Over low heat, melt the toffee bars, condensed milk and margarine.
- Dip the marshmallows into the toffee mixture.
- Roll in the rice krispies.
- These can be kept covered at room temp for a couple of day, freezes well.
- For smaller balls, cut the marshmallows in half before dipping.

TOASTED MARSHMALLOW TOFFEE RICE KRISPIE TREATS

Steps:
- In a large skillet (ideally with high sides), brown butter. When butter has browned, leave in skillet, but set aside.
- Spread marshmallows on a baking sheet lined with parchment paper and place under the broiler. Leave the oven cracked open and keep your eyes on it! When the marshmallows just begin to smoke, and are a golden brown, remove from oven. Flip the marshmallows over, exposing an un-toasted side. Repeat until most sides are toasted. (I did this 3-4 times.)
- Place marshmallows in skillet with brown butter and stir over medium-low heat to finish melting marshmallows. Transfer melted marshmallows and butter to a large mixing bowl; add cereal and toffee and stir with a wooden spoon to combine. (Do your best to evenly distribute the toffee.)
- Press into a 9×13″ pan coated with cooking spray and sprinkle with sea salt. Cool before cutting and serving.

TOFFEE AND MARSHMALLOW RICE KRISPIE TREATS
Lovely for a children's party or just as a lunch box treat these rice krispie treats will be a child and adult favourite! Great to make with the kids and you can add extra ingredients into them such as sultanas or chocolate chips!

Steps:
- 1. Melt the butter in a large saucepan (large enough to fit all the ingredients).
- Add the toffees and melt them slowly in the butter (stirring continuously until melted).
- Add the marshmallow and continue heating and stirring until they have melted.
- Add the cereal, stirring and folding until the mixture completely covers all the ingredients. I like to do this over a gentle heat to keep the mixture free (don't worry is will go stringy when stirring it).
- Grease a tin with a little butter that is around 20cm square and line with baking parchment then empty the mixture into the tray. Press down with a spatula (as this won't stick to the mix) and leave to cool.
- Cut into square then serve. If not serving straight away store in layers with baking parchment underneath and in between.
