TOASTY HOT TUNA SANDWICHES
My Mom used to make these all the time. They are quick and delicious! With football season coming, these are great food for that Sunday afternoon game. Every time I make them it takes me back to when I helped my Mom make these years ago. They are high on my list of "comfort foods!"

Steps:
- 1. Mix up your tuna filling earlier in the day. This gives it time to season.
- 2. Now your ready to make the sandwiches. Spread the tuna filling on hot dog buns and wrap with aluminum foil. Place in refrigerator until ready to heat.
- 3. Preheat oven to 400'F. Place wrapped buns on cookie sheet and bake for 15 minutes. This heats the filling, melts the cheese and gets the buns toasty.
TOASTED TUNA SANDWICH
This warm toasted sandwich is a mix of warm melted cheese and tuna that derives its flavor from the chipotle pepper. Adjust the amount of peppers to your own heat preference. *The mayo on this recipe was edited on June 28, 2011 from 1 TBS to 1-3 TBS depending on taste.

- Pre heat broiler.
- In bowl mix tuna, green onions, chipotle peppers, roasted garlic, mayonnaise, and cheese.
- Slice rolls in half-length wise and divide tuna mixture, being sure to spread out evenly.
- Broil 3 to 5 minutes. Cheese should be melted and edges of bread toasted.
- Put 1/4 cup arugula on two of the halves and top each with remaining two halves.
- Enjoy while still nice and warm.

- Flake the tuna with a fork, then combine the tuna, mayonnaise, onion, celery, relish, lemon juice and salt and pepper.
- Slather two pieces of bread with mayonnaise like you would use butter, then place into a large skillet, mayonnaise side down.
- Place a cheese slice onto the bread.
- Spread the tuna mixture over the cheese slices. Place a cheese slice on top.
- Use the mayo to "butter " the remaining two slices, then place on top, mayonnaise side up and out.
- Heat the pan to medium heat and cook until the bread is lightly browned on the bottom.
- Flip the sandwiches carefully to the other side, then cook until the other side has browned.
- Remove, slice in half and serve.
