Quick and scrumptious garlic bread that will complement any Italian meal. Melted mozzarella is optional, but delicious!

1 (1 pound) loaf Italian bread
5 tablespoons butter, softened
2 teaspoons extra virgin olive oil
3 cloves garlic, crushed
1 teaspoon dried oregano
salt and pepper to taste
1 cup shredded mozzarella cheese

Steps:

  • Preheat the broiler.
  • Cut the bread into slices 1 to 2 inches thick.
  • In a small bowl, mix butter, olive oil, garlic, oregano, salt and pepper. Spread the mixture evenly on the bread slices.
  • On a medium baking sheet, arrange the slices evenly and broil 5 minutes, or until slightly brown. Check frequently so they do not burn.
  • Remove from broiler. Top with cheese and return to broiler 2 to 3 minutes, until cheese is slightly brown and melted. Serve at once.

1/3 cup butter, softened
12 slices bread
1/2 teaspoon garlic salt
3 tablespoons grated Parmesan cheese

Steps:

  • Spread butter on one side of each slice of bread. Cut each slice in half; place plain side down on a baking sheet. Sprinkle with garlic salt and Parmesan cheese. Broil 4 in. from the heat until lightly browned, 1-2 minutes.

1 loaf Italian bread, unsliced
1/2 cup softened butter, plus
2 tablespoons softened butter
1 tablespoon olive oil
1 tablespoon minced fresh garlic (or to taste)
1 teaspoon dried oregano
1/4 teaspoon salt (or to taste)
black pepper
2 cups grated mozzarella cheese (or to taste)

Steps:

  • Set oven heat to broil.
  • Cut the breat into about 1-1/2 inch slices.
  • In a small bowl combine soft butter with olive oil, garlic, oregano, salt and pepper until well combined.
  • Place each slice of bread onto a large baking sheet.
  • Spread the butter mixture on top of each slice.
  • Broil for about 5 minutes or until slightly browned (keep an close eye on the slices, they brown quickly!).
  • Remove from broiler and sprinkle the mozzarella cheese on top of each slice.
  • Return to broiler for about 2 minutes or until the cheese is slightly browned and melted.
  • Serve immediately.

1 to 2 tablespoons olive oil
1 1/2 teaspoons garlic powder
1 cup shredded mozzarella (regular or part-skim)

Steps:

  • Preheat oven to 400 degrees F.
  • Brush olive oil all over bottom half of bread. Sprinkle garlic over oil. Top with cheese and close bread, as if making a sandwich.

2 vine-ripened tomatoes, cut into 1/4-inch slices
¼ cup extra-virgin olive oil, divided
sea salt and freshly ground black pepper to taste
2 tablespoons butter
8 diagonally sliced pieces baguette
1 clove garlic, halved
8 ounces fresh mozzarella cheese, cut into 8 thin slices
1 large avocado - halved, pitted, and thinly sliced
½ small lemon
¼ cup roughly chopped fresh dill
1 pinch flaked salt

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Line a baking sheet with parchment paper.
  • Arrange tomato slices on the baking sheet and top with about 3 tablespoons olive oil, sea salt, and pepper.
  • Roast in the preheated oven until tomatoes are wilted, wrinkly, and scorched in some places, 25 to 30 minutes. Set aside to cool.
  • Heat butter in a large skillet over medium heat. Place bread slices in the skillet and cook until crisp and golden in parts, 2 to 3 minutes per side.

Mozzarella-Stuffed Garlic-and-Herb Bread image

For this surefire crowd-pleaser, we singled out the best part of a stuffed-crust pizza: the crust, of course. Load an easy dough up with thinly sliced low-moisture mozzarella, then give it a generous flurry of garlic, Italian seasoning, fresh parsley, sesame seeds, and grated Parmigiano. After baking, seal the deal with a side of marinara sauce.

2 2/3 cups unbleached bread flour, plus more for dusting
1 1/2 teaspoons active dry yeast (not rapid-rise)
2 teaspoons kosher salt (we use Diamond Crystal)
1 cup warm water
6 tablespoons extra-virgin olive oil, divided, plus more for drizzling
12 ounces whole or part-skim low-moisture mozzarella, such as Polly-O, thinly sliced
1/2 ounce Parmigiano-Reggiano, finely grated (1/3 cup)
2 tablespoons minced garlic (from 5 to 6 cloves)
1 1/2 teaspoons dried Italian seasoning
3 tablespoons finely chopped fresh parsley
1/4 to 1/2 teaspoon red-pepper flakes
2 tablespoons sesame seeds
Warm marinara sauce, for serving (optional)

Steps:

  • In a bowl, whisk together flour, yeast, and salt. Make a well in center of mixture; add warm water and 2 tablespoons oil to well. Gradually stir flour mixture into wet mixture to form a ragged dough. Transfer to a floured work surface.
  • Knead with floured hands until dough is tacky but no longer sticky and springs back when pressed with a finger, about 5 minutes. Transfer to a bowl drizzled with oil, turning dough to evenly coat. Cover and let proof at room temperature until doubled in volume, 1 to 1 1/2 hours.
  • Preheat oven to 450°F with a rack in lowest position. Punch down dough, transfer to a lightly floured work surface, and cut in half. Stretch one piece of dough, working outward from center, into an oval, approximately 9 by 13 inches. Brush 2 tablespoons oil onto a rimmed baking sheet. Place dough on sheet; top evenly with mozzarella, leaving a 1-inch border of dough around edges.
  • Stretch second piece of dough on floured work surface to roughly same oval shape. Place over mozzarella, gently pressing to remove excess air from between doughs. Fold edge of bottom dough up and over edge of top dough, pinching to seal edges together. Sprinkle top evenly with Parmigiano; drizzle with remaining 2 tablespoons oil.
  • Stir together garlic, Italian seasoning, parsley, red-pepper flakes, and sesame seeds; sprinkle evenly over dough. Cut several steam vents in top of dough at 2-inch intervals.
  • Bake until dough is golden brown in places and just cooked through, 18 to 20 minutes. (If dough puffs in places while baking, pierce with the tip of a knife to release steam.) Transfer bread from baking sheet to a wire rack and let cool a few minutes. Slice and serve hot, with marinara alongside for dipping.
