Curried Citrus Quinoa with Raisins and Toasted Almonds image

A refreshing and satisfying side dish. Also great for lunches! You may mix red quinoa with regular quinoa for a pretty color variation.

1 cup quinoa
1 cup low-sodium vegetable broth
1 cup water
¼ cup fresh orange juice
2 tablespoons fresh lemon juice
2 tablespoons olive oil
1 teaspoon Dijon mustard
2 teaspoons honey
1 tablespoon curry powder
2 tablespoons minced red onion
½ cup raisins
sea salt to taste
½ cup toasted sliced almonds

Steps:

  • Bring the quinoa, vegetable broth, and water to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the quinoa is tender, and the water has been absorbed, about 15 to 20 minutes.
  • While the quinoa is cooking, prepare the dressing by whisking together the orange juice, lemon juice, olive oil, mustard, honey, and curry powder in a mixing bowl. Stir in the cooked quinoa, red onion, and raisins; season to taste with sea salt. Cover, and chill in the refrigerator several hours until cold.
  • Stir in half of the toasted almonds immediately before serving. Sprinkle the remaining almonds over top to serve.

CURRIED LENTIL AND SAUSAGE SOUP WITH TOASTED ALMONDS



Curried Lentil and Sausage Soup with Toasted Almonds image

Unlike most legumes, dried lentils cook quickly, which means this satisfying soup is fast enough for a weeknight supper. Make a double batch and pack up individual servings for lunches.

Number Of Ingredients 16

1 tablespoon oil
1/2 cup finely chopped onion
1-2 large carrots, peeled and small diced
1-2 stalks celery, small diced
2 cloves garlic, finely minced
1 tablespoon curry powder
1/2 teaspoon salt
1/2 teaspoon pepper
6 cups low-sodium chicken broth
1 cup dry lentils, rinsed and picked over
1 can white beans or chickpeas, rinsed and drained
1/2 pound precooked chicken sausage, diced
1/3 - 1/2 cup heavy cream (optional)
Salt and pepper to taste
Silvered almonds, toasted, for garnish
Chopped cilantro, for garnish

Steps:

  • In a 4 or 5 quart pot, heat the oil over medium heat and add the onion, carrots, celery, garlic, curry powder, salt and pepper. Sauté for 4-5 minutes until the vegetables start to soften, stirring often. Add the broth and lentils. Bring to a low simmer for 20-30 minutes, stirring occasionally, until the lentils are tender (but not mushy).
  • Stir in the sausage and beans and heat through. Stir in the heavy cream, if using. Taste and add additional salt and pepper if needed. The soup will thicken slightly upon standing. Serve warm with slivered almonds and cilantro.

1 pound whole blanced almonds
3 tablespoons melted butter
1 tablespoon curry powder
1/2 teaspoon Worchestershire sauce
14 teaspoon liquid ho red pepper sauce
1 teaspoon salt mixed with 1 teaspoon curry powder

Steps:

  • Preheat oven to 275. Spread almonds out in large shallow roasting pan. Mix butter with curry powder, Worcestershire sauce, and liquid hot red pepper seasoning, drizzle ofer nuts and stir well. Roast, uncovered, stirring every 20 minutes about 2 hours until goldern brown. Drainb on paer toweling. When cool sprinkle with salt-curry mixture and toss well to mix. Drain on fresh paper toweling before serving.
