TOASTED ORZO WITH PEAS AND PARMESAN

From Cook's Illustrated. This is supposed to be a side dish, but I would also consider serving this as a light meatless entree.

Number Of Ingredients 11

2 tablespoons unsalted butter
1 cup onion, finely chopped
3/4 teaspoon salt
2 garlic cloves, minced (2 teaspoons)
1 lb uncooked orzo pasta
3 1/2 cups low sodium chicken broth (or vegetable)
3/4 cup dry vermouth or 3/4 cup dry white wine
1 3/4 cups frozen peas
1 cup parmesan cheese, grated
ground nutmeg, to taste
ground black pepper, to taste

Steps:

  • Heat butter in 12-inch nonstick skillet over medium-high heat; add onion and salt and cook, stirring frequently, until onion has softened and is beginning to brown, about 5 minutes.
  • Add garlic and cook until fragrant, about 30 seconds.
  • Add orzo and cook, stirring frequently, until most of orzo is lightly browned and golden, 5 to 6 minutes.
  • Turn off heat and add vermouth and chicken broth.
  • Go back to medium-high heat and bring to boil; reduce heat to medium-low and simmer, stirring occasionally, until all liquid has been absorbed and orzo is tender, 10 to 15 minutes.
  • Gently stir in peas, cheese, nutmeg, and pepper to taste.
  • Remove from heat and let it stand until peas are heated through, about 2 minutes.

2 tablespoons olive oil
1 (8 ounce) package sliced cremini mushrooms
1 onion, diced
3 cloves garlic, minced
½ teaspoon dried oregano
½ teaspoon dried thyme
1 ½ cups orzo
½ cup dry white wine
3 cups low-sodium chicken broth
1 cup frozen peas
½ cup freshly grated Pecorino-Romano cheese, or to taste
¼ cup heavy whipping cream
salt and freshly ground black pepper to taste

Steps:

  • Heat olive oil in a large pot over medium heat. Add mushrooms and onion and cook, stirring occasionally, until lightly browned, 10 to 15 minutes. Add garlic, oregano, and thyme; cook 1 minute, stirring often. Add orzo and cook until lightly toasted, 1 to 2 minutes, stirring often. Pour in wine and cook until mostly evaporated, 1 to 2 minutes more.
  • Pour chicken broth into the pot gradually and bring to a simmer. Cover the pot, reduce heat to low, and cook until orzo is softened, 10 to 12 minutes, stirring occasionally.
  • Uncover the pot and stir in frozen peas. Cook until peas are warmed through, about 1 minute. Remove pot from heat, add Pecorino-Romano cheese and cream and stir to combine. Season with salt and black pepper to taste.

This is a delicious side dish. Orzo is a rice-shaped pasta that can be purchased anywhere pasta is sold.

6 -8 ounces bacon, cut into 1-inch pieces
2 -3 tablespoons butter
1 onion, chopped
1 -2 tablespoon fresh minced garlic
1 lb orzo pasta
4 1/2 cups chicken broth
1/2 cup whipping cream
1 cup grated parmesan cheese
1 teaspoon dried thyme
salt and black pepper

Steps:

  • Cook the bacon in a large saucepan over medium heat until crisp; remove with a slotted spoon (you can drain the bacon fat or leave it).
  • Melt 2-3 tablespoons butter, then add in onions and garlic; saute until soft (about 5 minutes).
  • Add in the orzo and stir for about 2 minutes.
  • Slowly add in the 4-1/2 cups broth; simmer uncovered until the orzo is firm-tender and the broth is absorbed, stirring occasionally (this should take about 7-8 minutes).
  • Add in whipping cream and bring to a simmer.
  • Mix in Parmesan cheese and thyme, then cooked bacon.
  • Season with salt and pepper.
  • *NOTE* you can thin with additional broth if desired.

1 1/2 cups orzo (rice-shaped pasta)
1 1/4 cups chopped onion
5 bacon slices, chopped
3 1/4 cups (or more) canned low-salt chicken broth
1 1/2 cups frozen peas, thawed

Steps:

  • Heat large nonstick skillet over medium heat. Add orzo and stir until beginning to color, about 10 minutes. Transfer orzo to small bowl. Add onion and bacon to same skillet. Sauté until bacon browns and onion is tender, about 15 minutes. Add 3 1/4 cups broth and orzo and bring to boil. Reduce heat to medium-low, cover and simmer until broth is absorbed and orzo is tender, about 18 minutes. Mix in peas. Add more broth if mixture is dry. Cover and cook until peas are just warmed through, about 2 minutes. Season to taste with salt and pepper and serve.
